A Look at a Long Island Oyster Company
When you order fresh groceries online, how do you know the food you're getting is really fresh, especially when it's seafood?
We went oystering out on Long Island with FreshDirect to find out, visiting Blue Island Oyster Company in West Sayville.
So how fresh are the oysters here? When you order Blue Island Oysters through FreshDirect, you often get oysters that were in the waters off Long Island that very same day.
Dave McInerney, co-founder of FreshDirect, says he is constantly searching to see how close they can get to the actual source. He calls Blue Island Oyster Company the real deal.
Chris Quartuccio founded Blue Island Oyster 20 years ago and now ships nearly 10 million oysters around the country each year.
Blue Island is one of just a few companies on the East Coast that produces its own seed. Oysters start in the hatchery in a unit called the Maternity Ward. After the oysters spawn, the larvae swim around in tanks for a few weeks, and continue to grow, eventually becoming thousands upon thousands of tiny baby oysters. There are full-sized oysters here, too.
Besides hatching, Blue Island also brings in oysters from all over North America, and as far away as New Zealand. One of their most famous oysters is the Naked Cowboy, named for the Naked Cowboy in Times Square. It is a wild oyster pulled straight from the Long Island Sound.
Quartuccio was walking through Times Square when he saw the guitar-playing cowboy and came up with the idea. He says he was looking for a name that would really connect people to New York.
All incoming oysters, including Naked Cowboys, are processed at the facility in West Sayville. Before going out, they need to be graded, sorted, counted and washed.
There's saltwater storage for oysters and steamers, and cold storage for bagged oysters, too.
There's also the Blue Island Oyster farm out on the Great South Bay where baby oysters hang out until they are fully grown. Quartuccio took over an old bait station in the bay and turned it into the farm in 2005. He leases a four acre cove from the Town of Islip to grow his oysters to market size, which takes about 18 months.
Chuck Westfall, one of Blue Island's oyster farmers, says they harvest 2 to 3 days a week. On a good week, they bring in about 10,000 oysters -- all fresh, briny, and delicious.
