And before today, the only kibbeh I was really familiar with was the oval shaped little deep fried ones. It was learning experience, and I now realize why kibbeh and all its various shapes and sizes is truly one of the most special dishes of Lebanese cuisine. #Lebanon #LebaneseFood #food
Almerdeshiyeh Soutou Restaurant ( - We arrived to the restaurant and had some breakfast next to the river before proceeding with the cooking for the day. Then we got started making a few variations of kibbeh.
What is Kibbeh? - Combination of bulgur, minced meat, spices, and can be made into many formations.
We had kibbeh nayyeh - the raw meat version, kibbeh in a big flat circular pan (cooked in the fire oven), fried kibbeh, and finally the king of all kibbeh - giant meat balls filled with lamb fat and grilled.
It was an amazing meal, with similar ingredients making up each type of kibbeh but with endless shapes and sizes. Another incredible Lebanese food meal in Lebanon!

Carpooling gains popularity in Lebanon
Long gone are the days of sticking a thumb out on the street and hitching a ride from a passerby. University students in the Lebanese capital of Beirut have brought carpooling to the 21st century in attempts to manage the city's inevitable traffic jams while saving cash and protecting the environment.
They set up the country's first carpooling website -- autopooling.com -- which allows users to register their departure point and destination while checking who else is traveling on the same route.
To guarantee safety, potential carpoolers can request specific companions, allowing them to exchange personal information and gain access to their Facebook profiles.
Maria Zeinoun and Chant Kazandjian are carpoolers and students of the Lebanese American University in Byblos. Zeinoun registered her daily trips on the site and soon received a response from Kazandijian to join her.
Besides bad traffic, public transportation standards in the country aren't up to par, factors which got Kazandijian to seek alternative means of getting to university. His typical route included a few bus transfers and taxi rides, until he discovered carpooling.
The motto of the concept is simple: Save money and fuel, reduce traffic, meet new friends, pollute less.
I liked the idea because it is a little strange, so I felt it had potential. We should encourage carpooling because it has many benefits and saves a lot of fuel, especially since it now costs 40,000 Liras for 20 litres ($27 dollars). This will help many students, who have little pocket money plus it's a nice way to meet new people at the university, said Zeinoun.
The idea of the site came about after several members of the environmental club in the American University of Beirut decided to encourage the idea of carpooling, according to web developer Paul Salameh.
We created a small website for AUB called AUB carpooling and after its success we decided to expand to Notre Dame University. It succeeded there too so we expanded carpooling to all universities across Lebanon. In two months, we had covered not just universities in Lebanon but also companies who can also use the website, he said.
He says one of the main challenges in creating the platform is to ensure passenger safety when hitching rides with strangers.
We focused on safety, which is why we created 'Companionship Request' where a person who wishes to carpool with someone in particular can send a request and the other person has to approve it. Once approved, the first person can then see their information, phone number and e-mail address. If a person wants to know more about who's sending the request, we created what we call 'Facebook Integration', they can see each other's Facebook profiles and verify if they are in fact enrolled at the university and so forth, he said.
The site, which was launched in March this year, currently has 2,000 active users and the creators are planning an application for smartphones.

Fadi has truly perfected the art of roasting a whole lamb bbq, from the way he cuts and skewers it, to the marinade, to the roasting technique, to perhaps the most genius of all - how he chops it up with spices, mixing and matching meat with fat, and feeds it to you! #Lebanon #LebaneseFood #bbq
It all began at Taanayel Ecolodge one beautiful afternoon. We started with the whole fresh lamb, where Fadi began making cuts to hold in the marinade and so the roast would be even. One of the most unique parts of this experience was having Fadi slice up the raw testicles, and eating them in a bit with sweet pepper and mint.
Marinade - The marinade was a combination of yogurt and spices, including lots of sumac, and not totally sure what else. He rubbed lemon and the marinade all over the lamb before covering it in foil and lighting the fire. Fade mentioned to me that the secret was in the hand roasting of the lamb - not using a machine to roast evenly - he said a lamb is not even, so you need a human to roast and turn to even out areas that need more heat and less heat. He’s mastered it.
Hours later, the meat was caramelized, yet juicy and tender on the inside. Probably the most interesting, unique and amazing technique is when the lamb is ready, he slices of strategic part of the lamb, including mixtures of meat and fat, and chops them together, mixes with lemon juice, sumac, salt, and pepper, wraps each bite of meat in bread, and feeds you.
Fadi told me he’s even fed the President of Lebanon!
It was truly some of the best single bites of meat I’ve ever had in my life. Unbelievable combinations, spices, and flavors. It was a once in a life-time bbq whole lamb experience.

- World Bank Group President Jim Yong Kim visited an elementary school in Beirut that was once 95 percent Lebanese students and now has a majority of students from Syria, whose families fled the war. The visit, taken during a four-day trip to Saudi Arabia, Lebanon, and Jordan, illustrated the increasingly burden felt by Lebanon, where more than 1 million Syrians have fled to escape the war. In 2011 AUB-NCC launched the Biodiversity Village Award -- Baldati Biati. This project was conceived to promote decentralization of biodiversity conservation by engaging village communities in the process of planning for the conservation of their village's natural resources.
50 Villages participated in the Biodiversity Village Award-- Baldati Biati project since 2011. Each village formed a local committee that consisted of representatives from local authorities, schools, civil society and private institutions.
Following the formation of village committees, AUB-NCC used icons developed by the greenmap.org and a participatory mapping approach to help participating committees identify and place their natural resources and social landmarks on one map.
This documentary was produced to inspire other Lebanese villages by disseminating one environmental best practice identified in each village.
