One of the largest in Europe, Genoa's historic centre unwinds in an intricate maze of alleyways (caruggi) that open unexpectedly onto small squares; the soul of the city lives here in these alleyways, where smells, tastes, and cultures have combined throughout history.
In these narrow spaces, tucked away between the hills and the sea, the pride of wealthy Genoese merchants, indomitable leaders of the Republic, had beautiful mansions built, in which works of art have been collected and preserved for centuries and are visible to this day in several house-museums.
In this dense urban landscape, where the windows are so close they almost touch, architectural styles are layered over one another, with a medieval wall serving as the base of a 14th-century building and Gothic loggias becoming trendy bars: this is a place where the past forms the foundations of the present.
In the centre, where time seems to have stood still, noble palaces and splendid churches alternate with historic shops that have been in operation for over 100 years, where local specialities are still prepared according to ancient recipes and handmade objects are crafted with timeless skill.
Italy, a European country with a long Mediterranean coastline, has left a powerful mark on Western culture and cuisine. Its capital, Rome, is home to the Vatican as well as landmark art and ancient ruins. Other major cities include Florence, with Renaissance masterpieces such as Michelangelo’s David and Brunelleschi's Duomo; Venice, the city of canals; and Milan, Italy’s fashion capital.

How to eat great (like in Italy)
Nowhere in Europe is the dining experience as sensual and fulfilling as in Italy. Not even in France and nowhere else by a long shot.
It is not the recipes, though that helps. Rather, it is an attitude about ingredients and methods, on the part of the cook. But just as important is the attitude of the consumer, the diner. An Italian diner is extremely discriminating and insists that *eating is not fuelling*: it is a pleasure and a communion (with the cook, the fellow diners, the seasons, the products, the locality, the climate, the ambiance).
And it is a participatory experience: the Italian diner does not receive a dish as a benediction from a high priest of the temple of gastronomy. Rather, the Italian dinner *expects* great food as a fundamental human right. So his approval of the dish *counts* to the cook: it is not just gratitude; it is an acknowledgement of the cook's skill.
And that makes all the difference.
(This attitude also still exists in Japan. It is, unfortunately, almost dead in France).

The approach to our cooking classes is to provide story telling about Genova and Liguria expressed through the traditional recipes of this land.
Guests are given a homemade pasta experience with an authentic, Genovese pasta Chef.
This cooking class becomes a game in which the guests are involved in discovering with their “mani in pasta”, (hands in pasta), the secrets of a traditional cuisine. Some of our traditional dishes consist of trofie al pesto or pansoti with salsa di noci (stuffed pasta with a creamy walnut sauce).

Likes its windows, in painted trompe l’oeil or wide open to the world, the birthplace of Niccolò Paganini and Christopher Columbus remains a city of artists and sailors, nostalgic for the era when it dominated the high seas.
The best way to see Genoa, a “vertical city” of nearly 600,000 inhabitants, wedged between mountains that encircle the shorefront like an amphitheatre, for the first time is to arrive by boat. In the foreground lies the port whose Lego-like containers are piled high around a forest of factories, silos and cranes; the background is made up of colourful houses clinging to the countryside strewn in haphazard heaps as if by a child playing with building blocks.

Palermo is considered Sicily's cultural, economic and tourism capital. It's known for its rich history, culture, art, and music. More importantly for our visit Palermo is known for food! Today we are going to dig into Palermo's street food with a foodie style walking tour. We booked the Palermo street food walking tour with the super nice folks at Streaty. The tour is about 3 hours and explores the local markets of Capo and Vucciria and all kinds of cool things along the way. The first order of business is finding our way from the Meraviglia to the Teatro Massimo where we'll meet up with our guide, Angelo. It was about a 15 minute walk from the port, and we only had to ask for directions one time. Shortly after finding Angelo, he gave us our Streaty Palermo Food Passport, and we were off on our culinary adventure. We made our way through the streets of Palermo stopping at beautiful markets with amazing fruits and vegetables. Along the way, Angelo entertained us with interesting non-touristy details about the city's history, culture, food and more. There were many food filled stops on the tour, but a few of the notable food highlights include arancini, pane con la milza (pani cà meusa), and of course cannoli with ricotta cream. The tour finishes up at ends in piazza San Domenico with a stop for sweet dessert. This was truly a beautiful day, and great excursion. We recommend this tour for adventurous eaters, foodies, or anyone that just wants to have fun and explore Palermo.
