Hey there! We are Greg and Hillary – a husband and wife team that loves traveling, going on adventures, and helping others do the same! Although we love traveling, at this point in time, we still have full time 9-5 jobs in Dallas, Texas.
In August of 2016, we packed up our things, Greg quit his job, and we moved to Puerto Vallarta, Mexico!
Hillary is working remotely for her CPA firm and Greg is working on this site full time.
We view ourselves as fairly ordinary people, complete with an ordinary income, ordinary jobs, and (unfortunately) an ordinary amount of student loan debt (thanks UNT!).
I know what you are thinking, “Aren’t travel blogs supposed to be written by hippies that don’t have jobs and live in hostels?!” Well don’t you worry, we are working on making that happen! Although we hope to become full time travelers in the next 1-2 years, this site is not necessarily aimed at people that want to travel full time.
Our hope is not that you quit your job and become a long haired, bearded, Volkswagen van driving hippy. Instead, our hope is that after reading our stories you are more inspired to live a more fulfilling life from 5pm-9am!
Why such the emphasis on how ordinary we are? Although we love reading travel blogs, it is easy to feel disconnected from the writers at times. It seems as though they are leading such extraordinary lives that they are somehow doing something that is unreachable to the “average” person.
We are here to prove that wrong. We are here to tell you that even if you work a full-time job and only get two weeks of vacation each year-you still have the power to design an adventurous life for yourself. Afterall, that is exactly where we started before leaving it all behind to live la vida loca!
After having several caffeine induced conversations about how people should travel more and shift their priorities in a way that will lead to a more fulfilling life, we decided to share our stories with you.

One of the best ways to begin to understand and enjoy the culture of Mexico is by learning about its cuisine. Spend a day at The Little Mexican Cooking School and learn to cook incredible Mexican food dishes with a talented chef in Puerto Morelos, a quaint and quirky seaside fishing village.
From learning how to prepare your own salsa or mole to the art of savoring good tequila these classes are fun, educational and entertaining. Each class starts with a light continental breakfast and with Mexican Coffee. Breakfast is followed by an overview of authentic ingredients and an introduction to the cuisines of Mexico. Next you will receive a demonstration of 7-8 dishes with hands on opportunities to prepare them. The day culminates in a late lunch that you helped prepare. Of course lunch would not be the same if it were not accompanied by some delicious drinks.
The school is located in a beautiful hacienda style bed and breakfast in the quaint seaside fishing village of Puerto Morelos located just off the beach. Had the best dinner in DTLA at B.S. Taqueria. Definitely check out their happy hour and array of yummy tacos. My personal fave was the chorizo & papas. Be sure to save some room for dessert! I'd recommend the churros or the goat's milk flan.

Eat The Streets - Taquitos De Carnitas (Fried Pork Tacos)
A common and delicious street food brought to the home kitchen.
Carnitas;
1 lb Pork Roast
1 1/2 tsp salt
1tsp Pepper
1/4 tsp Garlic Powder
(cook for 1-2 minutes on 365 degrees)
Pico De Gallo;
1 Cup Diced and drained Tomatoes
1/2 cup diced onion
1/2 cup diced cilantro
1 heaping tbls Minced Jalapeno
Juice of one lime
Guacamole;
1-2 Avacados
Juice of one lemon
salt and pepper to taste
Tortillas;
Follow the package but I always add a couple tbls more water because corn absorbs a lot of moisture

KETO TAMALE
I am super excited to share this recipe!! It's been a highly requested item for sure and I am proud to have figured out a decent alternate to masa dough.
Ok so 1st things first - this is not your standard tamale recipe. Since it's keto, there is NO corn flour, but I still kept a part of the traditional dough - lard. You can use any sort of animal fat really, but a normal tamale uses pork fat (lard).
Secondly - the steaming. I highly recommend to steam your tamale wrapped inside a dried corn husk. Not only does it look prettier but it's easier to steam. Sadly, I could NOT find any dried corn husks here in Ireland so I had to use parchment paper. You will NOT be eating the corn husk, so it's still 100% keto to use the corn husk for steaming.
Now I also didn't include a recipe for the filling because there are so many different things you could put in there and honestly, it's up to you! I used a Mexican spicy cheese and it was delightful!
Any pro tamale makers - I 100% apologize if mine don't look correct.. I tried but I know they could be better! ????????
What you will need:
3/4 cup (75g) almond flour
1 cup (120g) shredded mozzarella
2 tablespoons lard (preferably room temp)
1/2 tsp baking powder
Your choice of filling
So I based the dough on a fathead recipe but altered it just a BIT. Still super easy to make and incredibly delicious.
Melt your shredded mozzarella, either in the microwave or on low on the stove.
While that's heating up, whisk together your almond flour and baking powder..
When the cheese has melted, use a spoon to fold it into the almond flour. Add in your two tbsp of lard or fat and mix until you have a dough. It may be crumbly or a bit greasy but thats ok!
Take a chunk of the dough and spread it in a decent sized rectangle or circular shape near the top of the corn husk or parchment paper.
Top with your filling, leaving about an inch of dough untouched near the edges,
Take your husk or paper and fold one side of the dough into the other so that the dough is sealed around the filling.
Take the unused bottom portion and fold it upwards towards the tamale. Roll the tamale two more times so that the upwards part of the paper is covered.
Cut any excess paper off. Use a piece of the parchment or a piece of the corn husk to make a tie around the middle of the tamale. This will help it keep its shape and the wrap tight so it won't unfold.
Once you've completed all your tamale, place them standing upright in a steamer and steam for approx 1 hour to 1:15 minutes.
You can also cook these in an instant pot - just pour 1 cup of water into the bottom of your pot, insert your strainer and place the tamales into the strainer. Cook on high for about 20-30 minutes.
You will know the tamale is done when you are able to easily remove it from the parchment paper or corn husk.
Unwrap and enjoy!
