Breakfast Fried Apples
I USED APPLE JUICE, NOT ORANGE JUCIE
Breakfast Fried Apples
Fried apples are the essence of apple pie, except somehow better. The butter and sugars form a caramelized syrup as the apples cook. Be sure to drizzle it over the apples before serving.
Ingredients
3 whole Large Cooking Apples-- Granny Smith, Fuji Or Rome Beauty Recommended
2 tablespoons Apple Juice
2 Tablespoons White Granulated Sugar
2 Tablespoons Packed Brown Sugar
½ teaspoons Cinnamon
¼ teaspoons Nutmeg
¼ teaspoons Ginger
4 Tablespoons Real Butter
Peel, quarter and core apples. Slice into generous 1/4-inch slices. Place apple slices in a large mixing bowl and sprinkle with apple juice. Toss to coat.
In a small bowl, mix together white sugar, brown sugar, cinnamon, nutmeg and ginger. Pour over the apples and stir to coat the apples well.
In a large, hot frying pan over medium heat (cast iron works very well) melt the butter. Add the apples to the frying pan. Be sure to include any liquid that my have rendered in the apple bowl. Stir well to coat the apples. Cover pan and turn heat to medium low or low.
Cook apples for 10-15 minutes until fork tender, stirring as needed. A syrup will form in the bottom of the pan as the apples cook. When serving the apples, be sure to pour the syrup over them.
Notes: The peelings may be left on the apples, if desired. It is important to use cooking/baking apples for this dish, such as Granny Smith, Fuji or Rome Beauty. They hold their shape well and will not get mushy when cooked.

Shakshuka - Eggs in Tomato Sauce Recipe
Shaskshuka - Eggs are poached in a delicious tomato sauce, very easy to prepare, healthy, comforting, flavorful, wonderful colors, definitely a must try recipe. It is usually served for breakfast, though I think it’s perfect for brunch on lazy weekends. This dish is best served right away after cooking alongside some crusty bread or pita.
To print the recipe check the full recipe on my blog:
Ingredients
Makes about 4-6 servings
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 medium red bell pepper, chopped
2 cans (14 oz.- 400g each) diced tomatoes
2 tbsp (30g) tomato paste
1 tsp chili powder
1 tsp ground cumin
1 tsp paprika
chili flakes, to taste
1 tsp sugar
salt and freshly ground black pepper
6 eggs
fresh parsley/cilantro for garnish
1. Heat olive oil in a 12 inch (30cm) frying pan over medium heat.Add onion and cook for about 5 minutes until the onion begins to soften. Stir in garlic.
2. Add red bell pepper and continue to cook for 5-7 minutes over medium heat until softened
3. Stir in tomato paste and diced tomatoes and add all the spices and sugar. Season with salt and pepper and allow to simmer over medium heat for 10-15 minutes until it starts to reduce. BEST SHAKSHOUKA: Eggs, Cauliflower, Cooked in Tomatoes
MIDDLE EASTERN/ITALIAN BREAKFAST:
SHAKSHOUKA- Eggs cooked in tomatoes, and spices
=======================================
Poached Eggs with spices to be exact.
And with Influences from Palestine and Italy as well.
Yet its origins are truly unknown.
Why?
It's just too simple of a dish!
Common Sense kinda dish.
Only a few ingredients is all it is.
Many claim this dish, even in Modern Jewish Tunisians of the times.
But this is not true. There is no written record of it.
As first we need to see a little history.
The Tomato History.
Invented by the Aztecs of Mexico.
So it wasn't until the New World was discovered the Tomato started to live in the Old World.
Italy at the time had Spain and Columbus to thank.
But in 1544 Pietro Andrea Mattioli would speak of the Tomato and its use in Italy.
Even that it looked like a new eggplant, can be eaten with salt and pepper.
Prepared in many ways.
It is the oldest record we have in writing, let alone oral traditions.
And even with eggs in Italy at the time, would have made this even the oldest version of this dish.
The connection of Roman Italy to Palestine has a very long, long history.
Since about 70BCE.
But now since the New World we had the Tomato come to the Holy Lands as well.
Italy and the Holy Lands, makes the Middle East of the Levant to be an ideal first place for this dish.
Thus the first connection is even more pliable.
And at that time, was 99% Palestinians, as those of today.
Not to Mention the Chicken from 7000 Years ago coming in from the Silk Roads of Asia. Harappan, and Mesopotamia later.
