Paul Breheny from The Hook and The Cook shows you a delicious and easy way to cook salt and pepper squid.
Salt and lemon pepper squid
Served with sticky balsamic glaze
Recipe:
600g squid (frozen if fresh is not available)
200 g Flour (plain)
100 g corn flour
100 g lemon and lime pepper
20 g sea salt flakes
1/2 x kiwi fruit (only use if squid is frozen )
50 ml Balsamic glaze
Method: for preparing squid
1. Cut squid into rings
2. If using frozen squids add 1/4 crushed kiwi fruit, cling wrap and place in the fridge for 45 mins only. This tenderizes the squid.
3. After 45 min wash off the kiwi fruit and dry squid place back in the fridge covered ready for use
LEMON PEPPER FLOUR:
Sieve corn flour and plain flour into a bowl add lemon pepper. Store ready for service.
TO SERVE :
1. Heat deep fryer to 180c.
2. Pass calamari through lemon pepper flour.
3. Deep fry till light golden colour.
4. Drain on kitchen paper season with sea salt and serve with oiled leaves with lime wedges and circles of balsamic.
