Kazan meaning 'cooking pot' in Tatar. Kazan is one of Russia's oldest cities, located on the Volga River, 820 km away from Moscow. It is about 150 years older than Moscow. It is the capital of Tatarstan.

HOW TO GO
Russian airlines Aeroflot and S7 are the main airlines offering international transfers to Kazan. Air France and Etihad Air also offer flights to Kazan via Moscow. Flights from Moscow take around 1 hour and the airport is a 30 minutes drive from the city centre.
BY TRAIN: Moscow and Kazan are well connected, with eight or nine trains every single day. The journey is a relatively swift 11 or 13 hours.

CITY OF TOURIST
Kazan one of the most rapidly developing tourist destinations. The capital of Tatarstan, visited by over 1,000,000 tourists every year, was rated third in Europe and eighth in the world.

POPULATION:
Population of about 1.3 million. Over 50 % of population are tatars, with Russians constituting the second largest population group. Russian and Tatar are the two official languages of the region, with completely equal status. Kazan has one of the highest standards of living in Russia, following after Moscow and St. Petersburg.

RELIGION:
Kazan peacefully blends Muslim and Christian cultures. Islam and Orthodox Christianity are the most widespread. Here you'll find mosques, Orthodox, Catholic churches and cathedrals, a synagogue, and other religious buildings and centres.

ECONOMY:
Kazan is one of the largest industrial and financial centers of Russia, and a leading city of the Volga economic region in construction and accumulated investment. Total banking capital of Kazan banks is third in Russia. The main industries of the city are: mechanical engineering, chemical, petrochemical, light and food industries. An innovative economy is represented by the largest IT-park in Russia which is one of the largest of its kind among Eastern Europe.

SPORTS:
Kazan is one of the most well-equipped cities of Russia in terms of sports infrastructure. Kazan is Russia's sports capital. Kazan has hosted multiple sports events at national and international level. In 2018, the capital of Tatarstan will host football World Cup matches.

자연 속에 있는 그림 같은 외딴집, 이곳은 ‘다차’라고 하는 집과 텃밭이 딸린 주말 농장이자 별장이다. 러시아 도시인의 약 70%가 다차를 소유하고 있는데, 내가 초대받은 이곳은 수영장까지 딸린 러시아 최고 부유층의 다차라고 해서 아주 기대가 됐다. “여기가 러시아인들의 다차(별장)예요. 여기서 쉬고 샤슬릭(러시아의 전통 꼬치구이)을 만들어 먹고 그러지요. 주인은 여기서 자식들과 친구들과 휴식을 즐기지요. 러시아인들은 이렇게 살아요.” 통나무로 만든 대저택의 위용을 드러내는 화려한 다차! “아, 이건 샴푸라라는 거예요. 꼬치구이 샤슬릭을 만들 때 쓰는 쇠꼬챙이죠. 그리고 여기 돌로 된 벽난로지요. 러시아인들은 벽난로를 아주 좋아해서 이 옆에서 많이 쉬어요. 이 돌로 된 벽난로가 없으면 러시아 집이 아니에요.” 사냥을 즐기는 호방한 민족답게 야생 동물 박제가 곳곳에 있다. 수집을 좋아하는 러시아인이라, 전쟁 때 쓰던 총도 그대로 간직하고 있다. 2층만 해도 방이 4개나 되는 초호화 다차! 다차를 사랑하는 러시아에선 다차 외교, 다차 정치 등 다차가 일상이자 문화가 됐다고 한다. 저만치 사색을 즐길 수 있는 개인 산책로까지 갖췄다니 다차를 아끼는 마음이 전해진다. “아주 오래전부터 ‘다차’라는 별장문화가 있었어요. 원래 러시아인들은 오두막에 살았기에 여기저기 다 오두막이었어요. 그렇다 보니 러시아인들은 나무와 자신의 작은 안식처를 좋아하지요. 거기서부터 이런 문화가 나와 다차를 아주 좋아하지요. 다차 없이는 안돼요.” 척박하고 드넓은 땅을 개간하고 관리할 때 꼭 필요했던 다차는 1970년대 말, 러시아가 국민들에게 1인당 600㎡의 땅을 무상으로 분배하면서 러시아인들의 삶 깊숙이 자리 잡게 됐다. 주말농장 다차는 러시아도시민들의 안식처이자 마음의 고향. 러시아 최고 수준을 자랑하는 이곳 다차에서 나는 작은 맹수를 소개받았다. 처음 보는 희한한 녀석이다. “이건 아프리카 야생 고양이에요.” 아프리카 야생고양이는 일반 고양이보다 덩치가 두 배나 크다. 사람에게 잘 길들여지지 않은 이 고양이는 먹이를 주는 사람이 아니면 곁을 주지 않는다. 이 고양이들의 주식은 하루에 토종닭 한 마리! 고양이 두 마리를 키우는데 먹이 값만 일주일에 약 14만원이나 든다니, 웬만한 부자가 아니면 키우기 어려울 것 같다. “러시아 사람들은 고양이를 아주 좋아합니다. 한사람이 아니라 모든 사람들이 다 동물들을 좋아할 거예요. 순록도 좋아하고. 라마를 사려는 사람도 있어요. 동물들과 사이가 좋아요” 모닥불도 피웠겠다, 본격적인 저녁 준비에 들어가는데 나를 위해 특별히 러시아 민속음식, 꼬치구이를 마련했다고 한다. “이건 샤슬릭이라는 꼬치구이예요. 러시아사람들은 샤슬릭을 좋아한답니다. 민속음식이라 할 수 있지요.” 쇠고기, 양고기 등에 양파와 소금 후추 정도로 살짝 간해서 숯불에 굽는 샤슬릭은 러시아의 가장 대중적인 전통요리다. 샤슬릭의 냄새에 이웃집 장정들이 들이닥쳤다. 잘 구워진 샤슬릭 한 점에 러시아의 주식, 통감자로 만든 샐러드까지 이웃들과 함께하는 다차의 만찬은 소박하면서도 아주 맛났다. “러시아 사람들은 보통 손님을 맞을 때 상을 크게 차리고 술도 많이 차립니다. 함께 앉아서 노래를 부르지요. 하루 이틀 지나도 며칠이고 같이 보냅니다.”

