#myNCstory ~ Niagara College Teaching Winery: Icewine Harvest
A temperature drop below minus 8 degrees sparks a flurry of activity at the Niagara College Teaching Winery each winter. When that day arrives, students from the college’s wine programs bundle up and set out into the on-campus vineyards to pluck grapes that will be transformed into one of Niagara’s most treasured products – Icewine. On January 8, 2014, a new batch of students from the College’s Winery and Viticulture Technician, and Wine Business Management programs had an opportunity to participate in the Teaching Winery’s Icewine harvest; an annual rite of passage at Niagara College, but unlike any other college experience in the world.
The Niagara College Teaching Winery, located at the College’s Canadian Food and Wine Institute at its Niagara-on-the-Lake Campus, is the first and only commercial teaching winery in Canada.

We went to a seminar to match wine and Halloween candy. Years ago I did a video on this winery but the facilities are different now and thus warrant an update. We were treated very well and had a great time. Check it out if you have a chance to visit.

#myNCstory – NC Teaching Winery: Raising a glass to Appassimento
It’s one of Niagara’s greatest treasures, and award-winning winemaker Gavin Robertson gives us an inside look into its creation. A graduate of Niagara College’s Winery and Viticulture Technician program (2011), Robertson is head winemaker at the College’s Teaching Winery, located at its Niagara-on-the-Lake Campus in heart of the region’s wine country. He demystifies the process of how Appassimento wine is produced — a style which has its roots in Northern Italy. Watch as Robertson expertly explains the process from harvest in the College’s Teaching Vineyards, to drying the grapes, to fermentation, and assessing the final product – the best part!
