In this video I spend a day at a Thai cooking school in Thailand (Smart Cook Thai Cookery School). We go to a local Thai food market for a tour and to buy the ingredients for the delicious Thai curry, Massaman Gai (Massaman curry with chicken), which the teacher, Mac, shows us how to cook when we return back.
The market in the video, Maharaj Market (Krabi Morning Market, is in Krabi Town in Krabi Thailand. It’s open every day from 5am till 10:00am and its Google Maps coordinates are:
Thai Massaman curry, is often made with chicken, seafood, beef, pork and many other things. It is one of the most popular curries in Thailand, you will find it at nearly all Thai restaurants, and it is also a very popular Thai street food dish.
MASSAMAN CURRY RECIPE – Serves 1
INGREDIENTS
- 1 Thai red onion (shallot), peeled, sliced and finely chopped
- 1 Coriander root (or 1 coriander stem), finely chopped.
- 1 Small piece of turmeric (about 1 centimeter long), finely chopped.
- 1 Small piece of kaffir lime (about 1 centimeter square (or half a kaffir lime leaf)), finely chopped.
- 1 Small piece of lemongrass (about 1 centimeter long), finely chopped.
- 1 Small piece of galangal (about 0.5 centimeter long), finely chopped.
- 2 Cloves of garlic, finely chopped.
- 1 Mace skin, finely chopped.
- 1/2 teaspoon of cardamom powder.
- 4 Cloves.
- 1 Pinch of cumin seed.
- 1 Pinch of black pepper.
- 1/2 teaspoon of coriander seeds.
- 3 Bay leaves.
- 1 Cinnamon stick.
- 1 & 1/2 tablespoons of chili powder (or more or less, to suit your taste)
- 1 teaspoon of shrimp paste.
- 1 tablespoon of fish sauce.
- 1 Heaped teaspoon of palm sugar (any sugar will work).
- 1 tablespooon of tamarind paste.
- 150ml of water
- 100ml of 100% coconut milk
- 50 gm of boiled potato.
- 2 tablespoons of boiled peanuts.
- 1/4 onion, chopped.
- 100 grams of sliced chicken.
METHOD
1. Pound the cardamom, cloves, cumin seed, coriander seeds, black pepper and mace until powdered in a mortar and pestle.
2. Add the coriander root, kaffir lime, turmeric, shallot, lemongrass, galangal and garlic to the mortar and pestle and pound until paste.
3. Add the chili powder and fish paste to the mortar and pestle and pound until mixed through. Remove the paste and place on a plate.
4. Place the 150ml of water and 100ml of 100% coconut milk in a jug.
5. Dry fry (no oil) the paste over a medium/high heat until fragrant, stirring constantly, then add 1 large spoon of the water/coconut milk and mix well.
6. When boiling add 1 more large spoon of the water/coconut milk and mix well.
7. When boiling add the chicken and cook for 1 minute, while stir frying.
8. Add the remaining water/coconut milk, while stir frying and bring to the boil.
9. Add the peanuts and potato, while stir frying and bring to the boil.
10. Reduce heat to simmer and add tamarind paste, bay leaves and cinnamon. Simmer for 1 minute.
11. Serve with rice and enjoy!

We decided to have a fun night learning how to cook Thai! We were picked up from our hotel by one of the owners/teachers and he was a blast! He was hilarious and we couldn't stop laughing from his funny laugh!
He was very full of life and made the evening fun and enjoyable while learning. My 8 year old daughter, 12 and 14 year old sisters had a blast and we all got certificates at the end which made the girls very proud! We learned how to make curry paste from scratch as well as 8 other dishes!

