Ganpeki Robata
Robatayaki is a traditional style of cooking popular in Hokkaido, especially in the port city of Kushiro. In a traditional robatayaki, food is grilled over a hearth in front of the guests and served on a long wooden paddle. Nowadays, the arrangement varies at each restaurant, but the basic principle is the same: choose your favorite seafood, meat, and vegetables and grill them fresh over hot charcoals to savor their natural flavors.
One popular robatayaki restaurant in Kushiro is Ganpeki Robata. Situated in a large open tent right next to the Kushiro Harbor, you get to grill the fresh seafood on your own. It's a great place to experience the food culture of Hokkaido while mingling with the locals.

Hokkaido has distinct seasons. Winter through, summer, depending on the water temperature the catch in Hokkaido is abundant and various.

Mitten Crabs, Red King Crabs these are what people come to Hokkaido for. Many tourists come here just to eat crabs.

Imports (of crabs) have increased, particularly Red King Crabs. The reality is that they are no longer able to catch them here.

The biggest exporter (of Red King Crabs) is Russia that accounts for about 60% of our imports, next is Alaska which accounts for around 30%, followed by imports from Murmansk (which is also in Russia) and Norwegian ports on the Barents Sea.

In the past 3kg Red King Crabs were the norm but crabs sold in the market have become smaller and smaller and they are now mainly around 1kg in weight. The resource has gradually become depleted.

Hokkaido, northernmost of the four main islands of Japan is famous for seafood.
The waters surrounding the island produce an abundance of marine products including a large variety of crabs.
Crabs are one of the culinary delights that draws tourists to the island but ironically most of the Red King Crabs for which Hokkaido is perhaps most famous, are now imported from other parts of the world.
STORYLINE:
Hokkaido is bordered by the Sea of Japan to the west, the Sea of Okhotsk to the north and the Pacific Ocean to the east and south.
As Takeda Goh, a wholesaler in Sapporo's central market explains, in Japan the island is regarded as a seafood kingdom.
Hokkaido is particularly famous for sea urchins, scallops, salmon and atka mackerel.
Other products like salmon roe, squid and octopus are also very popular.
Even Kaiten Sushi - considered a cheap option in other parts of the country - has a reputation for quality in Hokkaido.
More than any other seafood it is perhaps Hokkaido's crabs that tourists come to sample.
The waters around the island produce a number of different varieties of crabs.
These include Snow and Mitten crabs but most highly regarded - because of the flavour, texture and quantity of meat they produce - are Red King Crabs.
Shop and restaurant owners like Takahashi Eiji still provide their customers with Red King Crabs.
