Vietnamese Beef Noodle Soup (Phở)
I am sharing how to make old school Phở. Phở is Vietnamese Beef Noodle Soup aka as national dish of Viet Nam. Even though the process to make old school Pho using the traditional takes 24 hours, the actually labor time only takes 2 hours. Spending 2 hours to make 12 big bowl of amazing Phở, free of MSG, is so worthy.
MAKE:
- 36 cups of Phở's broth = 12 big bowls = 3 to 4 meals for family of 4
INGREDIENTS (NGUYÊN LIỆU):
- Beef Leg Bones (xương bò ống): 8 to 10 lb (4 kg)
- Beef Brisket (nạm/ức bò): 3 lb (1.3 kg)
- Beef Ribs (sườn bò): 6 lb (2.7 kg)
- Beef Meatballs (bò viên): 2 small bag (bịch nhỏ)
- Sweet Onion (hành Tây loại ngọt): 2 large or 1.5 lb (720 g)
- Ginger (gừng): 1/2 lb (250 g)
- Rock Sugar (đường phèn): 9 oz (260 g)
- Salt (Muối): 5 tbsp + 1 tsp (5 mc + 1 mcafe)
- White Pepper Powder (Bột Tiêu Trắng)
- Phở Spices (Gia Vị Nấu Phở): Please see video (xin xem video)
- Fresh Rice Noodles (bánh phở tươi): 1 to 2 bags (1 hoặc 2 bịch)
- Thai Basil (húng quế): 1 bunch (1 bó)
- Thorny Coriander (ngò gai): 1 bunch (bó)
- Cilantro (ngò): 1 bunch (1 bó)
- Green Onion (hành lá): 1 bunch (1 bó)
- Bean Sprouts (gía): 1 small bag (bịch nhỏ)
- Lime (chanh): 1 or 2 (1 hoặc 2)
- Sweet Onion (hành Tây ngọt): 1 small (1 trái nhỏ)

Took a cooking class in Saigon and I had SO MUCH FUN! Learning about each plant ingredient and what they can do for your body is so refreshing. The Vietnamese food we made as follows:
-Vietnamese Spring Rolls made with pork, bean sprouts, shrimp, and vermicelli. The spring rolls dipping sauce consists of sugar, fish sauce, water, oyster mushroom sauce, chili sauce, fresh garlic, and fresh chili.
-Papaya Salad with Barbeque Pork is made with papaya, cucumber, carrot, daikon. Sauce is similar to the spring rolls, just without water.
-Claypot chicken, the special ingredient is that delicious oyster mushroom!
-Banana fried spring rolls (not healthy, I know...but damn delicious) with coconut cream!

Vietnamese food is amazing. Am I right? What's your favorite Vietnamese dish?
Vietnamese restaurants are spreading across the world, but eating in Vietnam is a completely different experience. First of all, there are plenty of dishes that will never make it to a Vietnamese restaurant overseas. Secondly, everything is so cheap. In Vietnam, if you really needed to, you could eat for $3 a day. But I recommend spending more than that, otherwise you'd miss some amazing dishes.
While living in Vietnam, I often started my day off with a banh mi - Vietnamese sandwich. The fresh, made-daily bread has a crusty exterior and a soft fluffy inside. The toppings vary, but surprising flavors of soy sauce, chili, cilantro, and pickled carrot are likely to be on every sandwich. These toppings will balance out this meal so it hits every flavor profile. That's the key to Vietnamese food - balancing sweet, sour, salty, spicy, and umami.
A quick and easy lunch in Vietnam is com tam. It means broken rice, but it's really just a protein - pork, chicken, fish, etc - plus a pile of rice and some vegetables. Soup is usually included, as well as some iced green tea. This filling, and ever changing meal will only set you back a dollar.
Dinner is Vietnam is often eaten with friends and family. Every dish is shared and staples like fried rice and noodles are almost always present. Seafood is big in Vietnam, but you'll also find chicken, pork, and beef.

Vietnamese traditional meal
Family gathering for dinner meals is one of the most distinct feature of Vietnamese culture. Dinner is an intagible string to connect the bond among family members. Especially nowadays, when parents and children often have lunch at offices and schools, dinner is the only time they can cook together, talk and share to show affection for each other after a busy day.
In the meal, the dishes are often divided into 3 types: rice, main dishes- rich in protein and side dishes- vegetables and soup.
Today, we would like to introduce 3 common dishes in daily Vietnamese meals:
1. Boiled water spinach (Rau muong): one of the most popular vegetable dishes in VN, especially in summer time ( because summer is water spinach’s season) as it is healthy, inexpensive and can be quickly cooked in many delicious ways.
1. Boiled water spinach is often served with fish sauce mixed with small pieces of chilly, garlic and drops of lemon.
2. Fried tofu with tomato sauce: tofu is a high-value protein food. However, in Western countries, people rarely eat tofu because many of them consider that it is tasteless. In Vietnam, we often dip fried tofu into fish sauce, shrimp sauce or mix with tomato sauce after frying to add flavor.
3. Caramelized pork with eggs: One of many classic dishes of Vietnamese home-cooking. There are different recipes because flavours differ from the North to the South. In the North, people prefer to add more fish sauce while in the South, putting more sugar and coconut juice is favoured.
The supermarket we choose for shopping today is Toko Dun Young, located in China town, within 5 minutes walk from Amsterdam central station. I can nearly find all ingredients for the meal there (except from rau muong). Aside from Dun Young, there are also other Asian supermarkets in Amsterdam namely:
1. Amazing Oriential ( 2 location: Niewmarkt and Duivendrecht).
2. CC Asian Supermarket (in Albercyup market)
3. Wah Nam Hong
4. Shilla ( for Korean and Japanese food)
I highly recommend the Amazing Oriential in Duivendrecht because it offers the most diversified Asian ingredients and the price is the most reasonable.
The estimated cost for this meal is around 16 euro for 4 people. That means only 4 eu each person (suprisingly cheap!!!)
INGREDIENTS:
BOILED WATER SPINACH
1. 1 package of water spinach
2. ½ lemon
3. 1 tbsp (tablespoon) salt
CARAMELIZED PORK & EGGS
1. 500g pork belly
2. 4 eggs
3. 3 tbsp sugar
4. 1 tsp black pepper
5. 3 tbsp fish sauce
6. 1 purple onion
7. 500ml coconut milk
8. 500ml water
FRIED TOFU WITH TOMATO SAUCE
1. 200g tomatoes
1. 500g firm tofu
2. 2 green onions
3. ½ purple onion
4. 2 tbsp (tablespoon) fish sauce
5. 1tsp (teaspoon) salt
6. ½ tsp sugar
7. ½ cup of water
