Went Shark fishing on a party boat (The Orlando Princess) in Port Canaveral FL at night. It was a really nice trip quite an adventure as a partial belated birthday present, Loved every minute of it. The ride out to the fishing spot was quite nice, the view off the boat of the ocean was great the smell of the ocean air was calming. The fishing was great. The people next to us were friendly, hot food, cold drinks. Got to be on the water at night. Someone a few feet away caught a Hammerhead Shark or was so cool!

A peaceful encounter. I was on a 22ft boat with my friend Eric Mailander, an avid wildlife photographer. We had spotted at least 9 white sharks that day, in an area where it is not uncommon to see that many individuals. Some of the sharks were curious and would approach my GoPro when I put it in the water! These sharks may have a menacing grin, but they don't deserve their bad reputation - they were actually quite tranquil and calm throughout the day. I lucked out to have this curious creature give me such a great close-up.

Offshore Bottom Fishing on the Majesty party boat in Jacksonville, FL
Went fishing aboard the Majesty fishing boat and did a little offshore bottom fishing! Had a blast! Caught amberjacks, almaco jacks, red snapper, bonito, vermillion snapper, seabass, and a banded rudderfish. Cigar Minnows bought at C&H Lures did the trick! How to Make Strawberry and Pecan Salad with Honey Dressing

Yield 4 Servings
Ingredients
1 cup Florida strawberries, rinsed, dried, hulled and sliced
1 ripe Florida avocado, sliced
3 cups salad greens (arugula, romaine, leaf lettuce)
1/2 cup Florida pecans, toasted
2 tablespoons olive oil
2 teaspoons natural Florida sugar
4 teaspoons Florida honey (tupelo, orange blossom)
1 tablespoon cider vinegar
Juice from 1/2 lemon
Kosher salt and fresh ground pepper to taste
Preparation
In a small bowl, whisk together sugar, olive oil, honey, vinegar and lemon juice. Taste vinaigrette for seasoning and adjust with salt and pepper. Arrange the salad greens in a serving bowl or on individual plates and add slices of avocado and strawberries on top. Lightly drizzle dressing to taste and then top with toasted pecans. Serve as soon as salad is complete.

Beekeeping is a year round hobby. Tupelo honey is only collected for a few weeks in the spring each year.
