Bai Pai Thai Cooking School - 2006
In 2006 I went to this cooking school. It's set in a dedicated facility with individual cooking stations for each student. Had a fantastic time and at the end enjoyed a delicious meal that we prepared ourselves. The school's website is baipai.com
THAI COOKING CLASS (recipes included) Pai, Thailand

Green Curry:
Ingredients-
100 g sliced chicken breast/tofu
50 g eggplant
50 g green beans
30 g carrot
3 kaffir lime leaves
6-10 sweet basil leaves
2 tbs coconut oil
1 tbs soy sauce
1 tbs green chili
125 ml water
300 ml coconut mylk
1. Heat the oil, and add the chili paste.
2. Add chicken and veggies, then water and coconut mylk.
3. Add soy sauce, taste.
4. Add kaffir and basil leaves
5. Serve next to sticky rice!
Papaya Salad:
Ingredients-
50 g green papaya peeled and shredded
10 g green bean cut (one inch)
10 g carrot
1 tomato cut into 4 pieces
1-5 cloves garlic
1-5 chili
1 tbs coconut sugar
2 tbs fresh lime juice
2 tbs soy sauce
10 g roasted nuts
1. Put garlic, chili and Long Beach into mortar and pound roughly! Add coconut sugar, tomato, soy sauce and lime juice and stir until everything is combined.
2. Add papaya and carrot and stir
3. Add roasted peanuts on top!
Tom Yup Soup
Ingredients:
6 galangal sliced thinly
1 stalk of lemongrass sliced
50 g mushrooms
1 onion cut
1 tomato cut
4 kaffir leaves
1 tbs Tom yum chili paste
1 tbs soy sauce
1 tsp salt
300 ml water
1. Boil water and drop everything in!
2. Super easy and yummy
Pad Thai
Ingredients:
30 g sliced chicken breast/tofu
50 g rice noodles
1 egg
1 tbs sliced tofu
1 tbs spring onion
Carrot shredded
Sprouts
3 tbs coconut oil
1-3 tbs tamarind sauce
2 tsp soy sauce
3 tbs water
1. Heat the oil in a wok pan, and fry egg (stir constantly)
2. Add chicken or tofu until cooked
3. Add noodles and right after water
4. Add veggies
5. Add all the sauces and stir together
6. Season with spring onion and peanuts
Stir Fried Chicken with Cashew Nut
Ingredients:
50 g chicken breast/tofu
30 g onion
20 g carrot
20 g cashew nut roasted
10 g spring onion
2 tbs coconut oil
1 tbs oyster sauce
1/2 tbs soy sauce
3 tbs water
1. Heat oil on the wok, and add chicken until cooked
2. Add veggies and 1 min after add all the sauces and mix well
3. Add cashew nuts and spring onion to season!
Spring Rolls
Ingredients (paste):
2-5 cloves garlic
2 coriander roots chopped
1 tsp pepper corn
Stir in mortar and pound it all together until it’s a sauce.
In spring rolls you can add whatever you like! We added cabbage, carrot, sprouts, and glass noddle!
Deep fry or eat fresh :)
Caring Through Cooking: Pai visits Courageous Kitchen!
A look into a lesser known side of Bangkok. Being immersed in so much good food, I admittedly often take food for granted. Filming this video was a much needed change of pace for me. Meet Dwight Turner, a food blogger who founded Courageous Kitchen, an amazing charity that supports Bangkok's urban refugee children through cooking classes and nutritious meals. Although these families don't have much, they were kind, warm, full of smiles, and made me feel very welcome while I was there.

Bangkok to Chiang Mai to Pai by Train | The full experience
In this awesome trip we travel from Thailand's capital city, Bangkok, all the way north by train to Chiang Mai, and then to the cosy town of Pai. Our final stop on the train is Chiang Mai because the trains do not travel all the way to Pai. From Chiang Mai we travel with a van for two hours to the small town of Pai located in Mae Hong Son province. This province is a remote, jungly, mountainous province in northern Thailand, bordering Myanmar (Burma).
We travel to Chiang Mai from Hua Lomphong train station in Bangkok in second class sleeper carriages. The experience is always fun, authentic and you never know what you are going to see or who you are going to meet.
During our stay in Pai we stayed at Phu Pai Art resort on the outskirts of the main town. This was an excellent choice as the resort is located on a large piece of land (owned by the resort) on which they farm rice. Guests are encouraged to roam freely on the resort's grounds. There are roads and pathways through the rice fields, in fact a trip to Thailand may not be complete if you don't walk among the rice fields! Guests can even relax besides the Pai river which borders the resort.
In the next video I will showcase some of the best natural attractions that make Pai a real hidden gem nestled between thick, dense jungle and towering mountains.

Best 4 Things to Do in Pai, Thailand // Land Split / Bamboo Bridge / Pam Bok Waterfall / Hot Springs
What a jam-packed day! Since we were on our last day in Pai we wanted to see as much as possible. We found the best four things to do in Pai, Thailand. We ended up going to a tectonic plate (the land split), a massive bamboo bridge overlooking the rice fields, Pam Bok Waterfall, and hot springs in the mountains.

