Un classico toscano, il panino con sbriciolona di scarpaccia e melanzane è un piatto goloso da servire per l'aperitivo
Soprattutto se accompagnato da un calice di vino naturalmente dei colli fiorentini
La sbriciolona è un insaccato a base di carne di maiale macinata
Aromatizzata con semi di finocchio e bagnata con vino rosso
Ha un gusto molto caratteristico, si percepisce intensamente il finocchio, pertanto per amarla, dovete apprezzare i semi di questa pianta
È un salume che si presenta con un diametro molto più ampio di quello dei normali salami
Può raggiungere i venti centimetri di diametro, come una mortadella
Poiché in origine la sbriciolona sfruttava le parti meno nobili del maiale
L'uso abbondante del finocchio aiutava a dissimularne le caratteristiche
Allo stesso modo l'aglio, anche se la sua presenza è molto inferiore rispetto al finocchio
Del resto il finocchio ha sempre svolto la funzione di mascherare
Da qui sembra provenire anche il termine 'infinocchiare' come si dice a Firenze
PREPARAZIONE
Per preparare un classico panino con sbriciolona e melanzane arrostite sottolio scegliete solo ingredienti di qualità
Il pane toscano, un salume saporito come la sbriciolona (salume con finocchio)
Prodotta con carni fresche, semi di finocchio, aglio, sale, pepe e vino rosso, e magari un formaggio pecorino stagionato
Tagliate il pane a fette spesse e iniziate a comporre il panino
Affettate la sbriciolona meglio se a mano
Disponendo prima la sbriciolona, poi le melanzane
Per rendere il panino ancora più goloso se piace, aggiungete del formaggio primo di chiuderlo
Servite il panino con sbriciolona di scarpaccia e melanzane, suddividendolo in due parti
Questo piatto è perfetto per un giro nel centro storico oppure per l'aperitivo, accompagnatelo con un bicchiere di vino

Gavi, made solely from cortese grapes, was initially crafted by winemakers in the 1600s to serve at fish restaurants along the nearby Ligurian coast.
Tasting notes: Spring picnic afternoons. Vivid aromas of pineapple and tangy green apple. Lovely balancing act between juicy ripe pear notes and bright acidity. Clean delicate finish.
Pairs well with: Robusto cheese, spicy jerk chicken, curry veggie kabobs, garlic-seared scallops
Calici di Stelle 2013 a Copertino sulle note de La Traviata
Il celebre brindisi de La Traviata ha segnato il clou del secondo appuntamento con Calici di Stelle, evento che, dopo l'anteprima nazionale di martedì scorso a Trani, ha fatto tappa nel Salento, a Copertino, registrando un altro straordinario successo. Allo scoccare della mezzanotte, sommeliers, turisti e appassionati hanno innalzato i calici celebrando la bontà dei vini e degli oli di Puglia avvolti dalla magia delle stelle cadenti.
Due serate ricche di emozioni, divertimento e cultura realizzate dal Movimento Turismo del Vino Puglia: oltre 60.000 visitatori hanno affollato i centri storici delle due località, con circa 7.000 bottiglie stappate di 50 aziende per due appuntamenti dedicati alla degustazione dei vini e degli oli extravergine d'oliva di Puglia.
Filrouge diquestaedizione è stato l'omaggio a GiuseppeVerdi, dicuiricorre quest'anno ilbicentenariodellanascita. AncheilMovimentoTurismodelVinoPuglia ha celebrato questoeventodiportatamondiale dedicando spazi di cultura e musica all'artedelgeniodiBusseto.
Per quanto riguarda il programma artistico, in entrambe le città si è esibita la compagnia Puglia Wine Love, band di musica folkloristica che ha proposto un repertorio ispirato alla musica tradizionale pugliese accompagnato da ballerine di danze popolari e dalla soprano Paola Pennacchia. A Trani, nella cornice della Osteria del Trani si è svolto lo spettacolo Ogni parola è musica, a cura del musicista e cantante Pino Ingrosso. A Copertino, il maestoso Castello angioino si è animato con il percorso itinerante che ha guidato i winelovers alla scoperta dei vitigni autoctoni di Puglia, culminando nella mostra di radio d'epoca e nello spettacolo Grammofoni in concerto, a cura del Museo delle Radio d'Epoca di Verona.
La partecipazione del museo di Verona è stata il vero valore aggiunto della serata offrendo la rara opportunità di godere dell'incanto di 12 grammofoni dei primi del Novecento, meravigliosi pezzi d'epoca perfettamente conservati, azionati a mano per diffondere le note delle più famose arie verdiane ispirate al vino. Oltre al pregio dei pezzi esposti, la manifestazione è stata impreziosita dall'utilizzo di dischi originali dell'epoca in gommalacca e carbone. Record di visite al Castello, dunque, con oltre 2.000 ingressi registrati.
Anche quest'anno sono stati molto apprezzati gli angoli di degustazione guidata dedicati al Moscato di Trani Doc e al Copertino Doc, denominazioni che caratterizzano i due territori e simboleggiano il crescente prestigio conquistato dai vini di Puglia in Italia e all'estero.
Inoltre, l'iniziativa A prova di naso e la possibilità di ammirare le stelle grazie all'osservatorio astronomico hanno arricchito il menu di una manifestazione che ha coinvolto, appassionato, incuriosito gli avventori, permettendo di scoprire qualche interessante novità o di accostarsi in modo semplice e diretto al magico mondo di Bacco.
Straordinario anche il successo ottenuto dalle visite guidate ai monumenti, eccezionalmente aperti per la serata, che hanno consentito ai tanti turisti giunti in città di scoprire e ammirare le meraviglie storico-artistiche di questi due centri rappresentativi del Nord e Sud della Puglia.
Calici di Stelle si è dunque confermata l'evento di punta del calendario di appuntamenti enogastronomici della Puglia e, soprattutto, un veicolo di visibilità e di sviluppo economico del territorio. A conferma di ciò il tutto esaurito registrato dagli esercizi di ristoro e accoglienza turistica nel corso delle due serate.
La manifestazione, che vede Le Città del Vino partner, è stata realizzata grazie al contributo di: Regione Puglia -- Assessorato alle Risorse Agroalimentari, Città di Trani, Comune di Copertino, Camera di Commercio di Bari, Gal Terre d'Arneo e di 53 vignaioli pugliesi e 4 frantoiani.

