Peach Picks for South Carolina - #12 Sugar Giant - Everything About Peaches

Hey, I'm Desmond Layne, Peach Specialist at Clemson University. Welcome to the Clemson Tiger Peach Network.
As you can see from today's issue of the New York Times, it's Thursday, July 28, 2011. You may be aware that there is a rivalry between Georgia and South Carolina about who's got the tastier peaches. You can read this article to make your own determination. But besides making it into the Big Time, that is the New York Times, we're going to be talking about some big peaches here today at my variety test block at James Cooley's farm here in Chesnee.
For peach growers this time of the year, size really matters. On your left is a box of Sugar Giant. That's our Peach Pick for this week. Sugar Giant averages greater than 3 inches in diameter. Now that's a big peach! It only took sixteen to fill this box. By comparison, on your right is another peach cultivar. The average size there is about 2 inches in diameter or less. It took 50 peaches to fill that box. Guess which one is going to make more money this time of the year?
Sugar Giant has melting flesh. It's a freestone. It also has white flesh and it's a subacid type which means that the taste on your tongue is not tangy. It's mellow, very sweet, kind of like honey. It was developed by Zaiger Genetics in Modesto, California. It was patented in 1993. Because the patent is still effective, you have to buy trees from a licensed propagator.
In our Clemson University research trials over the last several years, the performance of Sugar Giant has been excellent. We typically harvest Sugar Giant in the last two weeks of July or the first week of August depending on where you are located in the state. As I have already told you, Sugar Giant is a big peach. It averages 3 inches in diameter or larger. This baby is a meal by itself!
It typically has a very nice red overcolor or blush and a nice uniform, round shape. When you cut through the skin into the flesh, you can see that it's got white flesh. There may be some occasional red pigmentation in the flesh and that's no problem! Those are anthocyanin pigments which are antioxidants and there's a health benefit there for you.
You know being a peach specialist and trying to stay on a diet - it's almost mutually exclusive! I've got to taste peaches all summer long. Well, let's see how this one tastes. Mmmm, now Sugar Giant is a treat! Sweet, juicy. It's got that mellow taste. It melts in your mouth. It tastes kind of like honey. It doesn't have that traditional tanginess that we associate with a Southern peach but boy is it good! Mmmmm!

We're out here slaving in the peach orchard where it's almost 100 degrees but we do it because we love it and we want to give you the best information possible. Welcome back to Everything About Peaches! Our third episode is called Different Kinds of Peaches. Did you know that peaches originally came from China where they have been cultivated for over 3000 years? Today, in China, there are more than 1000 unique types of peaches! Spanish missionaries actually brought peaches to the New World in 1571. We grow from 100-200 different cultivars of peaches in the United States. Today, we will teach you how to identify several different types of peaches.
Because nectarines have a smooth skin like a plum, some people think they are a cross between a peach and a plum. But they are not! They are actually a genetic mutation of a peach. A nectarine is just a peach with smooth skin instead of one with fuzzy skin. When it comes to fuzziness, you may have noticed that peaches that come from the roadside market are fuzzier than the ones that come from the commercial chain store. Fruits for the roadside market are picked directly from the tree into the basket that they are sold in. By contrast, fruits in the commercial chain store are harvested and then mechanically brushed in the packinghouse to remove the fuzz.
Most peaches have a naturally round shape. Some, however, are shaped like a donut. These are flat or saucer-shaped peaches and they are a natural, genetic mutation. Flat peaches are fun and easy to eat. You can hold them in the middle and eat your way around the small round pit in the center.
The color of the flesh inside a peach can be yellow, white or red. In America, most common cultivars have yellow flesh. In Asian countries like China, most of their cultivars have white-flesh. Although some solid red-cultivars do exist, they are fairly uncommon in most markets.
Most peaches at local markets have that characteristic blend of acidic tanginess and sweetness. However, newer low-acid types are becoming popular now in America, especially among Asians and Hispanics. These low-acid types have a very sweet taste -- like honey, but they lack the tanginess of a traditional Southern peach.
Another name for the pit inside a peach is the stone. Peaches where the flesh sticks or attaches to the stone are called clingstone types. The commercial canning industry in California primarily uses non-melting, clingstone peach cultivars. For these, the pits are removed mechanically when canning. On the other hand, peaches that have flesh that does not stick or attach to the stone are called freestone types. For them, the stone is free from the flesh and they are easy to cut in half and separate with a gentle twist. Most people who can peaches at home actually use melting, freestone types. These are much easier to handle and more readily available than clingstone types.
Most peach cultivars available in local markets have what we call 'melting' flesh. That means that when you eat ripe ones, they practically melt in your mouth. However, some cultivars, particularly those used in commercially canning, have what we call 'nonmelting' flesh. The flesh of these is chewy, even rubbery. Some newer flesh cultivars are being developed that are very firm and actually crunchy, like an apple, when fully ripe.
I'll tell you what, being a Peach Specialist is a rough job! Today we talked about all different kinds of peaches. Traditional yellow-fleshed peaches, mmmm, fantastic! White-fleshed peaches, mmmm, exquisite! White nectarines, mmmm, heaven on earth! Yellow sub-acid nectarines, mmmm. And what about these? Donut peaches. Laugh. You need to go out and get you some of these!

