In this edition of the Wine Oh Wine Club we give you a taste of Tuscany.

Owned by Count Francesco Marone Cinzano, Col d’Orcia is one of the largest and best known wine estates in Montalcino. Col d’Orcia's been been organic since 2010 and today it's Tuscany's largest organic wine producing estate.

Brunellodi Montalcino has become one of the handful of DOCG wines hunted by wine collectors, because its depth of flafor and tongue-curling tannins give it the potential to age for decade. The lighter-styled Rosso di Montalcino, sort of a younger, declassified Brunello, was created so people could drink a more immediately accessible Montalcino to age; DOCG law requires a minimum of four years before Brunello can be relised on the market.

Brunello di Montalcino: Italy's most classic, ageworthy Sangiovese wines
Brunello di Montalcino - Tuscany - Italy
Brunello di Montalcino is a red Italian wine produced in the vineyards surrounding the town of Montalcino located about 120 km south of Florence in the Tuscany wine region. Brunello, a diminutive of Bruno, a male given name which means brown, is the name that was given locally to what was believed to be an individual grape variety grown in Montalcino. In 1879 the Province of Siena's Amphelographic Commission determined, after a few years of controlled experiments, that Sangiovese and Brunello were the same grape variety, and that the former should be its designated name. In Montalcino the name Brunello evolved into the designation of the wine produced with 100% Sangiovese. In 1980, Brunello di Montalcino was awarded the first Denominazione di Origine Controllata e Garantita (DOCG) designation and today is one of Italy's best-known and most expensive wines.

Responsible Viticulture
In our San Polo vineyards, the objective at the very centre of our viticultural practices is to cultivate vines that are as healthy as possible. The plants, which already benefit from an excellent microclimate and constant breezes, are treated with natural substances, such as aloe vera, seaweed and silicon to aid health and promote natural resistance to disease. The use of chemical weedkillers, which pollute and are noxious to the vines, has been eliminated in favour of occasional digging over of the soil under the rows, which also helps to oxygenate the roots. The technique of green manuring, which involves the sowing of nitrogen-fixing grassy plants between the rows, allows natural soil enrichment and the consequent elimination of fertilizers. After several years of experimenting, and thanks to the encouraging results obtained in terms of quality, since January 2014 organic viticultural methods have been adopted that will lead to San Polo achieving official organic certification in 2016.
The idea of a sustainable winery is not only in line with the current times, necessarily forward looking, but much more than this. It is the link between generations: the generation of my father, the builder, the pioneer, the patriarch; my generation, which has combined the love of terroir with the need to engage distant cultures and markets; and the new generations. In the era of the Green Economy, my daughters, in fact, will speak to consumers and wine lovers with a keen interest in biodiversity, natural products and services, microclimates, welfare and the health of mind and body.
So San Polo, with its winery, has started off on a sound footing. In a place of great tradition and identity such as Montalcino, it is already a rare gem, a sign of things to come.
UNDERGROUND WINERY
Built entirely underground, the winery maintains a stable temperature throughout the year, severely limiting energy wastage. The tunnel-like structure fits perfectly within the contours of the Podernovi hill, and also allows for a natural and logical ‘pathway’ from the entrance of the grapes through to the winemaking areas.
EXTERNAL FLUES
Located externally, right above the ageing cellar, the flues harness the area’s constant breezes: made of lightweight aluminium, they rotate in accordance with the direction of air currents and, by virtue of the Venturi effect, extract the warm air produced during the fermentation process.
CAVITY WALLS
The hollow passageway that runs round the whole building provides a natural source of low-temperature moist air that is used to cool the ageing cellar. The moisture, extracted from the ground, is fed into the barrel room through special grilles that close automatically when the required temperature is obtained inside the cellar.
CLADDING
Made of hygroscopic tuff, the cladding on the walls in the barrel cellar plays an important regulatory role: the porous slabs absorb or release moisture, ensuring a balanced environment in the cellar.