Our recipe extends from Capri region of Italy and a little of the Original Palestinian and Gulf State versions, but with more added.
Original Pali version being=Stewed Tomatoes, Few Crushed Garlic Cloves, Eggs, Salt, Pepper, Cumin, and Cilantro.
Served as a treat, or on a breakfast brunch menu.
A taste you will want every morning!
Or Lunch!
Note:
You must use onions.
This is a fact!
Shakshuoka can't be called such a name without the minimal use of Onions, and Garlic, and Tomato, and Eggs.
Some even feel Cilantro is a must as well in the original recipe.
Enjoy!
Ingredients:
Handful of small Headlets of Cauliflower (Gulf Recipe version)
2 Tbsps Olive Oil
1 Finely Chopped Onion
4 Large Cloves Garlic Minced
4 Finely Chopped Skinless Tomatoes
3 Tbsps Tomato Sauce
1 Tsp Paprika
1/2 Tsp Pepper
1/4 Tsp Ginger (Gulf Version)
1/2 Tsp Cumin
1 Tsp Salt
5 Eggs
Extra Dash of Salt and Pepper in the End
Note:
This is more a Gulf Version.
Just remove the Gulf entries, and you have the Pali version.
Only 2 Ingredients separate the two.

Health Benefits of Ginger - What is ginger good for?
You may know that ginger is a common ingredient in Asian and Indian cuisine, but did you know that it’s been used for centuries for its healing properties?
Ginger has a long history of health benefits, including relief from nausea, digestive issues and pain.
The most commonly used part of the plant for medicinal purposes is the root or underground stem, known as the rhizome. It can be consumed fresh, powdered, dried as a spice, or used in the form of an oil or as juice.
If you don’t use ginger in your kitchen, here are 8 reasons why you might want to start!
1. Ginger Relieves Digestive Issues
The phenolic compounds in ginger have been shown to help relieve irritation in the gastrointestinal tract.
They help to stimulate saliva and bile production while allowing food and fluids to move through the GI tract more smoothly.
In a study of 24 healthy individuals, taking 1.2 grams of ginger powder before a meal accelerated emptying of the stomach, reducing indigestion by 50%.
2. Ginger Relieves Nausea
Drinking ginger tea or even consuming raw ginger is a common and safe home remedy for nausea, especially during cancer treatment or pregnancy and morning sickness.
A review of 12 studies that included a total of 1,278 pregnant women found that 1.1-1.5 grams of ginger significantly reduced nausea.
3. Ginger Can Relieve Pain
A study conducted at the University of Georgia found that daily ginger supplementation reduced muscle pain by 25%.
Ginger has also been found to reduce pain during menstrual cycles.
Researchers also believe that ginger is effective at reducing the day-to-day progression of muscle pain.
4. Ginger Reduces Inflammation
Osteoarthritis is a common health problem that involves the degeneration of the joints in the body, causing joint pain and stiffness. In a trial of 247 people with osteoarthritis of the knee, those who took ginger extract had less pain and required less pain medication.
5. Ginger May Reduce Risk of Heart Disease
In a recent study involving participants with type 2 diabetes, researchers found that 2 grams of ginger powder each day lowered blood sugar and led to a 10% overall reduction over a period of 12 weeks.
High blood sugar is a major risk factor for heart disease.
With the effects of ginger on blood sugar, your risk of heart disease may be lowered by at leas 10%.
6. Ginger May Lower Cholesterol Levels
A 45-day study involving 85 people with high cholesterol concluded that 3 grams of ginger powder each day caused significant reductions in cholesterol levels.
Researchers believe that ginger can aid in lowering cholesterol levels and reducing the risk of heart disease.
7. Ginger May Have Anti-Cancer Properties
A substance in ginger known as 6-gingerol has been studied as an alternative treatment for several types of cancer.
Research on this theory is still being conducted, but one study found that 2 grams of ginger extract each day significantly reduced pro-inflammatory signaling molecules in the colon.
8. Ginger May Improve Brain Function
Oxadative stress and chronic inflammation are two factors that can accelerate the aging process, and become a key driver of Alzheimer’s disease and other age-related cognitive impairments.
Some studies suggest that the antioxidants and bioactive compounds in ginger can inhibit inflammatory responses that occur in the brain.
In a study of 60 middle-aged women, ginger extract was shown to improve reaction time and working memory, suggesting that ginger supports brain health in multiple ways.
