De pommes de terre means potato in French. Potato is a staple food for French people. We can deduced that from the amount of potatoes French consumed per year,it’s around 50 kg to 55 kg per person in a year. They consume potatoes in various forms: mashed potatoes, french fries, potato fries, and etc. In the region of Toulouse, a farm where Julia’s family resides, is well-known for its champêtre specialties that includes lots of recipes that uses potato, apple, sausage and beer. They prefer eating what is grown and harvested locally. Despite the fact that many Malaysians think that potato is simple carbohydrates that will makes them gain weight, potatoes is an essential component of the diet besides providing starch. Potatoes are also an excellent source of fiber, rich in vitamin C, and high in potassium. Julia always prepare this dish when she have great amount of guest at a time because this recipe only requires simple ingredients and simple steps to be prepared. Julia’s favorite (country-style) way of serving the potato souffé will be with salad roquette, colza oil, nuts and farm ham.

During the Renaissance, French culture flourished and a global colonial empire was established, which by the 20th century would become the second largest in the world. The 16th century was dominated by religious civil wars between Catholics and Protestants (Huguenots). France became Europe's dominant cultural, political, and military power in the 17th century under Louis XIV.