This video is part 2 of a day I spent at a Thai food cooking school in Thailand (Smart Cook Thai Cookery School). In part 1 we went a local Thai food market for a tour and to buy the ingredients for the dishes we made during the day – the delicious Thai curry, Massaman Gai (Massaman curry with chicken), Tom Kha Gai (Chicken in coconut soup) & Khao Niao Mamuang (Mango sticky rice), which the teacher, Mac, shows us how to cook when we return back.
All 3 dishes are very yummy and are some of the most popular Thai dishes in Thailand. You will find it at nearly all Thai restaurants, and they are also very popular Thai street food dishes.
TOM KHA GAI (CHICKEN IN COCONUT SOUP) RECIPE – Serves 1
INGREDIENTS
- 4 pieces of lemongrass (each about 25mm long).
- 1 Slices of galangal (each about 5 millimeters wide).
- 1 Kaffir lime leaf, torn into quarters.
- 2 (mild) to 5 (for spicy) fresh, green chilies, squashed.
- 1/2 a white onion, cut into large pieces.
- 1 large straw mushroom, cut into sixths.
- 1 Coriander leaf, including stem, chopped into 1cm long pieces.
- 1 Green onion leaf, chopped into 1cm long pieces.
- 1 Teaspoon of white sugar.
- 1 Tablespoon of fish sauce.
- 1 Tablespoon of fresh lime juice.
- 50ml of 100% coconut milk, mixed with 200ml of water.
- 100 grams of thinly sliced chicken.
METHOD
1. Heat the c coconut milk & water mix over a high heat and bring to the boil.
2. Add the galangal, kaffir lime leaf, lemongrass and chili.
3. Cook till fragrant (about 1 minute).
4. Add the chicken. Separate the pieces, but do not stir for 30 seconds.
5. Add onion and mushroom.
6. Add sugar & fish sauce and cook till the chicken turns a uniform white colour (about 1 minute).
7. Turn off the heat and add the lime juice.
8. Taste and adjust the flavours as necessary to your taste.
9. Place in a bowl and top with the coriander and green onion.
10. Enjoy :)
KHAO NIAO MAMUANG (MANGO STICKY RICE) RECIPE – Serves 1
INGREDIENTS
- 1 cup of sticky rice rice, soaked in cold water for 3 hours.
- 30 dried butterfly pea flowers
- 2 cups of water
- 1/2 a mango
- 100% coconut milk (about ¼ cup).
- 2 Teaspoons of white sugar.
- A pinch of salt.
- 2 Teaspoons of toasted mung beans.
METHOD
1. Steam the soaked sticky rice for 15 minutes.
2. Bring the water to the boil and add the butterfly pea flowers, then turn off the heat.
3. Wait for about 3 minutes, then place 2 large spoon fulls of the water in a wok and add 2 large spoon fulls of coconut milk. Mix over a medium heat
4. Add the sugar and mix in.
5. Add the salt and bring to the boil.
6. Turn the heat to low, add the steamed sticky rice and mix in.
7. Stir occasionally until the rice absorbs the liquid.
8. Serve the rice with half a mango and top with toasted mung beans.
9. Enjoy :)

Best restaurant & accommodation in Krabi, Thailand - The Frog and Catfish. 15 minutes from Ao Nang
The best restaurant & accommodation I have found in the Ao Nang and Krabi Thailand area (15 minutes from Ao Nang, Krabi Town and Klong Muang), actually it's the best restaurant I have ever found, anywhere. Their reviews on TripAdvisor tell a similar story.
The food is absolutely delicious, some say it's the best restaurant in Krabi, and I would agree with them. The prices are great, the staff are awesome and the restaurant has to be seen to be believed. The gardens are amazing and you can even swim there. It is a true slice of Paradise!
And it's a great wedding or honeymoon venue.
There are plenty of choices on the menu - authentic Thai food and Western foods are both available. The chef, Bua, is so passionate about her work, everything I have tried from the menu is absolutely superb! All of their staff go above and beyond to ensure their customers have an amazing experience.
They do luxury accommodation cheap as well, the best I have found in Krabi. They can organise tours as well - kayaking, elephant treks, Island hopping and Thai cooking classes are all available. But the place has everything you could want and is so relaxing and beautiful that you may not want to leave. It's about 15 minutes out of Ao Nang in Din Daeng Noi (not far from Ban Nong Thale/Ban Khao Klom), but it is so worth the trip.
