Saffron
Saffron can be tasted in recipes throughout this region, including right here at Le Pietre Vive. Besides the beautiful colour saffron adds to your food, it provides several health benefits, including boosting the immune system, improving circulation, and relieving anxiety.
Honey
It’s no secret now that bees are under threat, but at Le Pietre Vive the family is doing their part to help these marvellous little creatures, and you can too. The family tends hives on the property, named Le Api di Gioia, or Joy’s Bees, and are doing their part to ensure these precious insects continue to thrive.
Truffles
Truffles cannot be cultivated, and annual production is determined by the weather – if truffles are scarce, they can cost a small fortune, but if the yield is good, you can afford to indulge. Ideal growing conditions are a cold wet fall that has followed a warm dry summer – let’s hope this will be a good year, because freshly shaved truffles on some pasta, a steak, or yes, even gelato, truly is the stuff of the gods!
Restaurant
If you're looking for an authentic Tuscan dining experience, you've come to the right place. At Le Pietre Vive you'll always find fresh local ingredients and seasonal recipes. The pecorino comes from the farm next door - why not have some as an antipasto with honey produced by the bees of Le Pietre Vive? All the cheeses on the menu come from just steps away. You'll find 'zafferano' and 'tartufo' in multiple menu items too. This saffron is cultivated here, and makes a nice addition to typical Tuscan dishes such as pici, those long thick noodles, here served with leeks and rigatino, a flavourful Tuscan bacon. Tartufi, or truffles, are all found here too - and you're more than welcome to sign up for a truffle hunt to ensure there are always more in the kitchen! Hungry for more pasta? Homemade gnocchi with sun-dried tomatoes and anchovies and rocket pesto might just be your thing. Incredibly, all the pasta served here is made by hand in-house!
We've all heard of the bistecca alla fiorentina, that wonderful T-bone steak seared to perfection. The tagliata, or sliced steak, will also surely satisfy meat lovers. Remember, here the meat is served rare, and personally, I wouldn't have it any other way! Or how about pigeon? Yes, pigeon, as local a dish as they come. If you like dark meat, I guarantee you'll love this. The pork, as with all the meat products, is from a local butcher. Try it with a reduction of Vernaccia, the famous white wine from San Gimignano, and fennel.
Surely you'll leave room for dessert? Again, everything is made here from scratch with only the finest local ingredients. And accompanying all of these dishes, Le Pietre Vive offers a wonderful selection of Tuscan wines, all from local producers who have become dear friends over the years. Buon appetito!
Wines
All of the wines at Le Pietre Vive are carefully selected from local producers, some less than a kilometer away! You've all heard of Chianti, the region where the wine of the same name is produced. Here we have Chiantis from the Sienese hills as well as the Chianti Classico, which is made from the San Giovese grape. You may also taste the highly regarded Nobile di Montepulciano, and that king of wines, the Brunello di Montalcino. If you prefer white, there is always a selection of local blends plus the Vernaccia of San Gimignano. If you're not sure which wine will go best with your meal, the wait staff is more than happy to recommend a bottle for you. After your meal, a nice (and strong!) grappa will be the perfect way to end the evening.
