YAY! We made it to Belize in lovely Central America! And we have a ton of videos from our vacation to share with you! Join us as we snorkel the barrier reef, visit the Mayan temples and fill up at Lobsterfest! We started our trip in Ambergris Caye and ended it in San Ignacio, Belize. But first, we had to cross the border to Guatemala to see Tikal. No way we were gonna miss that amazing experience! Lucky for you, we got an immense amount of footage. We also learned a lot about coconuts at Captian Morgans Retreat, got to taste and experience the Garifuna culture, and got a wicked sunburn at Secret Beach. Thanks for taking an interest in what we think is our most awesome adventure yet!

I first discovered Belize while touring the Yucatan and always wanted to see more of it. Specifically Ambergris Caye. So I did so in 2006.
Caye (pronounced KEY) simply means island - Belize is a nation on the eastern coast of Central America, with Caribbean Sea shorelines to the east and dense jungle to the west.
It's known for its beaches, eco-lodges, scuba diving and sportfishing. Offshore, the massive Belize Barrier Reef, is the Second Largest in the World! Dotted with hundreds of cayes, hosts rich marine life. I swam with the sharks, dived, snorkeled and swam around the reef.
Belize’s jungle areas are rich with Mayan ruins but require a full day including the travel.
A Former British Colony and English is the official language.
(In 1973, the colony's name was changed from British Honduras to Belize and on September 21, 1981 Independence was declared.)
I did a lot of research before going to Mata Rocks Resort. We were very happy there. It is nice, clean and small. Close enough yet far enough away from the main strip. We stayed in a junior suite and a regular room. Both rooms were very nice. Pool closes very early as do many in the area. -
They can arrange most tours but next door at the Banana Beach one can get a better rate on golf cart rentals.

Pedro Town is the major settlement on the island. San Pedro's populace has grown to 10,000 plus year-round inhabitants, with many newcomers from the mainland and from abroad as well. The original San Pedranos (from the 1800's til the 1970's or so) are Mestizo, and and speak both Spanish and English. The island has the largest concentration of visitor accommodations in Belize and its hotels, fishing and diving facilities are some of the best in the country.
The town is a picture postcard setting beside the clear turquoise sea. Coconut palms sway and rustle in the gentle cooling trade winds. Low rise hotels, guest houses and boutique style resorts & condos, from modest to magnificent, are nestled along the coast and throughout the town.
If you want a comfortable, shorts-and-sandals seaside vacation, at a moderate price, just a bit off the beaten path but not too far, where the seafood is fresh and beer is cold, where the water won't make you sick, an island with most of the modern convienences without the plastic tackiness, with great diving, excellent snorkeling, beautiful water and beautiful white sand beaches, where local folks are mostly friendly and hablan English (though they may speak Spanish at home), with dependably beautiful weather most of the time, then I guarantee you'll enjoy Ambergris Caye.
Yes, tourism is the number one industry in what was once a fishing village. Now, fishing is still most excellent, but tourism has far surpassed it as a contributor to the local economy. This is not, however, the edgy tourism of Cancun, with millions of package tourists hitting the beach. No building is higher than a tall coco palm, or three stories.

Belize is a beautiful beach vacation country. In this video I take you on a tour of the airbnb we rented on our first stop in Belize, on the island if Ambergris Caye. A tropical shower started falling just as we stopped our golf cart next to a tiny box of a building with a palm-leaf palapa on the front. Although we were driving a golf cart, we weren't golfing... we were on a quest for lunch south of San Pedro Town on Ambergris Caye in Belize. Golf carts are the preferred means of transportation on Belize's most popular island, and we were searching for Robin's Kitchen, a little eatery that a friend had recommended. Robin is an excellent chef, our friend had told us, and when we realized that the tiny box with the palapa covering two rough tables on a bare dirt lot next to the road was Robin's domain, we really started to get interested.
Ambergris Caye is by far the biggest tourist draw in Belize, with white sandy beaches, clear Caribbean waters, and a magnificent living reef just offshore that makes the island a fishing, snorkeling, and diving paradise. There are lots of upscale hotels and restaurants on Ambergris, but there are also hundreds of tiny food stands like Robin's where locals whip up traditional Belizean and Caribbean dishes with little more than a few pans, a burner, a bottle of gas, and seafood from just off shore. These are the places that give you the real island feel, and we started feeling it ourselves as soon as we pulled up our chairs under Robin's palapa.
Robin showed us his entire menu as soon as we sat down... he pulled a fresh snapper from a pan and pointed out the chicken on the nearby grill. You can have either one, or I can put both of them on a plate for you, he said. We wanted the fish but couldn't resist the smell of the grilling chicken, so we agreed to the combo.
Robin and his wife went to work on our order while their 10-year-old grandson and his playmate entertained themselves by guessing our ages and spelling their names for us. Robin brought out fresh mango juice as an appetizer, and right after the children had counted past a hundred to show off their numbers, our lunches came out.
Plates heaped with fresh snapper simmered in a spicy sauce with onions and peppers, jerk chicken with extra jerk sauce on the side, potato salad, and the obligatory mound of coconut rice and beans. Just as we tucked in to the feast, Robin put a big bowl in the middle of the table. I don't want you to say that you came to Robin's and didn't try the curry, he said. A free prize for us because the man was proud of his cooking.
It's hard to describe the magic of all those tastes and textures on our plates... a magic enhanced by having come out of that tiny box of a kitchen and being served up on that rough roadside table under a palapa in the rain, the bright blue Caribbean foaming on the reef top a few hundred yards off shore. It was one of those meals, one of those moments, that makes Ambergris Caye what it is and keeps so many people coming back here. We savored every minute of it. In fact, we put off getting back in the golf cart as long as we could, preferring to relax with Robin as he sat with us outside his little kitchen and chatted about his life and his love of cooking.
There is a hustle and bustle to San Pedro Town that comes with its popularity as a tourist and sporting destination. But the laid-back island and everything that makes this relaxed, Caribbean way of life such a dream for so many people is not very far under the surface. In fact, a heaping plateful of it is waiting right under the palapa at Robin's Kitchen.
