The street food in Shanghai was so delicious. The restaurant food and special Chinese cuisine was also very nice! I had some amazing Chinese sesame paste noodles that were to die for!

Super Delicious Braised Pork Belly (Dong Po Rou) CiCi Li
Dong Po Rou (Dongpo pork) is a well known dish from the Jiangsu & Zhejiang provinces. It’s made with pork belly. Half fat, and half lean meat. When you eat it, it’s instantly melt in your mouth, and with a taste of shaoxing wine. According to the legend, this dish is created by Su Dong Po, a Song Dynasty well known writer.
Origins
Legend has it that during Su Dongpo's life of poverty during his banishment to Hangzhou, he improved on the traditional process. He first braised the pork, added huangjiu (yellow wine) to make red-braised pork, then slowly stewed it on low heat. In their scholarly work Chinese Gastronomy, Lin Hsiang Ju and Lin Tsuifeng give the recipe The Fragrance of Pork: Tungpo Pork, and remark that the square of fat is named after Su Tungpo, the poet, for unknown reasons. Perhaps it is just because he would have liked it.[3]
Dongpo Pork experienced three phases of popularity, from first appearance to mainstream appreciation. The history of the dish is said to parallel the experiences of Su Dongpo: from Xuzhou, a northern city of Jiangsu province, where Dongpo pork first appeared under the name of Huizeng pork; to Huangzhou, today Huanggang of Hubei province, where Su Dongpo finalized the method and recipe; and, finally, to Hangzhou, where Dongpo pork was officially named and became widely known across China.

Not sure.. sometimes you can get lucky and find that amazingly cool thing.. but that can happen online too.... nonetheless it was a good experience to try out and see what the wholesale scene it all about.

Ancient Chinese coinage
Ancient Chinese coinage includes some of the earliest known coins. These coins, used as early as the Spring and Autumn period, took the form of imitations of the cowrie shells that were used in ceremonial exchanges. The Spring and Autumn period also saw the introduction of the first metal coins; however, they were not initially round, instead being either knife shaped or spade shaped. Round metal coins with a round, and then later square hole in the center were first introduced around 350 BC. The beginning of the Qin Dynasty, the first dynasty to unify China, saw the introduction of a standardised coinage for the whole Empire. Subsequent dynasties produced variations on these round coins throughout the imperial period. At first, distribution of the coinage was limited to use around the capital city district but by the beginning of the Han Dynasty, coins were widely used for such as when paying tax, salaries and fines.
Ancient Chinese coins are markedly different from coins produced in the west. Chinese coins were manufactured by being cast in molds, whereas western coins were typically cut and hammered or, in later times, milled. Chinese coins were usually made from mixtures of metals such copper, tin and lead, from bronze, brass or iron: precious metals like gold and silver were uncommonly used. The ratios and purity of the coin metals varied considerably. Most Chinese coins were produced with a square hole in the middle. This was used to allow collections of coins to be threaded on a square rod so that the rough edges could be filed smooth, and then threaded on strings for ease of handling.

Xi Tang, a small and ancient town on the water, and Xi Tang is a famous town with thousands of years of history, lying in Jiashan County in Jiaxing City, Zhejiang Province. It dates back to the Spring and Autumn Period (770 BC-476 BC) and the Warring States Period (476 BC-221 BC). Entire town area is 83 square kilometers, and it have 62,000 people. RICE COOKER HACKS – Chinese Braised Pork Belly dong po rou Recipe [东坡肉]
Dong po pork (simplified Chinese: 东坡肉; pinyin: dōngpōròu) is a classic Hangzhou dish.The pork belly is cut thick, about 1.8 inches square, and consist equally of fat and lean meat. After a long time simmering, it is so tender that you can literally scoop it with a spoon.

