Growing grapes in Wisconsin is not always the greatest place, or the easiest place, but making ice wine is certainly a reward.

It's a sipping wine meant to be enjoyed with dessert, or as dessert, it is that good. It's extremely concentrated. You have all the evaporation of the water, the freezing of the water, so you have ultimate concentration of flavour. Its almost like honey and maple syrup with some dried fruit, raisins, figs, dried apricot. It's that good, it's that special.

I enjoy being outdoors. I'm an outdoor hunter, so the cold doesn't bother me at all. I'm dressed accordingly. I just enjoy it. And to come out here and pick these little gold nuggets, which turn out, I call it, liquid gold when it's made into ice wine it's just out of this world.

I have a pair of fleece gloves underneath here, because the juice comes out of the little berry, the little grape, and when you get wet, and with this here cold temperature that we're having, you better be prepared.

A day like today it doesn't get any better than that, it's perfect. Temperature, no wind, little snow, eagles flying, turkeys and deer around and some ice wine at lunch, doesn't get any better.

In a couple of days the ice wine will start fermentation, sugar will be transformed into alcohol and within about two months of fermentation, we will end up with ice wine, which will have a high natural sweetness and about 10 or 12 percent alcohol.

But producing this sweet dessert wine isn't always easy - it relies on nature to add the secret ingredient - cold temperatures.
Now some producers are moving to artificial freezing methods to produce a cheaper, more consistent alternative.

Cellar Angels recently caught up with Cliff Oehlman, owner of Sandole Wines in Russian River Valley, Sonoma. Sandole is a family owned, micro winery focused on the finest single vineyard grapes. With a family history of sustainable farming practices dating back to the late 1800's, the ranch battled phylloxera and Prohibition but found their grape resurgence in 1987 with the planting of a new six acre parcel of Pinot Noir. Owners Sandy and Cliff realized their return to this land would ultimately inspire the creativity they needed to craft great wines...and their vision has become reality. The estate's now thriving 14 acres of grapes enjoy the unique climate of Russian River Valley and prestigious Goldridge soils.
Cellar Angels' Featured Wine: 2008 Zinfandel, Russian River Valley, Sonoma:
Perched in the rocky northeastern corner of the valley, the vines enjoy a sunny view of the Russian River Valley. This is an elegant and superbly concentrated Zinfandel exhibiting the briary black fruit, blueberry and ripe strawberry notes typical of the region. A small addition of Petite Sirah rounds out the mid-palate structure, enhancing warm clove and pepper aromas from the mature Zinfandel fruit. Exotic spices and a youthful acidity lead into the creamy oak finish. Enjoy this wine over the next 5-10 years.

Greendance Winery located in Mt. Pleasant, PA opened in September 2007 by three couples who lived within miles of each other. The Lynns, Susan and Rick, and the Schillings, Amy and Rob, produced gourmet small fruits for wholesalers, retailers, restaurants and have even supplied the White House with gooseberries, currants, and golden raspberries for two state dinners. During the final development, the Sand Hill Berries partners discovered Walter and Roxanne Vinoski. The Vinoski family has been making wine and growing grapes for years. Greendance offers over 40 wines, free for tasting every day. On weekends and during special events throughout the summer they also offer a variety of gourmet snack and sandwich options with a few full luncheon dates available. The Nectar Garden and outdoor Cafe are open daily for you to sit, sip, and enjoy.
