Shrimp or Prawn with Lobster Sauce is a rather popular dish in the United States. Although we don't really have this dish in Singapore with the exact same name, we do have somewhat similar dish - usually cooked with egg tofu or with kway teow (flat rice noodles). Thanks to one of our viewers, we decided to show you how Roland cooked this dish at home.

Ingredients:
Serves 3 - 4 pax
Marinated Prawns (Shrimp)
--------
250g of prawns
1 teaspoon of sugar
1/2 teaspoon of baking soda
1 bowl of ice water
Other ingredients
------
6 slices of young ginger
2 cloves of chopped garlic
Prawn heads
750ml of water
1/2 cup of mixed vegetables
1/2 teaspoon of chicken stock powder
1.5 tablespoons of light soy sauce
1/2 teaspoon of sugar
1/2 teaspoon of salt
A few dashes of white pepper
Some cornstarch solution
1 tablespoon of Chinese cooking wine
1 beaten egg
1/2 teaspoon of sesame oil

Ingredients:
Serves 4
Marinating the prawns
------
8 pieces of large size prawns
0.5 egg white
2 tablespoons of corn flour
Ingredients for creamy gravy

1 cup of evaporated milk
A small handful of curry leaves
1 egg yolk - beaten
1.5 teaspoons of salt
2 teaspoons of sugar
2 ounces of butter
7 cloves of garlic - minced
2 pieces of bird's eye chilli - chopped

Chinese mustard with Dried Shrimp Egg Sauce ● Homemade Recipe [Simple & Easy]
Ingredients:
700g Chinese mustard green
30g Dried Shrimp
1 clove Garlic
1 shallot
1 cm Ginger
3 tablespoon Oil
1.5 cup Water
1 teaspoon salt
½ tablespoon sugar
½ tablespoon light soy sauce
½ tablespoon Oyster sauce
A dash of pepper
1 tablespoon Corn starch mix with 2 tablespoon water
Steps:
Pound garlic, shallot and ginger. Set aside
Pound dried shrimp. Set Aside
Soak and wash the Chinese mustard green
Cut into bite size (about 1.5 inch square)
Boil a pot of water
Add 1 tablespoon oil and ½ teaspoon Salt
Blanch the Chinese mustard for 5 minutes
Drain and put in the serving plate
Heat the pan and add 2 tablespoon Oil
Saute the pounded garlic, shallot and ginger
Add the dried shrimp and fry for about 2 minutes
Add 1.5 cup water and bring to boil
Simmer for about 3 minutes
Add sugar, light soy sauce, salt, pepper and oyster sauce
Simmer for 1 minutes
Slowly stir in the corn starch till the sauce thicken
Add two eggs
Turn off the heat and stir well.
Pour the sauce on the blanched Chinese mustard
And serve immediately
PINOY RECIPE - CRISPY CHOW MEIN WITH SEAFOOD RECIPE CHINESE STYLE
1 cup fresh shrimps
1 cup squid you can use beef or chicken as well
1 cup fresh shiitake mushroom ( optional) dried mushroom
1 cup beans sprout
1 lb. bok choy or chinese cabbage
1 pack fresh chow mein noodles
1 medium onion (sliced)
2 tbsp. corn starch ( dissolve with 3 tbsp. of water )
2 tbsp. canola oil
2 tbsp. sesame oil
1 cup chicken broth or water
2 tbsp. hoisin sauce
1tsp. soy sauce
dash of salt and ground black pepper
1 tbsp. fresh sliced ginger
1 tsp. cooking wine

Little China - Authentic China street food in Chinatown, Singapore, and annual CNY market.
Here's a little vlog to share some nice traditional china street food you can find in Singapore. Basically, almost the entire ground floor of people's park complex is selling china delicacies like bao, mantou, cold appetisers, liang pi, liang fen, mala, red cray / craw fishes, sweet and savoury pancakes, etc. The buns are surprisingly well made and it kind of reminds us of din tai fung's. It's chewy and delicious. You won't feel thirsty after eating it. They also sell different kinds of pancakes and crepes. There is a particular pancake made of brown sugar, peanuts, and sesame. It's very similar to korea's hotteok.
In addition, we went over to the annual chinatown Lunar New Year / Chinese New Year market. The theme of this year is rats (year of the rat).

We really enjoy making our own tofu from scratch because it's so easy to make & you can customise the ingredients as per your preference. As the name seafood tofu suggests, Roland added prawn & fish paste to the tofu. The sweetness from the prawns & fish made the tofu really yummy. This is just an example of how you can customise your own tofu. Perhaps you wanna use this as a basic recipe to whip out your own unique tofu.
