During my recent trip to Chiang Mai, Thailand, I met up with my friend Hanuman Aspler, who is one of the most knowledgeable people I know when it comes to Thai food history and science.
I’ve known Khun Hanuman for many years, originally in Bangkok. But a few years ago, he bought a plot of land in the mountains of Chiang Mai, Thailand, and started developing it. I had been following his progress and he had even explained to me about what he had to do - turning a swampland into liveable conditions, and building a traditional, yet clean with a few modern amenities, Thai home on the site.
Introducing - Three Trees Doi Saket! A project, their home, and now, a Thai immersive cooking class - easily the most in depth and authentic Thai cooking class, likely in the world. Hanuman is not only a cook, but he’s a walking encyclopedia of Thai history, the stories behind each Thai dish, and a scientist who known how to break down each dish and ingredients and tell you why it’s included and what it does for the dish. It’s always an honor to hang out with Hanuman, and cook and eat, because I come away with so much more knowledge.
Today we cooked Khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว), what is one of the most popular Northern Thai food. It’s one of the dishes that if you ask someone from Northern Thailand what is a dish they crave or miss (if they are living in Bangkok), they would likely mention khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว).
Khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว) is a Northern Thai, yet Shan style, curry eaten with soft rice noodles. We gathered all the ingredients for the Thai curry paste, and pounded them all.
One of the most interesting lessons in this Thai cooking class today in Chiang Mai was about umami. Tomatoes are one of the few naturally filled fruits with umami. So he used a variety of different shapes, sizes, colors, and even fired some tomatoes to give the dish a dimension of umami. Other unique ingredients in khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว) are cotton tree flowers (ดอกงิ้ว) and fermented soybeans (ถั่วเน่า tua now).
I’ve had plenty of bowls of northern Thai food khanom jeen nam ngiaw (ขนมจีนน้ำเงี้ยว) in Chiang Mai, but this was the most complex, richest, and most in depth flavorful bowl of the dish I’ve ever had. And the umami was maxxed out, the tomatoes blew my taste buds in all directions.

Mae Sai's main claim to fame is that it's the most northerly point in Thailand. It's not noted for its tourist attractions, and most Thais and foreigners who come here do so in order to cross over to Burma.
There are some fairly cheap, standard quality hotels, such as Top North hotel which is on the same road as the border crossing, literally a couple of minutes walk from the large blue-roofed immigration building that you must pass through if crossing to Burma.
In the town and also within walking distance from the Thai border control, Doi Wao Temple is worth a visit. It's high on a hill. You can climb the countless stairs to the temple or pay 10 baht to be taken up by road on the back of a motorbike. The temple is interesting and so are the views towards Mae Sai and beyond, or in the opposite direction to the town of Tachilek and the Burmese hills, dotted with temples.
Most people get there by public bus from the northern cities of Chiang Mai and Chiang Rai. Buses are safe, inexpensive and quite frequent with various 'classes' costing between 160 - 350 baht for the five hour trip from Chiang Mai's Arcade Bus Station (via Chiang Rai) or the approximately two hour trip from Chiang Rai's two public bus stations. Book in advance if possible as the buses fill up quite quickly.
When you arrive at Mae Sai bus station (which is a little out of the way), you'll see a couple of red van-like 'passenger service vehicles' (songtaew) that are available to take you to the main street (that leads to the border control) for 15 Baht (10 baht for kids).
Many people do this trip as a 'visa run' from Chiang Mai or Chiang Rai in a single day. You need to be back at Mae Sai in time for the last bus at 4:30 pm - and you almost certainly need to have booked it in advance otherwise it'll be full.
Some tour companies in both Chiang Mai and Chiang Rai offer a day trip minibus service to the border and back for around 500 baht from Chiangmai (less from Chiang Rai). The driver will wait in Mae Sai while you cross to Burma for a couple of hours. These can be booked from various guest houses or travel agents and will pick you up at your guest house or hotel.

This was my first micro flight and Sky Adventures made it feel like a breeze. They also offer hot air balloon rides between November and March.

Mushroom Gatherers in Chiang Mai
Every winter (Thailand's dry season) the local people burn off the underbrush. It's the oldest agricultural technique on earth and they do it so that the mushrooms will set spores when it rains. This short clip was taken in the middle of the rainy season.
Here's the location: Doisaket Hot Springs. Small, sweet. Take an ibuprofen, get into your bath, add a packet of Epsom Salts (20 Baht at the springs), soak 20 minutes, then walk over for 2 hour massage (300 Bt).

What makes Chiang Mai such a great base for foreigners? Firstly, it's cheap. You can find high quality serviced apartments for under $500 (some are less than $300) that offer modern amenities and are in located in close proximity to the old square of the city.
