Methode' Champonese
This video is how we make our Cuve's Cougar Methode' Champonese. There is nothing added to the finished product, so it is called Naked Champonese, no dosage .
New York 76 ( NY 76 ) was the name given to the vines while in development. It has been just recently named Aromella.
We wish to thank Scott labs, for the encapsulated yeast that made life easier.
The Finger Lake Wine Competition, held in Rochester, NY, is an international event. Barrelhead Winery sent in 3 wines to be judged. The first part of the video shows us bottling the Dry Cuve's Cougar Champonese. The second part were the disgorgement takes place, is done with Dry Tomcat Champonese. Both were entered, along with our Iowa Sweet Concord. All three took a Silver Medal. There were over 3000 wines in this competition. Iowa wineries won 1 Double Gold Medal, 13 Silvers, and 13 Bronze
medals. This brings Barrelhead Wineries awards to 1 Gold, 4 Silvers, and 1 Bronze medals. Last years Dry Cuve's Cougar took a Gold in the Mid America Wine Competition, comprised of 14 states.
ADDING THE DOSAGE TO HENKE SPARKLING CHARDONNAY
Barrel fermented and aged Sur Lie Style, then fermented a second time in the bottle. Delightful for all occasions. Beautiful, light and crisp, Brut. 3 years in the making!
Joe Henke, Winemaker
Joe Henke makes 15 different kinds of wine in the basement of the old Window Garden Restaurant in Westwood.
Joe started making wine as a hobby in 1973. In 1996, after years of encouragement from professional vintners, Joe began offering his wine commercially and the winery was established. Over the years many customers have affirmed what Joe believed and those vintners knew, he makes premium, quality wines.
These days Henke Winery produces approximately 1700 cases of wine per year, striving to use Ohio grapes.