**HISTORY**
Back to Song Dynasty, famed poet Su dong Po was working in Hangzhou, he finds out that Hangzhou people don't like to eat pork because it is too fat that they don’t know how to cook it. Su dong po likes to drink, so he decided to use wine instead of water to braise the pork. It was curious trying but turns out amazing. The wine balance out the fat of the pork belly, so no matter how fat the pork is, it doesn’t taste greasy. Then he shared it with local people which is the reason it becomes so famous now.
**INGREDIENTS**
- 1 pound [453grams] of pork belly
- 4 tbsp of light soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce:
- 2 cups of shao xing wine [Amazon Link:
- 2 tbsp of sugar
- 2 tbsp of red yeast rice (color option) [Amazon Link:
- some spring onion
- 10 slices of ginger
- 8 cloves of garlic
- some water
**HOW TO MAKE DONG PO ROU**
- Blanch the pork belly to remove the bad smell. Put it in cold water and bring it to a boil. Boil it for 2 or 3 minutes.
- Put it under running water to cool down the temperature.
- Cut it into 1.8 inches squares. Use a rope to tie it. This is totally optional. I do this just to keep the square shape and so it's easy to take out later. After simmering for a long time, the pork usually turns into a weird shape and it is so tender that you can barely pick up.
- You can use rice cooker/pressure cooker/regular pot/slow cooker to make this.
- Add a lot of spring onion. Just place it in, try to cover the whole bottom!
- Then put 8-10 slices of ginger and 8 cloves of garlic on top of it.
- Place your pork in, skin down. Then add the sugar and the soy sauce
- And 2 cups of shao xing wine. Don’t freak out with that amount of wine. This is like the soul of dong po rou. It gives the dish its signature aroma and rich taste. By the time it finishes, all the alcohol will evaporate, and you will be left with juicy and tender meat.
- Red yeast rice is the last ingredient. I like to use it as food coloring because it is natural. Soak it with 1/3 cup of water for 10 minutes. Press it down with a spoon you can feel that the rice is soft and you are able to crush it to get more color out of the rice. We use the liquid to add color. If you don’t have it, don’t worry, you can skip it or substitute with 1 tsp of dark soy sauce. It doesn’t affect the taste no matter what you use- just the color will be different. If you use dark soy sauce then the color will be dark brown, if you use Red yeast rice then it will be dark red which i think it looks better.
- Pour the color in and also add some water. We already added 2 cups of shao xing wine, so you don’t need a lot, just a little bit like that. You are free to add more water while it's simmering though. If you use a stovetop or another tool, the water will evaporate differently. You don’t want to burn it, so keep an eye on the liquid level.
- The whole technique behind this dish is to bring it to a boil and let it simmer for hours. As I said before, my rice cooker is really bad. It only has 2 settings - rice and congee. But even this one works. I just put it on the rice setting and let it cook for 2 hours. If you got a nice rice cooker which has fancy options like braising the pork. Pick that one. You can also do this in a regular pot, bring it to a boil and stew it on low heat for 2-3 hours. If you have a pressure cooker, you will only need 30 minutes... I am sure a slow cooker will also be good but I don’t have one so I can’t tell you how long it takes. You gotta figure that out. What ever you use please understand that the goal is to let it simmer until the meat is tender. Different tools require different cooking times. Use my video to help you know what it should look like.
- when it is done, there should be about a half cup of sauce left. Spoon out all the fat. Pour the sauce over the pork. You are done.

Like many mythologies, Chinese mythology has in the past been believed to be, at least in part, a factual recording of history. Along with Chinese folklore, Chinese mythology forms an important part of Chinese folk religion. Many stories regarding characters and events of the distant past have a double tradition: ones which present a more historicized or euhemerized version and ones which presents a more mythological version. Many myths involve the creation and cosmology of the universe and its deities and inhabitants. Some mythology involves creation myths, the origin of things, people and culture. Some involve the origin of the Chinese state. Some myths present a chronology of prehistoric times, many of these involve a culture hero who taught people how to build houses, or cook, or write, or was the ancestor of an ethnic group or dynastic family. Mythology is intimately related to ritual. Many myths are oral associations with ritual acts, such as dances, ceremonies, and sacrifices.
ChinaGSD Distinguished Lecture: Professor Kenneth Frampton, “Chinese Architecture”
On Monday, September 19th, ChinaGSD will be hosting a Distinguished Lecture by Prof.Kenneth Frampton, co-supported by AsiaGSD and Design Dialogues.
Prof. Kenneth Frampton will share his recent visit to China, as well as his thoughts and concerns on contemporary architecture in the emerging worlds. Following the lecture will be a dialogue with Prof. K. Michael Hays (Eliot Noyes Professor of Architecture Theory at Harvard GSD), with responses by Fu Yun (MArch ’15, DDes Candicate) and An Tairan (MDes ’17).
Kenneth Frampton is Ware Professor of Architecture at Columbia GSAPP, where he has taught since 1972. He was trained as an architect at the AA, and has worked as an architect, architectural historian and critic. In addition to Columbia, Frampton has taught at a number of leading institutions including the Royal College of Art in London, the ETH in Zurich, the Berlage Institute in Amsterdam, EPFL in Lausanne and the Accademia di Architecttura in Mendrisio.
Kenneth Frampton is the author of Modern Architecture and Critical Present (1980), Studies in Tectonic Culture (1995), American Masterworks (1995), Le Corbusier (2001), Labour, Work & Architecture (2005), and most recently, L’Altro Movimento Moderno (2015) and A Genealogy of Modern Architecture: Comparative Critical Analysis of Built Form (2015). He is currently at work on an expanded fifth edition of Modern Architecture: A critical History, which will cover architecture in China and other emerging worlds.

上世纪二十年代初,军阀割据民生凋敝,乱世中少年沈其南一家忽遭飞来横祸。父亲因无意间卷入走私阴谋而被杀害,母亲在逃亡中蒙难,兄妹四人历经艰险逃到上海却不幸离散。多年后,长大成人的兄妹三人在经过一番遭际之后重逢。时逢乱世,内忧外患,在绝望中经历层层考验的沈其南逐渐成长起来,在爱和信仰的影响下,成长为上海滩有名的建造师。在短暂的上海大开发时期,在寸土寸金的黄浦江边,沈其南以匠心为本,怀揣理想以民为先。他为改造棚户区的居住环境而不懈努力,为建造廉租房而鞠躬尽瘁。经过火与血的洗礼,沈其南立志为备受战乱之苦的平民百姓建造牢固而温暖的家。侵华战争开始,国难当头,沈其南心怀家国大义,及时揭发了军事防御工事中偷工减料的问题,阻止了战争中更大的伤亡,同时也终于查清了父亲当年走私案的真相,还父亲一个清白。
