Having decided they had something to contribute to the very exciting conversation going on in craft brewing, cousins Chris and Augie Carton teamed up with their favorite home brewer, Jesse Ferguson, and started Carton Brewing. In the seashore community where they were born and raised, the Carton boys found a turn-of-the-century red brick warehouse and adapted it to accommodate a state-of-the-art Newlands Systems 15 barrel brew house. With Jesse at its helm, 6 E. Washington Avenue was turned into an independent craft brewery and their hats were in the ring. Applying a passion for stimulating flavor to inspiration found all around them, they set about their goal: to make tasty beer in the place their tastes were formed.

Out of the Box: Inaugural brew for Carton Brewing
Carton Brewing, poised to become New Jersey's newest craft brewer, does its first brew, inaugurating its Newlands brewhouse under a temporary permit from the state. The brew was done July 17th, but the beer was not for commercial release, that is until state regulators sign off on Carton's licensing. When our friends and neighbors at Brinley shipped us ten of the barrels used to make their Brinley Gold Shipwreck Rum from their distillery on St. Kitts, we were given the opportunity to create a beer that would take advantage of wood rather than the other way around. We looked to coax complexity out of the marriage of a barrel's soul and a brew's potential, not just to bomb a huge beer with huge flavor. The rum that lives in these barrels for four years integrates its spice to the wood so well that it ends up reminiscent of a Bananas Foster. A sturdy brown honey porter seemed the best host to receive the ghosts from Shipwreck's old home. We started with a base of deep malts looking for notes of coffee and chocolate, then enhanced them with the floral bouquet of local wildflower honey and the preservative strength of 10% ABV while keeping the body sensible. This was put in the casks to meld with the vanilla, wood, and spice notes, toned down by the oxidative effect of a year in the cellar. Drink Shipwreck Porter because a barrel should be so much more than a depth charge.

Craft Beer Brewers Turn to American History for Inspiration
The brewing industry in the United States has seen an explosion in recent years in what are known as craft beers - innovative beer styles produced by small, independent breweries. In fact, the craft brewing industry grew last year by 11 percent in volume, and 12 percent in dollars - compared to the previous year. One of the newest offerings even takes its inspiration from the nation's founding fathers, including George Washington.

We don't have many rules at Carton Brewing and those we have we made up for ourselves. In general though, we strive for drinkability through balance and harmonization of flavors. But even self-imposed rules are meant to be broken. With Epitome we decided to embrace the teenage metalhead in each of us and get discordant with a seriously hoppy, high gravity, black ale. The only notions accepted were to make it bigger, bolder, hotter & faster. A Beast. The ABV had to push past 10, the black had to be none more, and the hops had to be American and piled on like a double bass drum kicking faster and harder. Drink Epitome because things worth doing are worth over doing.

This trip starts as many do on a sunny Sunday afternoon at the tippy, discussing grill cleaning, spring, cherry blossoms and the flavors that coincide with the transition from spring rain to summer sun. Talk makes its way around the circle to Jeremy who offers, Cherry and lime kind of kick ass together. The evolution from that declaration to Rickey was a short one. Sourness from wild fermentation pulls taught against the heady juiciness of the fruit, with a light finishing touch of juniper berries stitching it together. Drink Rickey because blossoms turn to fruit.
