Cooking on the Hearth
This week’s topic brings back memories of days gone by and just might stir up the desire in you to cook over an open fire. Well perhaps not you. Maybe someone you know.
In any case, I thank you all for listening and hope you find this information useful. Thank you, thank you to all of you veteran homestead-loving regulars and welcome to all of you new listeners out there. Let me know what you’re interested in and I’ll see if I can come up with some compelling dialogue.
Today’s Show Homestead Life Updates Cooking on the Hearth Mint Sauce (for Lamb Roast) Homestead Life Updates Cows Our newest addition, Butter, had her calf. Butter is a purebred Jersey with certified A2A2 genetics. If you are not familiar with what that means, well that’s a podcast for another time. The health benefits of raw milk from cows with A2A2 genetics are substantial. We have four calves now—with 2 more still to come.
Sheep Finally, the last ewe had her lambs. She has a lovely set of twins. That brings our total lambs this season to 9. All are alive and well. Only one issue. But Lambert is doing well on his bottle. Every morning and afternoon I go out and call “lambikins” and he comes running. As soon as he has finished his bottle, he turns around and trots back to his mom and 2 siblings.
Quail The quail have hatched. We have 24 baby quail in a brooder right now. They peeped a lot when they first hatched, but now they are as quiet as church mice. I’ve spent lots of time just watching them run around pecking here and there. In three weeks’ time they will be fully feathered and ready to move to their quail condo. By 8 weeks, the hens will be laying eggs and I will start the process all over again until we have the number of birds we want for breeding stock. Our goal is to raise all of the eggs we eat. Eggs and coffee are the only items I currently buy from the grocery store. Soon to be only coffee.
Steers We have 3 steers soon to be up for grabs. If you are interested in a ¼, ½ or whole steer, please get on the list quickly. The first one will go to processing in late June and will be available for pickup around mid-July. We are always limited in the amount of grass-fed beef that we have available. Again, please get on the list early.
Garden The tomatoes are in the garden. It was a bigger job than I thought, but I persevered and got them all in the ground. The beans are up. I still need to plant the green beans. And just today we got the sweet potato slips. Once the beans and sweet potatoes go in, I will have planted that entire garden. Oops, I almost forgot. I need to plant the sunflowers between the tomatoes.
I’m amazed at how much I accomplished on my own with this garden. Sure, Scott did a lot of the heavy work with the mulch and initial fertilizer, but the rest was all me. I’ve never done that much on my own before. Diet and exercise is working wonders for me.
Creamery Not much to report on the creamery this week. We’ve been tied up with other tasks and another week has slipped by with only a little progress. Life on the homestead is constantly filled with meaningful, fulfilling tasks. Scott really does have a lot on his plate right now. He’s doing a great job juggling all of his responsibilities. He is so awesome.
Cooking on the Hearth In the Cooking Through the Ages FarmCast I finished up with a recipe for cooking cornbread on the hearth. There have been so many questions about hearthside cooking, I decided to do an episode on the techniques and knowledge that our great-great-great-great grandmothers used to cook meals for their families. When the United States was founded, all cooking was done over a fire. Most often it was done in the fireplace of the home.
Knowledge of fire-building was a part of everyday life. There were specific tools and implements that assisted in the cooking process. I’ll talk about those as well.
Today we see a fireplace is a charming optional feature for a home. In yesterday’s world a fireplace was absolutely essential to living and the virtual center of family life. It was the primary heat source, was a major source of light, and provided the means by which all food was prepared.
We have a wood stove and perhaps you do too. Once the match was invented, fire building became pretty easy. We merely crumble up some newspaper, lay on some wood, then strike the match. Before this modern convenience, coals had to be carefully banked at night to ensure a ready fire was easily built for the next day’s meals. A “cold fire” meant using flint and steel to strike sparks in extremely flammable tinder, skillful application of air and carefully feeding small twigs, then larger and larger sticks into the flame.
Fire Safety Another convenience of today that we may take for granted is our screened fireplaces. Together with normal precautions, fire hazards from sparks and coals hitting the floor are reduced to nearly nothing....

Are You Offended By The N-Word?
Gina Rodriguez has released a second apology for her use of the N-word after her first one was widely criticized. The Jane the Virgin alum, who is of Puerto Rican descent, posted a video to social media showing herself singing along to the 1996 Fugees track “Ready or Not,” including the line, “Fronting n****s give me heebie-jeebies.” Rodriguez, who previously faced accusations about being “anti-black,” faced immediate backlash, so she deleted the video and issued an apology. But that apology — “I am sorry if I offended anyone by singing along to The Fugees, to a song I love that I grew up on” — wasn’t well-received. She was slammed for not actually apologizing for using the slur. The apology was called “weak,” “patronizing” and “disingenuous.”
So early Wednesday, Rodriguez apologized again in a statement shared on Instagram. In it, she wrote she was “deeply sorry for the pain I caused.” She also acknowledged, “The word I sang carries with it a legacy of hurt and pain that I cannot imagine.” And added, “I have serious learning and growing to do.”

