Classes inside the Kyoto Central Fish Market (Short Version)
Here you have an intimate look at my classes for professionals and food enthusiasts that happen inside the Kyoto Fish Market.
The Kyoto Chuo Ichiba.
Because it is forbidden to anyone without a business license or permission to enter the market these classes will grant you not only knowledge and insight but also direct access to products , interacting with the Japanese merchants and purchasing high quality fresh fish.
After the market you can also extend your visit to professional cooking utensils shops, Japanese knives and packing goods.
And if you want to learn how to prepare the fishes you just bought, I have cooking classes that can be added by the end of our visit to this unique place in Kyoto.

Discover the Ancient Culinary Art of Kaiseki
Dating back more than 600 years, the culinary tradition of kaiseki began as a way to prevent the burn of too much caffeine during the Japanese tea ceremony. In the centuries since, the meal has become increasingly elaborate, each course a finely balanced sensory experience.
Chefs spend years learning the art of kaiseki, and Shige Furukawa is no exception. Shige studied and cooked in Tokyo and Kyoto, as well as in New York City. Ten years ago, he brought his talents to Minnesota, serving as head chef at Origami restaurant in Minneapolis before he opened his own sushi restaurant, Kado no Mise, and his kaiseki restaurant, Kaiseki Furukawa, in 2017.