Il panorama è unico e ci aiuta a comprendere l’origine del suo nome, le “Lame” infatti sono i terrazzamenti che contraddistinguono questa zona nel cuore del Chianti Classico.
Da vigne autoctone in una terra magica e ricca di storia nasce da sempre un vino pregiato, fatto con amore e passione, Podere Castellinuzza è una piccola azienda agricola dove i vini sono fatti in modo semplice e genuino, ed il rispetto delle antiche tradizione è la filosofia trainante di ogni sua scelta.
Il Chianti Classico Podere Castellinuzza è un un vino ottenuto da un’accurata selezione dei migliori grappoli di uve pregiate. Composto da Sangiovese di Lamole per il 95% e uve a bacca rossa (Canaiolo) per il restante 5%, come previsto dal Disciplinare di produzione del Vino Chianti Classico.
Affinato in vasche di cemento per minimo un anno e mezzo e poi in bottiglia per minimo 4 mesi. Colore rosso rubino luminoso di ottima intensità con lievi sfumature granate, profumo intenso, caratteristico, tipicamente Lamolese, con note di frutti rossi maturi e fiori, ciliegia, lampone, rosa e tabacco, struttura buona, fresco e armonico al gusto, con tannini delicati ben integrati a piacevoli note di frutti rossi di buona persistenza.
Paolo Coccia segue con passione ed amore tutte le fasi di questo antico mestiere, è infatti il vero artefice degli ottimi prodotti che l’azienda Podere Castellinuzza produce. Paolo si definisce “beato fra le donne” perché, oltre alla moglie Luisa che lo accompagna da sempre nella conduzione dell’azienda, le tre figlie Antonella, Serena e Martina apportano con gioia il loro contributo tutto al femminile.
Questa terra e le persone che la vivono rappresentano per il Chianti un valore inestimabile, ed il vino che qui nasce ne è la più limpida espressione.

