Pierre Hermé, Paris. The Picasso of Patisserie, the world’s best pastry chef.
France is famous for its decadent desserts and delightful pastry concoctions. The word “dessert” is actually derived from the French word “desservir” which means “to clear the table”.What started out as a customary routine of serving sweets such as fruits and cheese after a meal has turned into a full-blown art form, especially in recent years. Pierre Hermé is one of the chefs that has perfected this art in no time. Heir to four generations of Alsatian baking and pastry tradition, Pierre Hermé known to most as the King of Macaron and the Picasso of Pastry, started his career at 14 as an apprentice to Gaston Lenôtre. He went on to become a pastry chef in his own right, rapidly ascending into the realm of haute patisserie. In 1996, he founded Pierre Hermé Paris with his business partner Charles Znaty, and the duo began putting the Hermé imprint on farther reaches of the globe.
“I cook in my head. I imagine things and then I write them down. Then my colleagues work with me to do the first baking tests, then I taste what we have and decide if it works for me or not. I spend zero time in the kitchen — it’s all done in my head.”- Pierre Hermé

« A gastronomic temple on the world's most beautiful Avenue »
David Holder and his father, Francis Holder, founder of the Holder Group, opened a new Ladurée tea salon and restaurant at 75 avenue des Champs-Elysées in September 1997. Their aim was to reproduce on the Champs-Elysées the refined atmosphere of their rue Royale establishment and to build a unique site, a symbol of the French « Art de vivre ».
365 days a year, from 7.30am to midnight, Ladurée serves breakfast, lunch, tea, dinner and late supper for approximately 3,000 clients daily. On the first floor, the 'Eiffel Veranda' and the outdoor terrace overlook the glamorous Champs Elysées avenue. The bar, very successful after 7pm, offers any time classic short and long drinks as well as wines and liquors. One can also sit at the bar for a quick lunch.
On the second floor, the five cozy dining rooms, decorated in the 'Second Empire' refined style by the French interior designer Jacques Garcia, were dedicated to the 19th century Parisian muses : Paeva, Castiglione, Mathilde but also la Bibliothèque (the Library) and La Chocolaterie (the Chocolate Factory).
The menu of the restaurant is inspired by French regional cooking, as well as other cooking of the world, and is continuously evolving with the seasons and its creations.

Just don't eat the fries, those aren't even really French anyways. Rachel K and I, chat about why our kids should be eating more like French children.
Are chicken nuggets keeping your kids alive? Do they turn up their nose when they see a green vegetable on their plate? In my upcoming book, The French Twist: Twelve Secrets of Decadent Dining and Natural Weight Management, I devote special attention to the underlying food culture of the French- the reverence, respect and value associated with educating children in the formation of taste and nutritional education—and what we can learn from their traditions.
HOW THE FRENCH EAT
The primary belief is that food and dining deserve respect. People express this respect by taking the time to eat and enjoy eating, apart from any other activity. Mealtime is an opportunity for children to relax, to enjoy, and simply to be. They are not distracted by anything other than themselves and a nurturing environment. When dining out in France don't look for the kiddie menu- it doesn't exist. Children as young as five years of age place napkins on their laps, eat in courses, properly maneuver their utensils, and behave quite like the adults who accompany them. Chicken nuggets are nowhere to be found.
MEALS ARE IMPORTANT, BON APPETIT!
Parent's in France value and respect food, nutrition, and manners and the school system delivers by taking pride in school cuisine.
-A French chef prepares the meals for every school, shops daily and checks in with the kids about their preferences.
-Children eat in real, quality food in courses, on warm plates with real cutlery and glassware.
-The lunch room is decorated with bright colors, acoustic tiles to create a soothing, and quiet environment.
-Two hours is devoted to lunch and recess.
The mayor's office will kick in where children cannot afford the lunch meals. In France school meals are important. This is in stark contrast to America's school lunch program, which focuses on feeding students so they'll focus in the classroom. We don't take pride in our cuisine, as the French do. Good food just isn't very high on our list of priorities, convenience food is. As long as convenience is of greater value to us than our children's nutritional well-being outcomes like childhood obesity will not change. Not until we reach the root cause—our personal value systems—will our outcomes and our children's lives improve.
