The café culture in France goes back centuries, cafés have always been a gathering place for intellectuals to meet and debate philosophical issues and for artists and writers to compare and exchange ideas. Then there is the Garcon Parisien, the French Waiter (be sure to call them Monsieur, Mademoiselle or Madame to attract their attention), a fixture of the French cafés. French waiters are highly trained. In France, you go to school to become a waiter. A good waiter knows how to work behind the counter, mixing drinks or pouring wine. He or she also knows how to serve food elegantly and efficiently, carrying heavy loads on his tray. Waiters are proud of their profession and they have high standards. Serving café au lait at dinner time absolutely horrifies them, for example. Let's not judge the French servers by our own standards, it is important to consider theirs. They are not trying to be disrespectful by not talking too much. It is their way of showing respect to themselves and to others. For example, you'll never see a waiter interrupt a conversation or rush you by bringing the check too early. A15% service charge is automatically added to your bill, so the waiter does not work for a tip, but it is always a good idea to round off the bill and leave a few coins behind. Enjoy!!!

The Ballet of the Professional Waiters at Cafe Central, Rue Cler, Paris
I filmed this on Christmas Eve. Very few restaurants/cafes/bistros were open in Paris. Those that were open had a long list of reservations. I went to my old stand by on Rue Cler and was delighted to find it open. I was so tired, that I was just going to plant by bottom there all night. Food was good, but it was the waiting staff that blew me away. Being one of the few Cafes open, the place got jammed. I then became hypnotized by the dance of the professional wait staff. The speed, rhythm, coordination of these few fellows kept the evening humming along with such professionalism. I was very impressed...I had to film it. This is not something I normally film.

Born on 1920 in Normandy, Gaston Lenôtre quickly showed a true passion for patisserie.

????Five years ago, on a day in september, I found myself in this same exact spot looking at Monets waterlillies.
I can’t tell you what I was thinking, or feeling on that day, just that I was drenched from head to toe as if i had climbed out of one of the paintings themselves.
I had just moved to France and decided to have a picnic along the river Seine with a new expat friend. It was one of those rare fall days that just seem so full of possibilities.
After a few glasses of wine, we decided to jump in to the river with our clothes on. I was wearing blue jeans and i was laughing. There was no, “what if we get sick”, or “what will people think”— we jumped with the reckless abandon of two young people starting a new life in a foreign country. In that moment, it just seemed like the utmost most fun thing to do.
As the day began to fade, we wandered the city, and ended up in front of this very museum. “Lets go in”, my friend said. Our clothes and hair still damp from the river water, we entered in through the doubled doors.
The future is you revisiting places you’ve once been, with a fresh set of eyes. It’s the closest we can ever get to time traveling.
Standing there then, in aw and sneezing river water, I didn’t yet know jsut how much my life would change. How five years later, I would still be in Paris and back at this place. it had seemed like an ordinary day, but sometimes even the most ordinary things, when cast in the right light and color, can become very special.
This vlog is little pieces of my heart collected over these last few weeks; celebrating 100k subscribers in this beautiful community and my five years in France, wandering Paris and making art, my favorite cafés.