The view is unique and helps us understand the origin of its name, the Blades in fact are the terraces that characterize this area in the heart of Chianti Classico.
From native vines in a magical land full of history always comes from a fine wine, made with love and passion, Castellinuzza Farm is a small farm where the wines are made in a simple and genuine, and the respect of the ancient tradition is the philosophy driving each of his choice.
The Chianti Classico Podere Castellinuzza is a wine made from a careful selection of the best bunches of fine grapes. It composed of Sangiovese di Lamole for 95% and red grapes (Canaiolo) for the remaining 5%, as expected by the Production Rules of Chianti Classico.
Aged in cement tanks for at least a year and a half and then in the bottle for at least 4 months. Bright ruby red color of good intensity with light garnet hues, intense, characteristic, typically Lamolese, with notes of ripe red fruits and flowers, cherry, raspberry, rose and tobacco, good structure, fresh and harmonious on the palate, with soft tannins well Integrated with pleasant notes of red fruit with good length.
Paolo Coccia follows with passion and love all stages of this ancient craft, is in fact the real author of the excellent products that the company produces Podere Castellinuzza. Paul describes himself as blessed among women because, in addition to his wife Luisa who has always accompanied the management of the company, the three daughters, Antonella, Serena and Martina joyfully make their contribution to all female.

Wines From Italy: Ruffino Orvieto
Gabriele d'Annunzio, Italian poet of the late 1800s, dubbed Orvieto the sun of Italy in a bottle.
Tasting notes: Early evenings on the back porch. Aromas of fresh flowers and citrus. Ripe green apple up front, sassy acidity, characteristic touch of mineral. A long finish, fragrant with almond.
Pairs well with: Piave Oro del Tempo cheese, shrimp scampi, mango spring salad, quiche, egg dishes

Our final day in Rome was spent beating the crowds at Trevi Fountain and the Spanish steps, exploring Trastevere, eating a local Roman snack, and finishing off our Roman gelato tour. We LOVED Rome, but it’s time to head to Florence for the last couple days of our trip!

We welcome our new Italy co-host, Filippo Bartolotta, a native Florentine, wine expert, writer, and travel company owner. This fabulous normal wine guy tells us about himself, about Italian wine culture, and about how to get the best out of Tuscan wine!
The Show Notes:
1. Chianti is hard to recommend by appellation, the producer is more important (heart and land).
Still, the best areas for Sangiovese are on the northern slopes. Areas between Florence and Siena like: Castelnuovo Berardenga, Castellina, Gaiole, Radda, Barberino Val d'Elsa, San Casciano are great. Colli Pisane, Colli Fiorentine, Colli Sienese have good wines as well.
2. Classico is a safe bet for an old school Chianti with:
A light color licorice orange peel violet cherry terroir!
3. Chianti Classics a minimum of 80% Sangiovese but can be 100%. It includes native grapes like Colorino or Canaiolo, and Merlot, Cabernet, and Syrah in small proportions.
4. Classico also has a Riserva tier (aged a min of 24 months with a minimum of 12.5% alcohol to guarantee the fruit is ripe), and Gran Selezione (aged 30 months in barrel, 13% alcohol minimum).

Major Italian White Wines
Asti: Sparkling wine, deliciously sweet, low in alcohol, with pronounced fruity and floral flavors. Usually non-vintage, but freshness and youth are essential to its quality.
Frascati: Dry or slightly off-dry, light-bodied, and un-oaked with crisp acidity and subdued flavor.
Gavi: Dry, medium-bodied wine. Typically crisp and un-oaked (sometimes slightly oaky) with delicate notes of honey, apples, and minerals.
Orvieto: A generally medium-bodied wine. Dry, crisp, with flavors of pear and apple and a pleasantly bitter finish.
Pinot Grigio: Generally light-bodied, dry, and crisp, with subdued aromas and flavors and no oakiness. Made from Pinot Gris grapes, usually in Northeastern Italy. Wines from Collio or Alto-Adige DOCs are usually the best.
Soave: Generally dry, crisp, un-oaked, and light- or medium-bodied, with flavors of pear, apple, or peach.
Verdicchio: Dry, medium-bodied, crisp white with minerally flavor and a sea-air freshness.
Major Italian Red Wines
Amarone: Lusty, full bodied wine from partially dried Corvina grapes, in the Veneto region. Dry and firm wine, but it's ripe, concentrated fruitiness suggests sweetness. Needs rich, savory foods or flavorful cheeses.
Barbaresco: Similar to Barolo, from the same grape in a nearby area, but generally a tad tighter in body and slightly more approachable. Drinks best at 8 to 15 years of age, depending on the producer.
Barbera: Varietal wine produced mainly in the Piedmont region. Dry, light- or medium-bodied, with intense berry flavor, mouth-watering acidity, and little tannin. Particularly versatile with food. Many of the best wines are from the Alba or Asti zones.
Barolo: Dry, full-bodied, magisterial wine. Has complex aromas and flavors of strawberries, tar, herbs, and earth, as well as a firm, tannic structure. Drinks best at 10 to 20 years, depending on the producer.
Brunello di Montalcino: Full-bodied, intense, concentrated wine. Dry and quite tannic, it drinks best when it's at least 15 years old.
Chianti: Very dry, medium-bodied, moderately tannic wine with lovely tart-cherry flavor, mainly from Sangiovese grapes grown in the Chianti area of Tuscany. Chianti Classico is often the best.
Lambrusco: Most commonly a sweet, fizzy wine with delicious, grapey flavors. Dry and sparkling styles also exist.
Montepulciano d'Abruzzo: Generally medium-bodied and flavorful with red fruits and a slightly vegetal note. Lighter examples are smooth and easy to drink; the best wines are concentrated and denser in texture.
Salice Salentino: Dry, full-bodied. Generally have somewhat intense aromas and flavors of ripe, plummy, baked fruit, and rich, dense texture. Suitable with robust foods.
Valpolicella: Medium-bodied wine. Dry, lean, and only moderately tannic, with more or less intense cherry aromas and flavors. Some versions, such as single-vineyard wines are particularly good.
Vino Nobile di Montepulciano: Medium-bodied, dry, and lean, with red cherry flavor, similar to Chianti but slightly fuller.
What you Need to know about Solaia - Super-Tuscan Wine by Marchesi Antinori

