Dans cet endroit magnifique, hors du temps, marqué par le silence, l’intime et le spirituel, nous avons fait le choix de la verticalité et de l’élévation. Une fois la porte de la résidence franchie, la simplicité des matériaux de l’entrée – bois massif, mosaïque, verre – produit une forme de sérénité et de calme. De grands panneaux verticaux créent un moucheté de lumière rappelant l’ambiance feutrée des sous-bois.

GET THE PETIT FARCIS – STUFFED PEPPER TOMATOES AND COURGETTES RECIPE:
Hello!
Stuffed Peppers, tomatoes or courgettes are called in French Petit Farcis. It is a typical dish from Nice and Provence: Mediterranean vegetables stuffed and cooked in the oven.
GET THE WRITTEN RECIPE:
For the filling
300 gr mincemeat
300 gr sausage
2 eggs
1 onion
100 gr 3 1/4 oz stale bread
1/2 cup milk
1 tsp salt
1 tbsp parsley
1 tsp lemon zest
1/2 cup grated Gruyere cheese
The vegetables
8 red peppers or
large tomatoes optional
round courgettes optional
large onions optional
2 tbsp olive oil
Instructions
1. Soften the stale bread with milk and let it rest for 30 minutes if the bread is hard
2. Add the mincemeat, the sausages without the skin and the salt
3. Add salt, the onion, parsley, lemon zest and cheese
Preparing the vegetables
4. Cut the top of the tomatoes
5. Empty the inside of the tomatoes and add it to the meat. This is optional. If you prefer, remove the seeds and add only the juices
6. Cut the top of the round courgettes
7. Remove the seeds, chop the rest and add to the meat
8. Top the pepers and remove the seeds
9. Chop the tops of the peppers and add to the mix
Stuffing
10. Oil a baking dish
11. Arrange the vegetables and add salt
12. Stuff with the mix
13. Cook in a hot oven at 180 C - 350 F for 40 minutes

Nice, France Cours Saleya and Old Town
The old town of Nice, in the south of France, is something very special – not so much because of historic monuments but just the total atmosphere, the environment, the simple walking lanes, the shops and the people. Also look at part 2, night in the Old Town: There are actual locals living here, there are kids out playing, the residents are upstairs looking down from their windows and you really get a feeling of community here, of authenticity, especially in the off-season when it's not too crowded with tourists walking through the lanes – that helps quite a bit. We will point out a nice way to navigate through this labyrinth to get you in and around show you the main highlights. There are a couple of main lanes there is Rue Droite that will take you right through the center of the old town, and then you take a left and walk along Rue de la Boucherie and that'll bring you down to the Place de Palais and then back to Cours Saleya. So it's kind of a round-trip right through the town and feel free to wander up these little side lanes.

We are taking you to Nice along the beautiful shores of the French Riviera. We will walk the little lanes and look at some shops, we will show you the beach, the open market Cours Saleya and bring you on a walking tour through the old town. We will be spending three days in Nice, because there is so much to see in the city and also in the nearby towns along the Côte d'Azur. This is a longer version of three previously uploaded movies.
The south coast of France along the sunny Mediterranean Sea is one of the world’s most beautiful destinations dotted with colorful seaside towns and inland villages. You'll find that Nice makes the perfect home base from which you can easily reach those other destinations like Cannes and Monaco. Nice has got the biggest collection of hotels, it's got a wonderful old town, a very attractive new town, great transportation with the tram and the major train station and just a beautiful place to be.
One of the great street markets of France is located here in the wide Cours Saleya. This plaza features fresh produce and flowers throughout the day and many the stalls are open right into the early evening, except on Mondays when it becomes an antique market and some other used goods peddled by colorful vendors.
Just inland from the Cours Saleya you'll find the Old Town of Nice. For many visitors it will be the highlight of the city, wandering through these narrow pedestrian lanes lined with historic buildings and shops, lots of restaurants, bars, town squares with fountains and statues, a church here and there. It's just a great spot to explore and hang out. The old town consists of narrow labyrinths, not really streets, more of a maze with blocks of shops of every kind along these narrow twisting lanes.

You'll find souvenir shops with the typical Provençal items especially the colorful fabrics and the pottery. There's also lots of food in the stores, go for the cookies maybe. We’re just rolling along together, this is part of our visit to the south of France a small group of us traveling together and sharing in the sites.
We especially enjoyed the local cuisine of this casual restaurant. They specialize in crepes and socca and salads and that's really all you need for a very nice lunch. Creperie Breton.
We're also going to have a look at the very attractive downtown of Nice. We'll take you down the main shopping street, show you some of the side lanes and do a little winetasting.
You'll obviously take time to explore Nice’ s main commercial Street, Avenue Jean Medicin, stretching about 10 blocks from Place Massena north to the train station and packed with many boutiques and anchored at the lower end by the large department store, Galleries Lafayette.
This is the kind of really local and authentic neighborhood that's often overlooked by typical guidebooks and video tours, but this is really part of the heart and soul of Nice. This is where locals hang out, where they go shopping, where they get a bite to eat, go to the café, have a beer, which makes it a good place for shopping and for people-watching.
It's so amazing how these pedestrian streets have transformed the cities of Europe. Just a decade ago these kinds of streets would've been filled with cars and trucks in pollution and noise, and the movement swept through the continent to convert these little streets in the heart of the town into pedestrian malls.
Then we're taking you to an evening viewpoint to watch the sunset along the shore, and then up to the top of Castle Hill for a spectacular view looking down over the town.
To get this view you walk along the east end of the waterfront promenade on the Quais des Etats Unit, and to the end you'll have this rocky outcrop with a terrace, with a commanding view looking back along the pebbly beach of Nice.