If you had told me a year ago that we were going to sell all of our stuff to start backpacking the world, I would have called you a liar. Decisions like the one we made start with an inflection point. A point where you realize that life can never be the same anymore. We moved in with our parents, sold everything we own including our cars, and paid off $70,000 worth of debt. We worked 70hrs/week over the last year trying to save up $15,000 to make our dreams come true. Now, we are travel journalists who showcase the beauty in different cultures and inspire others to chase their dreams through our YouTube Channel and website Chase for Adventure. We want to show others that if they want something bad enough, they’ll figure out how to get it; show people who are struggling that they can make the light at the end of their tunnel. PAI: Exploring the hippie hillside town in Northern Thailand (ปาย)
As a vacation from our residence in Chiang Mai we decided to take a serpentine road trip to the hillside country town of Pai (ปาย) where relaxed, wandered around, enjoyed stunning scenery and visited a Hot Spring.
As we crammed into a over-capacity white minivan we began our journey to Pai which included a staggering 746 turns / curves in the road. I'm not normally the type to get sick on the road; however, I started to feel nauseous from the trip, so I ended up popping a couple of gravol pills to settle my stomach down.

For every twist and turn we encountered along the way we were rewarded as soon as we arrived in Pai where we instantly noticed the pace of life slowing down.
Our guest house was located in an idyllic setting which included hillside views, rice fields in our backyard and thatched bungalows. To keep us company three pet cats would often sleep beside us as we swung on a hammock and the adorable Pugsley, a cute pug (who is actually named Faye) would wander over to us looking up at us with his big eyes and wrinkly face.
The three days in Pai were spent mostly relaxing and chilling out. In fact, it's hard for me to fathom people coming to Pai and doing anything else but taking it easy.
The only thing I wish is that we had more time. If I ever base myself in Thailand again I think I'd prefer Pai over Chiang Mai to work on creative projects.
This is the hillside town of Pai. It is about 3.5 hours away from Chiang Mai and this is where we've been spending the weekend.
We are staying at the Pai Chan Cottages and this is our private little Bungalow, so let's go have a look inside.
Hey! Come on in! This is our humble little room here. You can see we've got a nice big size bed and mosquito net over here. Fortunately this time of the year we haven't had to be using it very often. It's freezing at night! It is freezing so likely the mosquitoes have all died. The best part about this place are the views. Check out this: rice fields!

We've only got a few days left here in Thailand and I've been hearing from friends raving about Pai for years and I've always put off coming here. This time I said 'There is no way we're going to leave Thailand without coming to Pai. Now I understand what all of the fuss is about. This place is wonderful. It is one of the most relaxing towns I've ever visited and we're going to show you around.
One of the main reasons people come to Pai is to just relax and totally chill out. A lot of other destinations you go to visit temples, you go to do other types of things but here it is just enjoying the scenery, wandering around and swinging on a hammock. Those are the top things to do and I'm loving it so far.
That was awesome! We crossed that rickety old bridge and then we came to some really cool looking guesthouses and now we're here in the fields.
One of the draws to Pai is being able to explore the countryside. Yesterday, I rented my very first scouter. It only cost me three dollars a day and I got a helmet with that. It was a great way to explore. I thought it was going to be kind of tricky riding it for the first time but it was a lot of fun.
Aside from chilling out and relaxing in Pai one of the few things that we actually really want to do is to take a trip over and visit the hot springs.
That giant white Buddha over there is something I plan on visiting tomorrow morning when I wake up.
I can't swing. I need an assistant to swing me. Sam, come swing me! I'm just kidding. I'm kidding! No, Sam. Sam no! Oh, my gosh! What are you doing? Okay, I just want to get you on the hammock. I don't want to go flying! No. Okay, just go back on and say something.

If you like nature, you need to visit Pai, Thailand! This small town in the mountains of Northern Thailand is full of amazing sights. It's about a three-hour (windy-road) drive from Chiang Mai. Mostly known for it's hippie vibe, it's a very chill and quiet place to escape the busy cities.
We ended up paying 500 baht (~$15 USD) for this organized tour (it's called the Pai Let's Go Tour). But you can also just rent some motorbikes and ride to these locations yourself.

Pai is located in the northern part of beautiful Thailand. Situated about 50 miles above Chiang Mai, this small town of only 2,200 residents lies just along the Pai River.
It used to be a little market village until the tourist population kind of made its way into the scene. Pai is really a backpacker's paradise with plenty of small, quaint places to meet and socialize with fellow travelers.
LIVE COOKING! Pai is Making Pie on Pi Day!
It's Pi Day 2017! The most appropriate day of the year for me (Pai) to be making pie!! So here's a little fun live cooking video for you: an easy and quick pie recipe you can make in a pinch. Delicious, beautiful pie doesn't need to take you hours of labour! Here are the ingredient amounts I used below (it makes only a small amount as you can see in the video, so feel free to double/triple the recipe!)
Cherry Filling:
1 1/2 cup frozen sweet cherries
2 - 3 Tbsp sugar
1 Tbsp cornstarch
1 Tbsp lemon juice
Cream cheese Filling:
60 g cream cheese
2 Tbsp butter
A little lemon zest
1/3 cup icing sugar
And of course, pre-baked tart shells which you can buy or make your own. This probably makes about 15 of the little pies I used in the video...although I'm not sure cuz I ended up using the rest of it as ice cream topping!

A Piece of Pai | Thailand
The start of my 6-week backpacking adventure throughout Thailand and Southeast Asia started in the city of Pai, Thailand. Pai is a small town in the northeast region of Thailand about 3-4 hours from Chiang Mai. I went in March 2019, which is dry season but still loved every second of it! With beautiful views, lots of nature and an amazing environment, it's a must-see for backpackers and travelers alike.