Producer notes about Solaia:
The sunniest part of the Tignanello estate’s hillside is home to the Solaia vineyard. The very best grapes from the very best vineyard. All the rest is passion, the utmost care and research. These are the secrets of Solaia together with the finest Cabernet Sauvignon, Cabernet Franc and Sangiovese grapes from its namesake vineyard.
The Tenuta Tignanello estate is in the heart of Chianti Classico, in the gently rolling hillsides between the Greve and Pesa river valleys. It extends over an area of 319 hectares (788 acres), of which 127 (313 acres) are dedicated to vines.
Two of the estate’s prized vineyards are on the same hillside, Tignanello and Solaia, on soils that originated from marine marlstone from the Pliocene period rich in limestone and schist. The vines enjoy hot temperatures during the day and cooler evenings throughout the growing season.
The estate’s two signature wines, Solaia and Tignanello, are produced from these vineyards and have been defined by the international press as “among the most influential wines in the history of Italian viticulture”. According to Marchesi Antinori, Solaia and Tignanello are an ongoing challenge and a never-ending passion.
The Tignanello estate has vineyards of indigenous Sangiovese grapes as well as some other untraditional varieties such as Cabernet Franc.
Soils originating in the Pliocene period, rich in marine fossils with veins of clay. Rich presence of calcareous rocks and marl.

Poggiotondo, un vino “contemporaneo”
Durante Food & Wine in Progress, svolto alla Stazione Leopolda di Firenze, 2 amici Luca Barelli e Carlotta Andrea Buracchi mi presentano un “artista produttore” che mi invita ad assaggiare i suoi vini, è Lorenzo Massart.
Il Poggiotondo 2010, è sicuramente il vino che cattura la mia attenzione, rotondo e ben strutturato un vino da tutto pasto, prodotto ancora come tradizione.
“Posso definirlo un vino contemporaneo” – mi racconta Lorenzo Massart –“Sangiovese e Canaiolo che vive e matura in vasche di cemento, non vede legno.”
Con l’avvento dell’acciaio, le vasche di cemento sono state abbandonate da gran parte dei produttori, nessuno credeva più a questa tipologia di produzione.
“Io sono molto coraggioso” - continua Lorenzo Massart – “ho continuato a produrre il mio vino in vasche di cemento ed oggi rispetto ad all’ora è il vino considerato migliore della mia azienda.”
L’invito per tutti è ad assaggiare questo vino della tradizione, dal carattere deciso, come la gente del Casentino, la vallata dove nasce il Poggiotondo
Cooking Italian Pasta at Home in Florence, Italy
Come join as at home from our apartment in Florence, Italy as we're cooking Italian pasta for dinner for our entire family gathering all of the ingredients from the central market in Florence and doing the preparation for the meal in our airbnb. We headed over to the Central Market in Florence to grab ingredients such as parmigiano reggiano, hand-cut ravioli, pesto sauce, ravioli, vegetables and wine. Upon bringing it all home we cooked it up and made a meal out of it adding a few of our unique twists that are certainly not Italian. Eating in our airbnb is what we actually do more often than not so we thought we'd show that side of our lives on the road. What kind of dishes do you prepare when you travel?

