How to make vincotto – This version of the cooked wine is infused with fresh ginger & spices
Get recipe:
What Is Vincotto?
Vincotto (also known as Vin Cotto) is a “cooked wine” made from unfermented grape must, slow-simmered until thick and syrupy. This flavorful condiment has been crafted in Italy and Greece (where it’s known as Petimezi, or “grape molasses”) since Roman times. Vincotto is wonderfully versatile and can be used as you would use a sweet, dense aged balsamic vinegar – spooned into savory dishes, drizzled on fresh cheese or fruits, poured over gelatos or used as a coulis…
Vincotto Is Fun and Easy to Make!
Of course, you can always buy vincotto, but I think it’s much more fun (and creative!) to make it in your own kitchen. All you need is a bottle of fruity red wine, a few spices and a little patience.
In this version, I reduce red wine with fresh ginger and spices. The result is a tangy, aromatic and succulent syrup that’s suitable for either savory or sweet dishes.
So here’s to vincotto... You’ll find that its uses are endless!

Viennese Food - Eating Sachertorte Cake in Vienna, Austria at Café Sacher Wien Video Transcript:
Good morning. We're here in Vienna (Wien).
We figured today we would go out for cake. Yeah. Cake is going to be our lunch so we're going to be trying the famous Sachertorte (Sacher Torte). We're going to the hotel where it originated and we'll be eating at Cafe Zacher Wien (Sacher Hotel). And it is a bit of a walk. It is a bit of a walk for sure. It is like 30 minutes according to Google Maps. Yes. So but this is our first time to explore Vienna (Wien) on foot so we're actually quite excited and yeah we'll show you a bit of the journey along the way. Now let's go earn our cake.
I went with the classic I ordered the Sachertorte so if you take a look here it has got a little chocolate seel letting you know it if the official. The original. The original. And also this little paper Sacher the original since 1832.
And if I open this they say they make they make this cake fresh every single day and you can enjoy it in Vienna, Salzburg, Innsbruck or in Graz.
They made the chocolate cake with apricot jam, a little bit of cream on the side. It has subtle flavors.
I ordered a iced chocolate. Iced hot chocolate (Wiener Eisschokolade mit Schlagobers). Ice chocolate. With ice cream, whipped cream and these little pralines on top. OMG. It is so good. I've already had some. In case you hadn't noticed. I think we've noticed. Haha.
It is just such a rich chocolate.
We figured we would try two different cakes. Yep. So Sam do you remember which one you got? Yes, I am trying the Liliput (Original Sacher Gewürzgugelhupf) and this is another Viennese specialty. Yeah. So why don't we have a dissection here.
So it is a ring cake with spices, ginger, candied orange. That looks so good.
Alright Mister. So for your drink he got the Wiener Melange. The wiener melange. So basically that is an espresso with milk and whipped cream. Oh la lah.
Here is the bill. Alrighty so 26 Euros total. Basically 13 per person. Yeah. And the most expensive thing that we ordered was your drink. So yeah, you obviously come here for the ambience. The experience but also the cake is delicious. I have to say and we do recommend you guys come here. And now let's go walk off all that sugar.

Afternoon Tea in Hong Kong
When it comes to afternoon tea in Hong Kong (香港) there are numerous options. Probably the most famous of them all is high tea at the Peninsula. The last time we visited Hong Kong we queued up in line for almost three hours to wait for a table at the Peninsula so this around we were seeking out an alternative option in the city. After a bit of research we realized we were within walking distance from our hotel to the Lion Rock at the Royal Plaza Hotel. Come join us for tea for two as we goggle our way through a three tray feast of savory and sweet delights with plenty of tea to wash it all down.

