Here we are! At Tawlet restaurant in Beirut where I’m meeting Kamal Mouzawak. Having explored early on Lebanon’s rural areas and discovered the crop that farmers’ harvest, Mouzawak felt a desire to bring people what he felt they were lacking: farm fresh organic produce from all over the country!
So it was only natural that we met him in what may be considered his second home, surrounded by hungry and happy foreigners and city dwellers – to speak about his food activism.

To complement the celebrations of AUBFM 150th anniversary, AUBMC, and in collaboration with Souk el Tayeb, held a first-of-its-kind event on Friday, March 24, 2017 at the Saab Medical Library Plaza. Lebanon's first organic farmer's market is all about fresh and local agriculture, social entrepreneurship, and creating a thriving eco-friendly community. With a mission to promote unity around a common respect for food, land, and agricultural traditions, Souk el Tayeb is a true Beirut staple for organic food and sustainable cuisine. Founder Kamal Mouzawak understands and appreciates the culture and tradition of food, as well as how it brings people together.

Meet Lebanon’s first organic farmer’s market. Kamal started ‘Souk El Tayeb’ - an organic farmer’s market.
Kamal: “We are in the center of Beirut. Souk el Tayeb is about supporting small-scale farmers and producers, and about perpetuating an identity through agriculture and cuisine. It brings a little bit of the countryside to the city. It brings farmers and producers from different regions of Lebanon.”
80% of the world’s food is produced by family farms. Our global food security depends on them.
Kamal: “Tradition is expressed in different ways. It's the costume. It's dance. It's music. It's architecture. There is one expression that goes the most through time and place, which is food.”
Rima (Breadmaker): “I’ve been working at Souk El Tayeb for 12 years. I am very well known at the Souk, and thank God my food is tasty because customers now wait in line to get their pitas.”
Massoud (Farmer): “A healthy mind only is in a healthy body, and for the body to be healthy it needs healthy food. This is what food is to me.”
Kamal: “Be the change you want to see. This is what Gandhi said. In Islam, they said, Every act is an act of adoration. You don't need to go to church, to a temple, or to a mosque to create. Just do whatever you're doing in the best possible way.”
Rima (Breadmaker): “Whatever you do, if you love it the outcome will always be great.”
Kamal: “This our contribution to life. This is my contribution to my society. And this is my contribution to my country.”

Kamal is often called 'food activist', a food writer; he was struck by the situation of the regional farmers during the last war. Creating 'Souq Al Tayeb'-a weekly makeshift farmers market (an NGO), he invited the organic farmers to sell there, giving Lebanon's food traditions a human face; Mouzawak subtly integrated different communities normally at loggerheads - Muslims, Christians and Druze- creating peace through participation. Kamal goes into conflict zones, inviting women to cook their traditional cuisine and earn their livelihoods, this takes him tense Beirut to war-torn Becca Valley, where he also creates cultural interaction to heal deep wounds.
