1. Spuddy’s Cajun Food Restaurant: Cajun-Style Andouille + Jambalaya
ADDRESS: 2644 LA-20, Vacherie, LA 70090, USA

????????Cajun-Style Andouille: Cut the pork into small pieces. Using a meat grinder, use a chopper plate that will grind the meat into chunks and place in bowl. Add salt and cayenne pepper to the grounded pork and mix. Stuff the pork into the andouille casing. Place the raw andouille into a smoker and allow to cook for 2 to 24 hours.
????????Jambalaya: In a cast iron pot, add hog lard and bring to a simmer. Once simmering, add chopped onion and cook until caramelized. Mix in pieces of chopped pork and allow to cook until it’s tender. Add chopped andouille and cook until brown. Add hot sauce, celery, bell peppers, smoked sausage and water into the pot. Add salt, pepper, paprika, garlic and cayenne pepper. Add more water to the mixture (roughly 1.5 gallons). Finally, add 8lbs of extra long grain rice and continuously stir for 10 minutes or until the water is gone. Cover the pot for 45 minutes, then serve when ready.

????????Crawfish: Fill a large pot ⅓ to ½ with water. Bring water to a boil, then add salt, pepper, crab boil. Add the potatoes, onions, garlic, mushrooms, lemons, sausage, or anything else you like. When the potatoes are soft, shut the fire off and let it soak for half an hour to absorb the seasonings. Take everything out. Bring water to a boil then add crawfish to boiling water. Add frozen corn to the mixture and let sit for 20 minutes. When the crawfish sink, the meal is ready to serve.

Eau Claire really IS the definition of renaissance. As John Gurda said, if you were familiar with this northwestern Wisconsin city 20 years ago, you’re not familiar with it now unless you live in Eau Claire!
The new Pablo Center for the Arts, lighted bridges and public art, many company headquarters and Phoenix Park have transformed downtown EC. Old foundational places that could never be replaced, like the Court’n House and the Paul Bunyan Logging Camp Museum, retain the roots of this city. And new things in old spaces, like the Lismore and Oxbow hotels, Banbury Place in the old Uniroyal plant, and tons of renovation on the UW-EC Campus prove a commitment to reinvestment and renovation.
This is a city infused with music, youthful energy, Kubb and tons of activity, all supported by investment and commitment. Eau Claire was the perfect place to finish our eighth season!

John could have just stayed on the lake for the whole episode, gawking at the homes, cheering for the mail boat jumpers, trying to figure out how that guy shoots up in the air on those columns of water, and hoping that the people paddleboarding stay balanced. But then he'd have missed Yerkes Observatory in Williams Bay (which you can NOT miss!), wouldn't have met Buddy Melges in Zenda (completely charmed!), couldn't have spent time with the most lovely Fontana residents (best ever lemonade!), nor would John have been served tea with his choice of hats at the Baker House in Lake Geneva (you just have to see it!).
From personal experience, we can attest that the Geneva Lake region truly has something for everyone. After we finished shooting this episode, our crew members each shared our favorite experience, and all 5 of us chose something different. Between the food, the scenery and the shopping, you too will wish that John's visit could last all summer!

Man Builds Stunning Off Grid Shipping Container Home on Mountain Top
Adam from HoneyBox ( built this stunning off-grid shipping container cabin on top of a mountain in British Columbia, Canada.
The cabin is built with 3 x 20-foot shipping containers. The middle container is bolted to a cement block foundation using twist locks, and the two outer containers are cantilevered using lashing rods.
He designed the cabin to take full advantage of the panoramic mountain view by covering almost an entire wall with windows, although he admits this is not the most energy efficient design.
He's got 800 Watts of solar panels to power his 12-volt system for lights, outlets, and a water pump. He has a wood stove for heat, propane for the fridge, hot water, and cooktop, and he has a composting toilet from Sun-Mar.
For water, he has a well and a rainwater catchment system, and he uses both to fill 2 large water tanks for showering and washing dishes but he doesn't yet have a filter for the rainwater and the well water is ferrous so he brings in drinking water for now.
One of the main challenges of building with shipping containers is trying to avoid water leaks along the seams where the containers are joined together. Once the clamps are in place, there's a 3-inch gap between containers. Adam installed a mechanical gutter along the seams on the roof to divert water off the roof, and he has a second gutter underneath it to catch any leaks from the first gutter. So far he hasn't had any water issues. You can avoid leaks by building a roof over the containers.
The cabin is insulated with spray foam insulation, which adheres to the steel walls and helps avoid condensation problems that might arise with fibreglass batts.
Adam built this structure as a studio to demonstrate one of the many ways that shipping containers can be used to create unique living spaces. He doesn't live in it full-time.

Historian John Gurda explores how the Milwaukee River and Lake Michigan spurred Milwaukee's growth. The settlers used rivers and Lake Michigan to transport grain, lumber, leather and beer, but water was just as important for play as it was for work. Gurda explains how the Milwaukee River became a destination for fun. Learn how the lower Milwaukee River was eventually reduced to an open sewer by 1900, with Lake Michigan suffering similar indignities. Only in recent decades have the currents turned for the better. From the Milwaukee River Greenway to the reborn Menomonee Valley to the cultural theme park on our downtown lakefront, the patterns of the past are being reversed, providing cause for celebration as well as concern.

Milwaukee (, locally ) is the largest city in the state of Wisconsin and the fifth-largest city in the Midwestern United States. The seat of the eponymous county, it is on Lake Michigan's western shore. Ranked by its estimated 2014 population, Milwaukee was the 31st largest city in the United States. The city's estimated population in 2017 was 595,351. Milwaukee is the main cultural and economic center of the Milwaukee metropolitan area which had a population of 2,043,904 in the 2014 census estimate. It is the third-most densely populated metropolitan area in the Midwest, surpassed only by Chicago and Detroit, respectively .Milwaukee is considered a Gamma global city as categorized by the Globalization and World Cities Research Network with a regional GDP of over $105 billion.
The first Europeans to pass through the area were French Catholic Jesuit missionaries, who were ministering to Native Americans, and fur traders. In 1818, the French Canadian explorer Solomon Juneau settled in the area, and in 1846, Juneau's town combined with two neighboring towns to incorporate as the city of Milwaukee. Large numbers of German immigrants arrived during the late 1840s, after the German revolutions, with Poles and other eastern European immigrants arriving in the following decades. Milwaukee is known for its brewing traditions, begun with the German immigrants.
Beginning in the early 21st century, the city has been undergoing its largest construction boom since the 1960s. Major new additions to the city in the past two decades include the Milwaukee Riverwalk, the Wisconsin Center, Miller Park, The Hop (streetcar system), an expansion to the Milwaukee Art Museum, Milwaukee Repertory Theater, and Pier Wisconsin, as well as major renovations to the UW–Milwaukee Panther Arena. The Fiserv Forum opened in late 2018.
