One of the best ways to begin to understand and enjoy the culture of Mexico is by learning about its cuisine. Spend a day at The Little Mexican Cooking School and learn to cook incredible Mexican food dishes with a talented chef in Puerto Morelos, a quaint and quirky seaside fishing village.
From learning how to prepare your own salsa or mole to the art of savoring good tequila these classes are fun, educational and entertaining. Each class starts with a light continental breakfast and with Mexican Coffee. Breakfast is followed by an overview of authentic ingredients and an introduction to the cuisines of Mexico. Next you will receive a demonstration of 7-8 dishes with hands on opportunities to prepare them. The day culminates in a late lunch that you helped prepare. Of course lunch would not be the same if it were not accompanied by some delicious drinks.

Cooking Class & Market Tour - Puerto Escondido, Mexico 2017
During my vacation in Puerto Escondido, I joined Tony aka The Mexykan's cooking class. We started the day at the market with a light breakfast, before we then headed out and bought all the ingredients we needed. Tony told us a lot about the local produce and it was an experience in itself just to walk around the many booths. We then headed home to Tony's kitchen and made some of the best Mexican food I have ever had. It was a true pleasure cooking with Tony, and I will be back next time I find myself in Puerto Escondido!

Karisma once again amazes us and the world with a brand new concept: The Canadian Beef Culinary Series.
The Canadian Beef Culinary Series is a unique and marvelous culinary experience! It is an entire week of pleasure and delight, where the guest will be able to enjoy sublime tasting sessions of the finest beef cuts from Canadian Beef, marinated with exquisite wines from the Jackson Family Wines.
The first edition of this wonderful event will be from January 13th to the 17th and features the presence of Chef Louis Charest, who delighted every guest with his exquisite and finest selection of beef cuts, in collaboration with wine expert Ms. Dana Agüero, from the Jackson Family Wines.
The event that embarked us upon such wonderful culinary journey was the Kick-Off Beach BBQ, held at the White Gazebo restaurant, where everyone enjoyed a delicious barbecue by the seashore, with live music setting up the ideal ambience while everyone tasted a marvelous selection of wines, directly from the Jackson Family Wines.
This entire experience of the Canadian Beef Culinary Series by Karisma includes a great array of events, such as: Beef Sampling & Wine Pairing held on Tuesdays; the Cutting Demo & Cooking Class, held on Wednesdays; Canada Beef & JFW on Thursdays, and finishing off on Friday with the Tricks of the Trade and Tasting.
The whole idea and concept of the Canadian Beef Culinary Series by Karisma, is for guests from El Dorado Royale, A Spa Resort by Karisma to enjoy a marvelous gastronomic experience, under the guide of a renowned chef from Canada and a distinguished wine expert from the Jackson Family Wines; on this occasion the main stars of this wonderful culinary journey were Chef Louis Charest and Dana Agüero respectively.

Although the field of food history is now well established, cultural analysis has tended to focus on well-documented foods of the elite—court cuisines and fine dining. By contrast, the foods of the lower classes have more often been treated as mere calories, divorced from all consideration of taste or choice. Yet there is ample historical evidence that street foods were a focus of plebeian sociability and pleasure in cities, such as Imperial Rome, Kaifeng (China), Tenochtitlan (Mexico), and Edo (Tokyo). Get a sneak peak of this research project seeking to recover these popular cuisines of the past.
Jeffrey Pilcher, a professor of food history at the University of Toronto–Scarborough, has been a leading figure in the emerging scholarly field of food history. From an early research focus on Mexico and Latin America, he has expanded his scope to food in world history. He is the author of numerous articles and several books, including Planet Taco: A Global History of Mexican Food (2012), The Sausage Rebellion: Public Health, Private Enterprise, and Meat in Mexico City (2006), Food in World History (2006), and ¡Que vivan los tamales! Food and the Making of Mexican Identity (1998).
