8 Generations of Distilling Shochu with NISHI SHUZO
Founded in 1845, Nishi Shuzo is now onto its eighth generation, and are still distilling Shochu in Kyushu like they have from day one. Adding a sweet potato farm to their facilities, they now have access to incredible raw material grown right in their backyard, yielding a higher quality finished product. In this video, we learn how best to enjoy this drink, and what climate has to do with producing some of Japan's finest Shochu.

Namihana Shochu - Japanese Sweet Potato Shochu made in Hawaii with locally sourced Sweet Potatoes from the islands.
They make it old school with clay vats made 150 years and distill from a traditional wooden still.
Every year, they only make a limited amount of bottles.
Pour yourself a glass with ice and enjoy it with your sushi, yaki udon or gyoza.

Yakushima
Yakushima is one of the Ōsumi Islands belonging to Kagoshima Prefecture, Japan. The island, 504.88 km² in area, has a population of 13,178. Access to the island is by hydrofoil ferry, slow car ferry, or by air to Yakushima Airport. Administratively, the whole island is the town of Yakushima. The town also serves neighbouring Kuchinoerabujima. The majority of the island is within the borders of the Kirishima-Yaku National Park.
Yakushima's electricity is more than 50% hydroelectric, and surplus power has been used to produce hydrogen gas in an experiment by Kagoshima University. The island has been a test site for Honda's hydrogen fuel cell vehicle research.
