BEST Experience: Cooking Class in Tuscany | Chef Ryan
While we were in Tuscany, we did a cooking course with Chef Ryan. Ryan is an American who has lived in Tuscany for many years with his Italian wife, and he really knows the ins and outs of the italian kitchen. We were so impressed by how much we got out of the course, and we really learned a lot!
The course took place in Ryan's own private kitchen, where we cooked inside his house and afterwards ate the food outside in the garden, overlooking the stunning Tuscan landscape. We made our own pasta, learned how to properly salt and cook a steak, made our own gelato (Italian ice cream) and so many other things. It was so much fun for both Morten and I.
It was just us, and one other couple, so we had a lot of time to ask Ryan all the questions we might have. I would definitely recommend checking out his cooking course if you're in the area! :)

Learn how to make authentic Roman-style pasta, fried seasonal specialties, and grandmas’ dessert, from scratch, in a cozy restaurant in the Jewish section of Rome's center, with one of our cooking classes. This is a hands-on class, but if you’d just like to be a spectator you can relax, watching her work, while working on your own glass of wine. You’ll learn to make homemade pasta from scratch, clean and prepare seasonal vegetables to fry, and create a simple and tasty dessert that all Roman grandmas used to cook for local kids. I have always wanted to learn how to make REAL homemade pasta and finally got the chance to make it happen today! We had a great group and Chef Consoli was such a great teacher. Pasta Carbonara by italian chef Monosilio - Rome
CARBONARA: Italian chefs react to the most popular videos!!
Luciano Monosilio, from “Pipero al Rex” restaurant in Rome, presents the classic Carbonara recipe, paying particular attention to the traditional techniques.
Ingredients for 4:
- 4 egg yolks
- 20 g Pecorino cheese
- 30 g Parmesan cheese
- 20 g freshly ground black pepper
- 200 g guanciale
- 280 g Monograno Felicetti spaghettoni
Procedure
Combine the egg yolks with Parmesan, Pecorino cheese and pepper in a bowl. Beat the mixture with a whisk. Brown the guanciale, removing any excess oil and set aside.
Cook the spaghettoni for 13 minutes in salted water, drain and toss into the egg mixture while stil steamy. Stir in the guanciale/pork cheek, a little cooking water and finish with a drizzle of the the meat’s fat. Plate, dusting with the cheeses and pepper.

Here's to me getting lost in Rome. Sorry it took a while to upload. Follow my (mis)adventures and learn more about this picture-perfect city.
How to enjoy Rome while staying on top of your budget. Join their free walking tours. There's a lot of offers online and you can book it a day before your desired schedule. Just make sure to hand over a tip at the end. I am very much satisfied with both tours that i joined. I particularly enjoyed the first tour done by Shane. He guided us thru most of the major tourist spots and gave the group a good insight of the history of Rome. Just a reminder, if you really like the tour that much, please give the guys the tip they deserve for a job well done. :) this will also help them be able to continue to offer these services in the future. Btw, these are offered both in Spanish and English. Make sure to choose the right one. :)
