China has always been synonymous with tea - just as in the saying not for all the tea in China.

But the flood of Western culture pouring into China over two decades of economic growth has brought a decline in traditional habits, including tea drinking.

Now, though, it seems many Chinese have had enough of all the new imports - they want to get back to their roots.

It's a performance that has been repeated thousands of times, over hundreds of years.

Before they had T-V and Karaoke, the Chinese had teahouses.

Grouped around fragrant cups with names like Eight Treasures and Dragon Well, they would while away the hours as performers crooned and somersaulted on stage.

Times have changed.

Chinese youth flock to discos where they drink imported whisky and cognac.

Friends meet for a meal and wash it down with foreign beer.

And for many people, eating out now means fast food like McDonald's

Chinese children seem to like tea about as much as they'd like to get an injection at the dentist's.

But a number of new teahouses in Beijing are fighting this rising tide of burgers and colas - and with some success.

Come into the Purple Vine Teahouse near the West gate of the Forbidden City of Beijing and leave modern China outside.

Waitresses teach newcomers the rituals necessary to get the essence out of each cup.

Pouring - rubbing - smelling.

Every step must be done just so.

The owner says his teahouse provides not only refreshment, but therapy as well.

The social structure in China has changed a lot. People need more places and ways to recuperate from today's lifestyle. Our tea house provides good tea, good water and good service. It is a place of recuperation.

Along with a renewed interest in tea drinking has come an increasing willingness to spend large sums of money buying the aromatic leaves.

An exhibition this summer in Beijing featured twenty-year-old teas priced as high as two-hundred and fifty U-S dollars for just over one hundred grams.

With a growing middle class and more disposable income, many Chinese now take their tea just as seriously as French people take their wine.

The revival in tea drinking is starting to compensate for the damage tea culture suffered during China's Cultural Revolution, when many tea houses were shut down for being too old-fashioned and bourgeois.

But there is a long way to go, as the revolution and the invasion of Western culture combined have led to a fifty per cent in tea consumption in recent decades.

And much of the blame lies with the young generation.

Chinese tea culture has been on the decline since the Cultural Revolution started. Now few people know the advantages of drinking tea. Tea can make people quiet and calm. Older people know and appreciate this, they have been around long enough. But today's young people are very impetuous, they don't understand the benefits of tea drinking.

Such a gloomy assessment may not be entirely warranted however.

With new teahouses opening and both tea consumption and production rising, it's too soon to talk about the end of a tradition which has lasted five thousand years.

Tea purveyors are promoting their wares which they claim have a healthy effect on consumers.