Making ‘borsch’ fit for a tsar & Cossack fighting 101 - Taste of Russia Ep.9

Glen wants to learn to make one of Russia’s most iconic dishes, beetroot soup, aka borsch. Oscar will settle for nothing less than the most authentic version, so the pair travels to Pereslavl-Zalessky, a medieval town that still boasts impressive 12th and 14th century monasteries. There, the culinary explorers will learn to make tsar borsch, a recipe developed in the early 19th century by Emperor Alexander I’s personal chef.

It certainly isn’t fast food! The stock takes at least six hours to make and contains at least four kinds of meat: beef, pork, chicken, and duck. Under an experienced chef’s watchful eye, Oscar and Glen chop and shred onions, cabbage, potatoes, and beets. Then, they add the vegetables to the stock to simmer in a cast iron pot in a wood-fired Russian stove.

While awaiting the final result, Glen and Oscar meet the local Cossacks for fun and games in a unique Russian park that was recently created to preserve and showcase Russian traditions. There are houses that replicate 19th century architecture, as well as arts and crafts, and games and entertainment. After working up an appetite, Oscar and Glen return to the kitchen to find a stupendous variety of complementary dishes already prepared. The borsch is finally ready, and the tired warriors sit down to a meal fit for a royal coronation.

Cossacks are a group of predominantly East Slavic–speaking people who became known as members of democratic, self-governing, semi-military communities, predominantly located in Eastern and Southern Ukraine and in Southern Russia, within the borders of Polish-Lithuanian Commonwealth. They inhabited sparsely populated areas and islands in the lower Dnieper, Don, Terek and Ural river basins and played an important role in the historical and cultural development of both Ukraine and Russia.The origins of the Cossacks are disputed, though the 1710 Constitution of Pylyp Orlyk attests to a combination of East Slavic and Khazar origin. The emergence of Cossacks is dated to the 14th or 15th centuries, when two connected groups emerged, the Zaporozhian Sich of the Dnieper and the Don Cossack Host.The Zaporizhian Sich were a vassal people of Poland–Lithuania during feudal times. Under increasing pressure from the Polish–Lithuanian Commonwealth, in the mid-17th century the Sich declared an independent Cossack Hetmanate, initiated by a rebellion under Bohdan Khmelnytsky. Afterwards, the Treaty of Pereyaslav (1654) brought most of the Cossack state under Russian rule.
The Sich with its lands became an autonomous region under the Russian-Polish protectorate.The Don Cossack Host, which had been established by the 16th century, allied with the Tsardom of Russia. Together they began a systematic conquest and colonisation of lands in order to secure the borders on the Volga, the whole of Siberia (see Yermak Timofeyevich) and the Yaik (Ural) and the Terek rivers. Cossack communities had developed along the latter two rivers well before the arrival of the Don Cossacks.By the 18th century Cossack hosts in the Russian Empire occupied effective buffer zones on its borders. The expansionist ambitions of the Empire relied on ensuring the loyalty of Cossacks, which caused tension given their traditional exercise of freedom, democracy, self-rule, and independence. Cossacks such as Stenka Razin, Kondraty Bulavin, Ivan Mazepa and Yemelyan Pugachev led major anti-imperial wars and revolutions in the Empire in order to abolish slavery and odious bureaucracy and to maintain independence. The empire responded with ruthless executions and tortures, the destruction of the western part of the Don Cossack Host during the Bulavin Rebellion in 1707–08, the destruction of Baturyn after Mazepa's rebellion in 1708, and the formal dissolution of the Lower Dnieper Zaporozhian Host in 1775, after Pugachev's Rebellion.By the end of the 18th century Cossack nations had been transformed into a special military estate (Sosloviye), a military class. Similar to the knights of medieval Europe in feudal times or the tribal Roman auxiliaries, the Cossacks came to military service having to obtain charger horses, arms and supplies at their own expense.
