Salvator - The double bock speciality which created Paulaner history
Our brewmaster and beer sommelier Martin Zuber explains, why Salvator is the father of strong beers and what makes its flavour so distinctive.
As the Paulaner monks where not allowed to eat during the period of fasting, they created a strong beer as „liquid bread“ and invented this bottom-fermenting double bock. When they passed it on as alms, the civil breweries wrote a complain to the authorities in Munich. This letter from 1634, can be seen as Paulaner’s birth certificate. The name Salvator comes from „Sankt Vater“ (saint father).
The original recipe was refined over the years: The head is the colour of caramel and the beer is chestnut brown, combined with a seductive flavour of chocolate to give a pleasing intensity on the palate. The finest Munich malt, rounded off by a light note of hops in the background.

The city's motto is München mag Dich (Munich Loves You in the English version), before 2006, it was Weltstadt mit Herz (world city with heart). Its native name, München, is derived from the Old German word for Mönche, which means Monks in English. The reason for naming the city in such a manner is to honour the fact that monks of the Benedictine order founded the city. This is also the reason for the monk depicted on the city's coat of arms. Black and gold - the colours of the Holy Roman Empire - have been the city's official colours since the time of Ludwig the Bavarian.
Munich is not the only location within Bavaria known as München. Three such locations exist: the one which is known as Munich; another which is northeast of the city of Nuremberg, and also Hutthurm, a town north of the city of Passau. (from Wkipedia)

Phillips brewery is from Victoria, the provincial capital of British Columbia in Western Canada. Dopplebock is a style with a history trace back to Munich, Germany. Father Barnabas Still of a local monastery was according to history the one who created the recipe. The beer was brewed to celebrate the end of the 40 days fasting during Lent but another version suggests that it was the very beer that sustained the monks during this time as a liquid diet! Either of the above versions (Also look at the Trappist beer) suggests that the monks were a thirsty bunch and needed much stimulants for their intense meditation...zzz...
Dopplebock is meant to be a higher alcohol malty but hoppy drink. This one come with an amber brown colour suggesting the beer uses a medium roasted malt. The mouth feel was smooth and creamy followed with some roasted but sweet and biscuity malt then the hop followed. I am not sure what type of hop they use but traditional German DB uses much Hallertau hop. The hop contributed some bitterness but with a herbal tea taste. This is not the biggest DB I have tasted but bigger and more assertive don't mean it's better. Very drinkable indeed. (Rating 87-89 points) by Michael Lam of the Beverage Review

Bock
Bock is a strong lager of German origin. Several substyles exist, including maibock or helles bock, a paler, more hopped version generally made for consumption at spring festivals; doppelbock, a stronger and maltier version; and eisbock, a much stronger version made by partially freezing the beer and removing the water ice that forms.
Originally a dark beer, a modern bock can range from light copper to brown in colour. The style is very popular, with many examples brewed internationally.
Doppelbock
Doppelbock or double bock is a stronger version of traditional bock that was first brewed in Munich by the Paulaner monks, an order founded by St. Francis of Paula.Historically, doppelbock was high in alcohol and sweet, thus serving as liquid bread for the monks during times of fasting, when solid food was not permitted. Today, doppelbock is still strong—ranging from 7%--12% or more by volume. It is clear, with colour ranging from dark gold, for the paler version, to dark brown with ruby highlights for darker version. It has a large, creamy, persistent head (although head retention may be impaired by alcohol in the stronger versions). The aroma is intensely malty, with some toasty notes, and possibly some alcohol presence as well; darker versions may have a chocolate-like or fruity aroma. The flavour is very rich and malty, with toasty notes and noticeable alcoholic strength, and little or no detectable hops (16--26 IBUs). Paler versions may have a drier finish. The monks who originally brewed doppelbock named their beer Salvator (Savior), which today is trademarked by Paulaner. Brewers of modern dopplebocks often add -ator to their beer's name as a signpost of the style; there are 200 -ator doppelbock names registered with the German patent office. The following are representative examples of the style: Paulaner Salvator, Ayinger Celebrator, Weihenstephaner Korbinian, Andechser Doppelbock Dunkel, Spaten Optimator, Tucher Bajuvator, Weltenburger Kloster Asam-Bock, Capital Autumnal Fire, EKU 28, Eggenberg Urbock 23º, Bell's Consecrator, Moretti La Rossa, Samuel Adams Double Bock, Troegs Troegenator Double Bock, Wasatch Brewery Devastator, Great Lakes Doppelrock.

Founded in 1987, the Anderson Valley Brewing Company brewed out of a 10-barrel brewhouse, located in the lower level of its brewpub, The Buckhorn Saloon. Gleaming stainless steel vats brewed and fermented barley and other specialty grains to create outstanding ales, porters, stouts, and wheat beers. These brews began as a dream of Kenneth Allen to create the smoothest tasting ales available anywhere.
When the demand for our award winning ales exceeded the capacity of our 10-barrel brewery below the pub, we built our present 30-barrel facility at the corner of Highways 128 and 253, a mile from the center of Boonville. That was in 1996, and this brewery saw us through a dramatic period of growth, which included the introduction of a 12 ounce bottling line and a production level of 15,000 barrels in 1998, twice the amount brewed in 1997.
Yet, the brewery’s growth was outpacing its larger space and expanded capacity. In 1998, construction began on a state-of-the-art, three-story Bavarian-style brewhouse. The centerpieces of the brewhouse are gleaming 100- and 85- barrel copper brew kettles rescued by Ken Allen from a defunct German breweries during a trip to Europe in 1995. The new brewhouse went online in August of 2000.
By 2010 Ken Allen decided to retire and began to search for a successor to continue the Anderson Valley commitment to quality. In April of 2010 the brewery sold to industry veteran Trey White. In September of that year Fal Allen (former general manager 2000 – 2004, no relation to Ken) returned to the brewery as brewmaster. White has focused on innovation and quality, introducing the Bahl Hornin’ Series, expanding the barrel aged program, and increasing brewing capacity.