William Gregg and Aiken’s First Peaches
William Gregg was born in Monongalia County, West Virginia, in 1800.
After he made his fortune in Charleston, from his success as a watchmaker, a silversmith, an importer, and from his inheritance; he began to write a series of articles that appeared in the Charleston Courier. These articles outlined ways that men of business in the South could invest in manufacturing. Gregg wrote about his belief that the area should stop depending on agriculture as the only means of commerce. Later those articles were consolidated into a pamphlet called Essays on Domestic Industry and made Gregg the leading advocate for industrialization. It was his personal involvement with a Vaucluse mill that spurred him to move from Charleston to Aiken to begin work on his most deeply held dream of helping poor, southern people prosper in a structured mill village.
Gregg was quite a wealthy man when he made Aiken his permanent home in 1845. He was ready to show that his ardent belief in rescuing the South from a reliance on plantation agriculture could become a reality. Many people who didn’t own their own land could not read or write. They had no specific skills other than working on other people’s farms and found it difficult to provide for themselves and their families. The Graniteville Manufacturing Company Mill and village were constructed on the banks of Horse Creek – then Edgefield County and today, Aiken County – six miles from the City of Aiken. Gregg’s project was named “Graniteville” because the main material used to construct it was granite that was mined from a local quarry.
Graniteville had the huge cotton mill as the center of the town. Gregg had houses built for the workers that were affordable for them to rent and that were maintained by the company. There were village doctors to take care of illness. Parents were responsible, as employees of the mills, to make sure their children attended the school in the village. Many children of that era were forced to work by the age of eight or nine, but Gregg’s “compulsatory school” meant that parents could not work for the mill if their children did not attend regularly. Shortly after the mill opened in 1849, with the village in place, Graniteville became one of the most successful textile factories in the entire southern part of the United States.
As he witnessed so many of his personal theories of industrialization thrive, Gregg drove his buggy up the hill from Graniteville to his home named “Kalmia”. It was built on the summit of the highest hill in the town of Aiken. On the corner of what is today Richland and Summit, his large house stood. It was one of the first in town to have “illuminating gas” running throughout it that provided light other than that which came from candles or oil lamps.
The one interest that William Gregg enjoyed above all others was that of gardening. But since he was very energetic, as well as a man on the forefront of the Industrial Revolution, he approached gardening with the same enthusiasm as he did everything else in his life. On the 100 acres on which his house stood, he first planted 2,000 peach trees in front of it in 1857. Gregg regularly attended meetings with Governor James Hammond at the Beech Island Farmer’s Club to confer with other growers and apply what he’d learned from them to make his crop flourish.
Gregg wanted his peach orchard to demonstrate the success that could be accomplished by South Carolina farmers and soon he began shipping his fruit, each peach individually wrapped and packed, by night train from the nearby Kalmia Station. The peaches traveled to Charleston, where they were transferred to a steamer ship and taken directly to New York City. People there bought the fruit as soon as it arrived. Gregg’s Aiken grown peaches had the reputation in New York as being the freshest peaches available. There was a mere three days elapsing between picking the peaches off the tree in Aiken to being able to eat them 800 miles away.
Right before the start of the Civil War, Gregg planted some 6,000 more peach trees on terraces that sloped to the east behind his house. Entries from his personal diary show that he mostly grew the Tillotson variety of peach. He also mentions that he “grafted Chinese peaches”. All tolled, Gregg had a combined orchard of 8,500 trees. He was the first, commercial peach farmer in South Carolina, as well as the “Father of the Southern Textile Industry”.
So less than two hundred years ago, on what is land today that hosts businesses such as Walmart, Aiken Regional Medical Center, the University of South Carolina Aiken and hundreds of private homes; there were once thousands of peach trees that supplied fruit to both local and national consumers.
Spraying Peach Trees – Family Plot
Retired Extension Agent Mike Dennison shows how to spray a peach tree. Before you spray, read the label and follow the safety guidelines on it. Wear long pants, a long sleeve shirt, and rubber gloves. It is likely the spray will drift onto you so the protective gear is important. The tree Mike is spraying is about 8 feet tall and 8 feet in diameter so he needs between half a gallon and a gallon of spray. The tree he is spraying still has some blooms, so he will not be spraying an insecticide on this application. He will be spraying a fungicide to try to control brown rot. Mike uses a fan nozzle on his sprayer. He sprays the top and bottom of the leaves along with the limbs and trunk. Spray almost to the point of runoff. Because the tree was pruned to an open center it is easy to spray.