Cooking Italian Pasta at home in Florence, Italy from market to plate Travel Food Video Transcript:
Hey guys this is a bit of an exciting video for us to make because normally when we do food videos we take you into a restaurant and we show our meal there. But today we're actually going to be doing a little cooking. Believe it or not.
We've been in Italy for a while and actually a typical day for us in our airbnb is actually to make one of our meals at home. Yes. And so we've decided to do that.
What we did earlier on in the day is we went to the Central Market here in Florence and we're going to show you some clips from that. But also so we've gone out and grabbed a whole bunch of different ingredients. We got things like pesto and we got fresh ravioli and wine and cheeses and meats.
All these things ingredients that we're going to use to cook our meal. And now that we're back home we are just going to be going in the kitchen and showing all of that preparation.
We are in the kitchen and we are starting all of the chopping of the vegetables. Basically what we're making is ravioli with ricotta and spinach and we're going to be using the fresh pesto which smells amazing.
We've got some mushrooms, zucchini, eggplant, red pepper, garlic. We have some meat. We're going to chop all of this up and cook it in a different sauce. Kind of like as a side dish.
Calabrese. It is also a different pesto made with red pepper.
So yeah we're going to be combining. Well not combining them. The green pesto for the pasta. The red pesto for the vegetables.
This is the real deal. And you can even see the name. This is like from a real cheese wheel. Parmigiano Reggiano. And I should mention that we're not putting all of that cheese on it.
It is time for the plating of the meal. Our meal is ready. Followed by the eating.
So we got something called bombinos. Bombinos which means little boy. Little boys. So these are basically they look like buns stuffed with chocolate and custard. Also they've obviously been dusted with icing sugar.
Look at mine. Oozing stuffed with chocolate. Let's give them a shot.
I'm going to try and bite in the middle here.
Okay guys so that is a wrap for our home cooked meal. I mean kind of that was already pre-made. Yeah a lot of was premade. Obviously the pesto sauce. Obviously the ravioli but we added a little bit of our own personal touch. And it is just nice to be eating at home with family and to show you guys kind of what a normal meal at an airbnb looks like because this is honestly what we do often.
And um it is definitely cheaper than eating out so it is one of the ways we save some money when we travel. So we just thought we'd show that side of that aspect of our travels. But we have more food adventures planned. Yes. Tomorrow we're venturing back to the very same market. Yep. And we're actually going to eat there. We're going to the second floor to eat there. So yeah that is the plan. That will probably be the next video coming out. So we'll see you guys there. Ciao.

Soffocone di Vincigliata Bibi Graetz 2012 Igt Toscana
Il celeberrimo vino scandalo di Bibi ha molto da dire anche nel bicchiere. Un vino monovigna fiesolano (appunto la Vigna del Soffocone per la difficoltà di lavorazione) fortemente legato alla città e al Firenze, un vino dolce e intrigante con il sangiovese canaiolo e colorino che stuzzicano il naso e seducono con note di mirtillo, ribes rosso, liquirizia, menta e bergamotto. Bocca con cenni di tannino e qualche lieve scorbuticità che equilibra un sorso pieno e sensuale che termine lungo nel palato con diversi secondi di puro piacere enoico. Un vino da tavola ma anche per conversazioni rilassate e in pace con il mondo.

Sergio di Loreto racconta la storia di Leonia, la storica donna che ha dato nome all'ultimo metodo classico di casa Frescobaldi, una storia che intreccia Italia e Francia fin dal 1855, anno in cui Leonia portò a Pomino chardonnay pinot nero e altre uve francesi. Il suo sogno può dirsi realizzato oggi con questo metodo classico da 32 mesi sui lieviti con una colore intenso e ammaliante, un naso ricco di sfaccettature dal pompelmo ai fiori bianchi di tiglio robinia e biancospino fino alle note di cedro candito e arancio il tutto sottolineato da note burrose e di lievio e pane tostato grazie alla lunga permanenza sui lieviti. Bocca non banale con un certo corpo ma sempre in ottimo equilibrio con acidità e freschezza, una beva da tavola che accompagna un pasto intero ma è addirittura straordinario sul prosciutto di cinta senese Renieri tagliato al coltello per la magia speciale che scaturisce con il grasso particolare di questo animale.