Implantée à Nice, la Maison Auer figure parmi les lauréats des Mercures d'Or 2012 qui ont été décernés la semaine dernière à Paris. Interview de Thierry Auer, héritier d'une longue tradition familiale, qui a su faire évoluer cette entreprise, célèbre dans le monde entier pour ses chocolats et ses fruits confits, pour l'adapter aux standards actuels et lui faire prendre aujourd'hui le virage d'Internet. Une rencontre réalisée alors qu'il n'était que nominé pour l'obtention de ce label prestigieux qui va insuffler une énergie puissante à toute son équipe.
Le Noël Provençal de Julie - Les Carnets de Julie
Cette année Julie a décidé de nous faire découvrir les traditions culinaires et festives du Noël provençal. C’est à Nice, sur le fameux marché du cours Saleya - classé marché d’exception - qu’elle retrouve son ami et chef Dominique Le Stanc. Celui-ci a œuvré dans les plus grandes maisons, décroché plusieurs étoiles et a décidé il y a 25 ans de les troquer contre les montagnes niçoises et une petite table située au cœur de Nice.
Pour préparer ce repas de fête, Julie sera accueillie par des amis de Dominique, Eric et Nathalie Barale, dans leur Mas à Vence. Ensemble, ils vont préparer un menu de choix : filets de loup sauce aux agrumes, raviolis aux courges et sauce aux noix. Bagna cauda et huitres affinées sur la côte méditerranéenne viendront compléter le repas, sans oublier les traditionnels 13 desserts provençaux.
Jean-Patrice Mège
Ancien producteur, Jean-Patrice est une des figures les plus célèbres du cours Saleya. Cet ancien producteur vend des fleurs coupées avec son fils Clément. A 10 ans il aidait déjà ses parents sur le marché au lieu d’aller à l’école.
Tony Dalmasso
Tony est pêcheur professionnel au Cap d’Antibes. Ce passionné, qui parcourt le littoral méditerranéen depuis 19 ans, part chaque nuit déposer ses filets afin de vendre dès le matin le fruit de la pêche du jour « au cul du bateau », à même le quai.
Nicolas Canet
Cet artisan « créchiste » créé des pièces uniques. Ses œuvres en argile sont entièrement, modelées et peintes à la main. Nicolas travaille avec les santonniers afin de créer l’histoire et le décor qui s’adapteront parfaitement aux santons.
Sylvain Brevot
Sylvain est devenu cirier après une carrière bien remplie et a repris l’affaire familiale lancée par son beau-père. Après deux ans de formation auprès de ce dernier, dans l’atelier d’Auribeau-sur-Siagne près de Grasse, il a acquis tout l’art de réaliser des bougies artisanales.
Gilles Piot
Gilles a réhabilité il y a 25 ans une oliveraie de 70 hectares sur les hauteurs de Nice. Propriétaire de la maison Nicolas Alziari, il prend soin des arbres de culture et transforme leurs fruits en une huile d’olive délicate grâce au dernier moulin à meule de pierre de Nice.
Robert Luminet
Robert est maitre moulinier et maitrise l’art de la fabrication artisanale et manuelle de l’huile par le pressage à la pierre de basalte et la récupération de l’huile par ajout d’eau.
Brice Cachia
Brice a suivi des études de biologie marine avant de lancer « Watson Aquaculture », une nurserie d’huîtres. Il est accompagné de son associé plongeur en aquaculture, Frédéric Rouxeville.

Biologiste de formation et spécialiste de la reproduction d’animaux marins, Frédéric s’est consacré avec son partenaire, Brice Cachia, à l’affinage des huitres dans le port de Fontvielle, à Monte-Carlo.

Louis est arboriculteur / confiseur, et il fabrique lui-même des confitures, pâtes de coing et nougats avec les fruits et amandes de son propre verger de Luceram. Epaulé par sa femme Manuela, il travaille depuis des années avec le chef Dominique Le Stanc.

Jacqueline et Françoise Risso
Originaires de la région, les sœurs Jacqueline et Françoise ont repris ensemble l’exploitation maraichère de leurs parents à Saint-Laurent-du-Var. Elles travaillent avec Dominique Le Stanc depuis 30 ans. Elles connaissent les traditions du Noël niçois sur le bout des doigts.
Éric et Nathalie Barale
La famille de Nathalie fabrique des pâtes fraiches et raviolis depuis 4 générations. Avec son mari Éric, passionné de gastronomie, ils perpétuent les recettes de l’arrière-grand-père piémontais depuis vingt ans. Le couple travaille main dans la main : dans l’atelier, Éric est à la fabrication des raviolis, et Nathalie est est en boutique pour accueillir et conseiller les gourmands.
Dominique Le Stanc
Dominique, chef cuisinier amoureux de sa région, a troqué il y a de cela quelques années ses deux étoiles obtenues dans les cuisines du Negresco pour un tout petit établissement en plein cœur de Nice, La Merenda. Pas de téléphone, quelques tables seulement, à côté de la minuscule cuisine. Avec les bons produits frais de la région, il pratique une cuisine de terroir.
Dominika Zielinska
Polonaise d’origine, Dominika est arrivée à Nice il y a 15 ans. Historienne de formation, elle a décidé de confectionner son propre pain avec les farines de blés anciens de Rolland Feuillas, émérite paysan-boulanger. Elle fournit aujourd’hui les bonnes tables de Nice, et elle a ouvert son propre fournil dans la cité.

Maison du Japon
