Discover Thainess at the Vince Hotel Bangkok Pratunam - Interview with GM, Khun Fah

When you attend a travel trade show in the city of Phnom Penh, speaking to a hotel that is located in Bangkok is certainly not a priority, at least for me, as I am far more interested in talking to companies that are based in Cambodia.

However, if I had not sat down with Mr. Pitayakom (Fah) Yangsuksathaporn, General Manager of the Vince Hotel Bangkok Pratunam whilst I was at the Cambodia Travel Mart last month, I would not have learned how creative the hotel is, nor hear about one of the cleverest marketing ideas I have ever come across from a hotel, that up to that point, I didn't even know existed.

Not only does the Vince Hotel Bangkok Pratunam have a complimentary popcorn machine in the lobby that every guest can help themselves to 24/7, the hotel will also let you choose from a variety of traditional Thai costumes, dress you up, put a little make up on you, do your hair, take your picture in a dedicated studio, and then give you all the pictures, for free!

It is such a brilliant marketing idea, that I have no doubt that other hotels will pick up and adapt - even if they aren't in Thailand. Not only does it give guests a souvenir that they will cherish and share with everyone, it makes them want to return, time and time again to try new outfits and styles.

And frankly, any hotel that has a GM and team creative enough to come up with such an idea and implement it well, probably has plenty of other great selling points too.

That's why, after I returned to Bangkok from Cambodia, I sat down with Khun Fah to learn more about the property.

In this interview, filmed in the rooftop bar of the hotel on 1 November 2019, Khun Fah tells us why the Vince Hotel Bangkok Pratunam was at the Cambodia Travel Mart, whether it was worthwhile, what results he has seen since coming back to Thailand, and whether he will attend the Cambodia Travel Mart in 2020.

We discuss the location of the Vince Hotel Bangkok Pratunam, where the hotel's guests are coming from, how 2019 compares to 2018, what its USPs are, where all the creative ideas come from, why there is so much delicious Thai food on the breakfast buffet when many Thai hotels offer very little, which other events the hotel will attend this year, what guests can expect from the property, what plans they have for 2020 and whether there are plans for any more Vince hotels. Kothu Parotta Roti Restaurant Recipe: Sri Lankan Street Food by Chef Manoj Karnavar at Kalpa, London

✓ We're really quite exited because we're finally getting to visit a restaurant that opened relatively recently last year and has had a lot of great reviews .

The restaurant is run by chef Patron Manoj Karnavar who has worked in world class, leading high end five star hotels in India, Dubai and the UK, hotel restaurants such as Marriot, Fairmont, Savoy, Claridges, Mandarin Oriental in Hyde Park and has been fortunate enough to have worked alongside top Michelin starred chefs.

Even more excited because in this video chef Manoj shares his recipe secrets for making a vegetarian kothu roti.

Kothu Roti is a Sri Lankan street food dish made with vegetables (or meat or chicken) + egg (optional) & spices.

It is traditionally made with left over curries and vegetables; but in this restaurant's recipe everything used is freshly made.

This popular treat can be found in almost all parts of Sri Lanka and is generally eaten for lunch or dinner.

Kothu is traditionally made on a heated iron griddle; the cutting and mixing of the Kothu is done using two metal blades........which makes a very familiar sound on the streets of Sri Lanka..........the distinctive sizzling sounds (+ the chop, chopping sounds) emanating from the hot plate of Kottu being prepared can be heard coming from many of the roadside restaurants or street food stalls.


INGREDIENTS REQUIRED (you can adjust the quantity according to taste & requirements) :

* Rapeseed Oil.
* Salt.
* Ground Black Pepper.
* Ground Roasted Red Chilli Powder.
* Freshly Sliced Cabbage.
* Freshly Sliced Carrots.
* Vegetable Korma (Beans, Potato, Carrots, Onion).
* Green Chillies.
* Sliced White Onion.
* Tomatoes.
* Green Coriander.
* Egg (optional)

Sri Lankan Spice Mix (Garam Masala):
* Cardamom.
* Cloves.
* Cinnamon.
* Fennel Seeds.
* Freshly made Paratha.

Everything should be quickly cooked (& chopped) on a high heat and once cooked the vegetables should still be juicy, crispy and crunchy.

It should ideally be served with a vegetable korma + a tomato & onion raita.

Chef Manoj was born into a farming family, (they didn't have a fridge or freezer) so the family were always used to using fresh ingredients in their kitchen. He first learnt cooking from his mother and grandmother at home.

Asking himself and thinking what is the best food in the world? and what makes certain people live to 80 or 100 years old? all the clues were pointing to having a correct diet; he used the knowledge from his learning experience and incorporated that into his style of cooking i.e. creating good indian food with real honest passion, and good quality ingredients, no artificial colours or preservatives, and using healthy oils

The flight was very pleasant, the comfort of the long haul business class seat is OK and it has moderate privacy from other passengers.

Air Berlin's business class cabins are fairly small which makes for great service. The flight was very choppy for most of the night meaning no sleep for me this time around.