Star Is On Vacation With The Flu
Influenza, commonly known as the flu, is an infectious disease caused by an influenza virus. Symptoms can be mild to severe. The most common symptoms include: high fever, runny nose, sore throat, muscle pains, headache, coughing, and feeling tired. These symptoms typically begin two days after exposure to the virus and most last less than a week. The cough, however, may last for more than two weeks.
Baloxavir marboxil, sold under the brand name Xofluza, is an antiviral medication for treatment of influenza A and influenza B. It is taken as a single dose by mouth. It may reduce the duration of flu symptoms by about a day. It was approved for medical use in the United States in 2018. It was developed by Shionogi Co., a Japanese pharmaceutical company, and Roche AG.

Listening is a more natural way of learning, when compared to reading. Written language only began at around 3200 BC, but spoken language has existed long ago.
Learning by listening is a great way to:
- increases imagination and understanding
- improves your listening skills
- improves your own spoken accent
- learn while on the move
- reduce eye strain
Now learn the vast amount of general knowledge available on Wikipedia through audio (audio article). You could even learn subconsciously by playing the audio while you are sleeping! If you are planning to listen a lot, you could try using a bone conduction headphone, or a standard speaker instead of an earphone.

SUMMARY
=======
Lafayette Ronald Hubbard ( HUB-ərd; March 13, 1911 – January 24, 1986) was an American author of science fiction and fantasy stories, and the founder of the Church of Scientology. In 1950, Hubbard authored Dianetics: The Modern Science of Mental Health and established a series of organizations to promote Dianetics. In 1952, Hubbard lost the rights to Dianetics in bankruptcy proceedings, and he subsequently founded Scientology. Thereafter Hubbard oversaw the growth of the Church of Scientology into a worldwide organization. Hubbard was cited by Smithsonian magazine as one of the 100 most significant Americans of all time.Born in Tilden, Nebraska in 1911, Hubbard spent much of his childhood in Helena, Montana. After his father was posted to the U.S. naval base on Guam, Hubbard traveled to Asia and the South Pacific in the late 1920s. In 1930, Hubbard enrolled at George Washington University to study civil engineering, but dropped out in his second year. He began his career as a prolific writer of pulp fiction stories and married Margaret Polly Grubb, who shared his interest in aviation.
Hubbard served briefly in the Marine Corps Reserve and was an officer in the Navy during World War II. He briefly commanded two ships, but was removed from command both times. The last few months of his active service were spent in a hospital, being treated for a duodenal ulcer.During the late 1960s and early 1970s, he spent much of his time at sea on his personal fleet of ships as Commodore of the Sea Organization, an elite, paramilitary group of Scientologists. Some ex-members and scholars have described the Sea Org as a totalitarian organization marked by intensive surveillance and a lack of freedom. It came to an end in 1975.
Hubbard returned to the United States in 1975 and went into seclusion in the California desert. In 1978, a trial court in France convicted Hubbard of fraud in absentia. In 1983 Hubbard was named as an unindicted co-conspirator in an international information infiltration and theft project called Operation Snow White. He spent the remaining years of his life in a luxury motor home on his California property, attended to by a small group of Scientology officials including his physician. In 1986, L. Ron Hubbard died at age 74.The Church of Scientology describes Hubbard in hagiographic terms, and he portrayed himself as a pioneering explorer, world traveler, and nuclear physicist with expertise in a wide range of disciplines, including photography, art, poetry, and philosophy. Though many of Hubbard's autobiographical statements have been found to be fictitious, the Church rejects any suggestion that its account of Hubbard's life is not historical fact. His critics have characterized Hubbard as a mentally-unstable chronic liar.
ch 18) The Impossible Victory: Vietnam
chapter 18: A People's History (Of The United States) Howard Zinn.
~
Chapter 18, The Impossible Victory: Vietnam, covers the Vietnam War and resistance to it. Zinn argues that America was fighting a war that it could not win, as the Vietnamese people were in favor of the government of Ho Chi Minh and opposed the regime of Ngo Dinh Diem, thus allowing them to keep morale high. Meanwhile, the American military's morale was very low, as many soldiers were put off by the atrocities they were made to take part in, such as the My Lai massacre. Zinn also tries to dispel the popular belief that opposition to the war was mainly among college students and middle-class intellectuals, using statistics from the era to show higher opposition from the working class. Zinn argues that the troops themselves also opposed the war, citing desertions and refusals to go to war, as well as movements such as Vietnam Veterans Against the War. Also covered is the US invasions of Laos and Cambodia, Agent Orange, the Pentagon Papers, Ron Kovic, and raids on draft boards.
TEDxPhiladelphia - Unintended Consequences
The moment that we recognize the impact of an unintended consequence, a new story unfolds. Ideas that arise from unintended consequences are deeply personal. An unintended consequence forces us to reassess our assumptions and challenge our narratives.
Unintended Consequences is the official theme for TEDxPhiladelphia 2019.
The daylong multidisciplinary conference will bring together engaging speakers, performers, and participants to share their stories and experiences of unanticipated moments, their challenges and unexpected opportunities that arose from this, and how it's shaped who they are and what they do today.
