What’s to eat?
Perfectly grilled corn-on-the-cob, the best moong dal dosas in town, Korean burritos, vegan Ethiopian, craft beers, interesting cocktails, cake, ice cream, great coffee... in other words, LOADS! Bread Tree make bruschetta the way families in Italy have done for centuries, no short cuts. They use bread made in a small bakery in Sicily, and offer vegan and wheat-free options too! Seasonings and toppings are all sourced in Calabria, such as pickled aubergines, sundried tomatoes, pesto Calabrese, sundried tomato paste and nduja.
Also on the menu are piadina, the delicious Italian flatbread sandwich. Go for the traditional parma ham or check out one of the veggie or vegan options, all served with sauces that come from southern Italy.
Cristian’s family is originally from Calabria, where his grandfather was a producer of wine and olive oil. Rebecca, originally from Taiwan, also comes from a country where people are very passionate about great food, and she has contributed to Bread Tree her dedication to healthy ingredients. Tea, Bread & Brownie brings a wide selection of teas, real Belgian hot chocolate and chai latte to serve at the market, as well as retail teas to take home and brew.
Also check out their range of Flour Station sourdough breads, pastries and sweet and savoury treats including cheese straws, savoury muffins, brownies, cream teas, and more, all of which have been freshly baked.
As well as buying teas to take home, you can enjoy a hot cup of tea to go. If the weather’s hot, why not try their range of ice teas and iced chai latte all summer. The Polish Deli London offers a wide range of delicious and authentic Polish food. Sample traditionally madepork smoked sausages served with salad and pickles in a baguette, or with roasted baby potatoes, cured meats, Polish draught beer and, in winter, sauerkraut stew, made with smoked pork sausage. When Will and Kerry hand you your gourmet burger, you’re getting it from the hands of the same people who raised the cows and grew the wheat and grass they feasted on. The beef is hung on the bone for three weeks, then they seam cut the beef (a continental style of butchery which cuts around the muscles rather than slicing straight through them). They bind the burgers with their own free range eggs.
And if that is not enough for you, pop a couple of their steaks in your bag to take home.

How to brew a perfect cup of tea with loose tea, by Tea Taster Dominic Marriot
We have gone to a lot of effort to source high quality teas and it is really important, that you make the tea properly, to allow the flavour to come out.
The first thing is that you should warm the teapot with hot water. This means that when you actually come to brew the tea, the cold teapot won’t cool the water too much, so the tea will then brew properly. So just give that a little swirl around, pour it away. Next you take our tea. We have our tea here in a nice tea caddy,
that’s very important, because to store tea properly, you
need to keep it airtight and away from moisture. You
can add as much tea, as you want, that’s personal
taste. The traditional measurement that we give is one
teaspoon per person, and one extra spoon for the pot.
So, I am going to make the tea for two people here, so
I am going to put in three teaspoonfuls.
The next stage which is very, very important is that when
you use the water for your tea, you use fresh water. If
you use water which you already boiled, a lot of the
oxygen will have come out of it, so it won’t brew
properly and the resulting tea will be very flat. So we
are going to take some fresh water. So here in our tea
tasting room, we have a special tap, which has filters
and softeners on it. It is always better to use filtered
water if possible, because that will remove any
impurities, which will affect the taste of the tea. So let
the water come to a rolling boil. It must reach boiling
point - 100 degree celsius. You don’t want to over-boil
it because, again if it over-boils, a lot of the oxygen will
come out. OK, so the water is just starting to boil now.
Most modern electric kettles tend to actually over boil
the water. So, as soon as this will come up to a right
level, (see it’s just starting to roll now) I am going to
actually switch it off, so it doesn’t over-boil and I am
going to pour that straight onto the tea. And I am also
going to put the tea cosy over the top, just to keep that
as warm as possible.
You really need to give the tea a good amount of time,
to allow the full flavour to come out. The colour will
actually develop quite quickly, but the flavour will take
longer, and we say for loose tea, the minimum time you
must give the tea is 5 minutes.
So now the tea had a good 5 minutes to properly
brew, we are ready to drink it. Next thing we should
do is give it a stir, just to mix it up a little bit. And then,
we can pour it out into the cup. So now, it is really
ready for you to drink – how ever you prefer; just drink
it black like that, or with a touch of milk, lemon or sugar.
That’s really up to you.
So that’s really how to make the perfect cup of loose tea.

There’s a common misconception that making loose leaf tea is really arduous but actually with the right equipment it's incredibly simple and much better for the environment.
Today, I’m going to use our Chelsea teapot. Its made of glass so you can really see what’s going on inside as the tea steeps
I’m going to make our English Rose which is a black tea blend with rose buds.
Now depending what type of tea, you want to make you need to adjust the temperature of the water and the amount of leaf that you use.
Don’t worry, our packaging all has specific instructions on it.
In general, you want to use freshly boiled water for black teas and puerh tea and fruit and herbal infusions.
For white, green and yellow teas you use 80-degree water. They are more delicate and using freshly boiled water will burn the leaf and make the flavour slightly bitter.
Black tea is best with one spoon per person and this teapot is quite big so I’m using two and I’m going to use freshly boiled water.
Again, black tea and fruit and herbal infusions are best with freshly boiled water. The higher temperature pulls out a lot of the colour from the leaf and also flavours that work well with milk if you’re drinking a black tea, so it pulls out polyphenols, caffeine and catechins.
The average steeping time in Britain is 3.5 seconds and that is just not long enough for the really lovely complex flavours of tea to come through. So, you do have to be patient with loose leaf.
You also do not want to squash tea leaves. many people squash the bag against the side of the cup to make it infuse quicker. But this is a terrible thing to do to tea as it pulls out all the tannings and the bitter flavour compounds that you just don’t want in your tea.
One of the major benefits with loose leaf teas when you get a good quality blend is that you can steep it several times.
So black tea and fruit and herbal we recommend one or two steeps but green tea, puerh, oolong tea are all fantastic for three or four.
Now all that’s left is to pour and you’ve got that beautiful infusion. Black tea just gives a little bit longer if you want to add milk but otherwise, this kind of colour is perfect, and you can enjoy your tea

Communal brewery for beer enthusiasts set to open in Manchester
An open brewery is coming to Manchester which is offering anyone the chance to sign up and brew their own beer.
Co-founders Matt Denham, 32, and Wilf Horsfall, 27, are set to launch UBREW, a simple concept in that members essentially rent space and kit and are given expert advice if needed.
The friends were taken aback by the success of their first site in London last year and decided to expand the business with the Manchester site due to open on the Piccadilly Beer Mile in September.