Afternoon Tea in Hong Kong Travel Food Video Transcript:
Well good afternoon. It is a Monday in Hong Kong (香港) and we thought why not go for afternoon tea. Weekends are usually crazy in this city and you can't get a booking at a restaurant unless you've made it way in advance. So yeah, it should be fun. I'm excited for afternoon tea. I want macaron and cake.
Macarons. Those are my special requests. Okay.
So for today's outing we're having tea at the Royal Plaza Hotel. And we've had afternoon tea in Hong Kong (香港) once before. It was a pretty traumatic experience for Sam.
It was especially traumatic for me. We went to the Peninsula Hotel and yes it is a fantastic place to have afternoon tea. The prices are a bit expensive but that is not what got to me.
I had to wait in line for almost three hours. Yeah. So I almost lost my sanity just before we got seated. So yeah, we're trying something different this time. It is going to be cheaper, we've made a reservation so hopefully we'll just walk in and be able to sit down and start. Eating! Eating! Drinking tea right away!
Okay Sam. So this time you waltzed right in. You didn't have to wait three hours to get your tea. So how does that feel?
My morale is very high at the moment. I basically skipped lunch for this so I'm hungry. I can't wait to have the different canapes. We're having like a combination of cold, hot and some desserts. Yeah. And then on top of that we got two different drinks. Each! Each. So it is like four drinks.
So I'm getting a ginger one and I'm also getting a cafe mocha and what about you?
I'm having cafe latte and I think it is like a truffle mint chocolate tea. Yeah, so only good things are coming at this point. No waiting.
I'm so happy about that.
Alright, so I'm so excited the tea is here. And which each get our own pot. And seriously there is probably like three cups. Three cups in here.
It is the chocolate mint truffle. I don't even know. Oh my gosh. I don't even know the order but it smells amazing.
That seems like a bit of a fancy pants tea. Yeah, it smells like melted chocolate with mint. Does it?
I can't say I smell the truffle but I'm not that familiar with truffle so.
That is nice. The flavor itself isn't very strong but it is more the aroma that you get before you drink it. And like you don't need any sugar or milk with this. It is just so good. I love the way it smells. It smells like the holidays.
I finally settled on ginger twist. Let's take a look at that one down here.
Mine is a might lighter color than yours. Yeah. Yours is more orange-y and mine is a little bit more clear and yellow.
Yeah, I can see how you say it is the aromas that you really smell more so than the strong taste. I feel like that is the experience. Yeah, smelling the tea. It is almost better just to have it up to your nose and just sniffing in the ginger.
But no it is a nice tea. It goes down very smoothly and you're right you don't need to add sugar to it. So yeah, I'm enjoying it and now it is time for the food.
We are both so giddy right now. The tower of heavenly delights has arrived. Low and behold. So let's see what can we choose. So we're going to start from the top and work our way down. So we have some scones, some chips with crab meat I think. This looks like a mini quiche and then we have mini burgers. Mini sliders.
Well, we'll get to that later. First let's eat from the top alright.
And I have a major sweet tooth so I'm starting with the scones.

Pão de queijo: Eating our favorite Brazilian cheese bread in Rio De Janeiro, Brazil
One of our favorite breakfast meals and snacks in Brazil is Pão de Queijo - a kind Brazilian cheese bread balls made with casava flour and cheese. We picked up an entire box of these at Casa do Pão de Queijo along with Brazilian dessert bread with doce de leite, bananada candy bar and Guarana soda. Come join us for our afternoon feast at our apartment in Rio de Janeiro, Brazil.

Pão de queijo: Eating our favorite Brazilian cheese bread balls in Rio De Janeiro, Brazil Travel Video Transcript:
So our time in Rio de Janeiro is winding down. Like today is literally our last night in the city. But there is still one more food we wanted to try and that is Pao de qeijo.
Voila!
So of course we had to go to Casa do Pão de queijo. And that means the house of the cheese bread. And over there they've specialize in these little bread cheese balls and they are amazing. I used to eat these as a kid when I used to visit family and they are so so good. This is like my favorite Brazilian snack. I know, they are super tasty and you can find them almost everywhere. I mean this is embarrassing to admit but we've even had them at McDonald's here. McDonald's for breakfast. You can get coffee and Pão de queijo.
So let's just dig right in. I'm going to grab one of these. So I have to admit these are best when they are like fresh out of the oven. And we've had these in our apartment for a few hours now. So they're not warm anymore but they are still a little bit gooey inside. I mean it is getting kind of dark here so I don't know if you can see that but it is like really cheesy and gooey and just oh so good.
So the key ingredient for these Pão de queijo is the casava flour. That is what makes it sticky inside. And then of course the cheese too. Aren't they so good? Oh man. I could just eat like them by the 10's. Yeah. And you know what? If you want to make these back at home you can actually pick up a bag at the supermarket of the powder and you mix it yourself. We have to do that. Definitely.
So Sam is washing the Pão de queijo down with Guarana. And what is Guarana?
It is like the most popular soft drink here in Brazil. Yeah. It kind of tastes a little bit like ginger ale. Not as much bite as ginger ale but it is a little bit sweeter. That is the best way I can describe it. Yeah. And apparently it comes from the maple family so I think that is the reason we enjoy it so much being Canadian. There you go.
Alright and we've got a massive one over here. Yes. So aside from specializing in cheese bread you can also get sweet ones. And this one is filled with doce de leite. I know I'm butchering it every time. My Portuguese is awful. But this is like the dulce de leche filling. And if you can have a look at the bottom of the bread there is a little hole and that is where they've filled it with that gooey caramel.
So what do you think, should I bite into it? Yeah but don't take too much because you know what I want a lot of that too. That is my biggest concern here is that I'm not going to be left with much.
Look at that. Can you see the filling. Oh yeah. There it is. Squeeze it some more.
Squeeze it around a bit.
Oh, wow. It is just seeping out from the side.
So how is it? It is really good. Obviously it doesn't taste like cheese but it is still made with the casava flour so it has still kind of got that like chewy starchy consistency. So this is your dessert after you have the cheese ones right? Look at that. Look at that. Oh, don't you dare have anymore without me. Half and half. Half and half. Urgh. This is so good. Here you go before it is gone.
So bye bye cheese bread. It is all gone. All gone. So these exact ones here cost 12 Reals and I think the dessert one with doce de leite and bananada brought it up to 20 Reals. So you're talking about that is probably like six or seven US dollars at most. So not bad. For some of the best bread you'll ever try. Yes and we're both quite full after that so you can turn it into a snack slash meal. And you know what you've got some little crumbs on your mouth.
