The Southern United States Trade Association (SUSTA) and Louisiana Department of Agriculture organized a wonderful program for Taiwan Media Tour during a visit to Louisiana from Sep. 18 to 21, 2007. The schedule included visits to John Folse Culinary School, Café du Monde, Oak Alley Plantation, Aunt Sallie's Pralines, Chef Roy Lyons, Chef Paul Prudhomme factory, Associated Grocers Show and Mardi Gras World. The trip covered the demonstration of exquisite Cajun cuisine of Chef John Folse and Roy Lyons, interviews with the owners of Café du Monde and Oak alley Plantation, visits to local ingredient stores and manufacturers.

MARDI GRAS GOES AHEAD IN HURRICANE RAVAGED NEW ORLEANS
Six months after Hurricane Katrina ravaged New Orleans, revellers are preparing to celebrate Mardi Gras in the city this weekend.
The biggest of three parades, the procession of the all-woman Krewe of Muses, was to include one empty float, symbolising the area's loss.
The slimmed-down Mardi Gras is testament to residents and business owners' determination to continue despite the problems of rebuilding New Orleans.
And a small, but appreciative, group of tourists have decided to celebrate with them.
In the French Quarter, celebrity chef Paul Prudhomme's restaurant is blackening his signature redfish and serving customers again.
But at the nearby Brennan's restaurant, home of the famous dessert Bananas' Foster, they still have walls to paint and repairs to complete before they can welcome paying guests.
The devastation that remains a short distance away from the famous French Quarter shows how much is still to be done.
In the flood zone, the Ninth and Lower Ninth wards are dominated by the ruins of flooded houses.
Residents hope they will not be forgotten as the city hosts the Mardi Gras festivities.
The huge storm laid waste to more than 215,000 homes and now many are abandoned.
Only an estimated 189,000 of the city's roughly 500,000 pre-Katrina residents have returned.
Patricia and Roy Dillon have made seven trips from Georgia, where they are temporarily housed, to clean up their property in the Ninth Ward.
