The city of Ica is the capital of the Ica Region in southern Peru. While the area was long inhabited by varying cultures of indigenous peoples, the Spanish conquistador Gerónimo Luis de Cabrera claimed its founding in 1563. As of 2005, it had an estimated population of over 219,856. The city suffered extensive damage and loss of life during the 2007 Peru earthquake.

    A pisco sour is an alcoholic cocktail of Peruvian origin that is typical of the cuisines from Chile and Peru, and is also considered a South American classic. The drink's name comes from pisco, which is its base liquor, and the cocktail term sour, in reference to sour citrus juice and sweetener components. The Peruvian pisco sour uses Peruvian pisco as the base liquor and adds freshly squeezed lime juice, simple syrup, ice, egg white, and Angostura bitters.
