I had an amazing traditional Chinese food day in Hong Kong with my amazing food tour guide, Virginia! We started off with some homemade breakfast noodles then went for egg waffles with egg tarts and soupy dumplings along the way.

Clay pot rice (煲仔飯, bao zai fan) originated from Cantonese cuisine, but is now popular throughout China and Southeast Asia.
Cooking with clay pot can intensify the flavor of your food. It's an ancient method of cooking which uses a two-part (top and bottom) clay pot. When heated to a high temperature, steam is created, adding moisture to whatever is being cooked and retaining nutrients.
Clay pots also add a host of important nutrients to food, including magnesium, sulfur, iron, phosphorous and calcium. The slow cooking process allows the food inside the clay pot to retain all of its nutrients.

Secret Revealed! Chinese Shrimp Fried Rice • Din Tai Fung Egg Fried Rice w/ Prawns Recipe 虾仁蛋炒饭
Chinese Fried Rice is a simple and yet difficult to master dish but once you get the hang of it, you can fry this super yummy easy meal anytime.
This is our Din Tai Fung inspired Shrimp Fried Rice. In case you haven't heard about Din Tai Fung, it is a chain of restaurants originating in Taiwan. Back in 1993, New York Times ranked them as the Top 10 Best Restaurants in the World. In 2010, the restaurant's first branch in Hong Kong at Tsim Sha Tsui was awarded one Michellin star and their second branch at Causeway Bay was also recommended by Michellin Guide. Although Din Tai Fung is known to specialise in xiao long bao (Chinese steamed dumplings), their egg fried rice with pork chop is also really popular amongst diners. Of course that includes us :). We actually stood outside DTF kitchen to figure out what ingredients were used. Opps - I hope we won’t be banned from Din Tai Fung because that’d be tragic. Whenever we dine at Din Tai Fung, fried rice is one of our must-order dishes but instead of ordering shrimp fried rice, we always go for their pork chop fried rice. OMG so good! I'll get Roland to show you how to prepare their pork chop next time.
Many different cuisines such as Indonesian, Malay, Japanese, Thai etc today all have their own version of fried rice but did you know that fried rice was actually first developed during the Sui Dynasty in China? This means that all variety of fried rice available in the market today can actually trace their origins back to Chinese Fried Rice.
Sorry I digressed...Back to this recipe - if you don't like prawns, please feel free to omit it.

Hong Kong Style Baked Pork Chop Rice 港式焗猪扒饭 Cheese & Tomatoes over Chinese Fried Rice | Chinese Rice
Baked Pork Chop Rice is a popula dish in Hong Kong. Some of the restaurants or cha chan teng (Hong Kong's local cafes) serve the pork chop in tonkatsu style but in an effort to make this dish healthier, Roland opted for pan-frying instead. Like the restaurants in Hong Kong, Roland cooked a simple fried rice as a bed for the pork chop to rest on, followed by his very delicious tomato based sauce. Finally, this yummy combo is then topped off with a lot of mozzarella cheese and baked to perfection. My tummy is growling as I'm writing this. Haha.

Ingredients:
Serves 6 pax
Marinated Pork Chop
-----
4 pcs of pork loin/pork chop (total weight 330g)
2 pcs of lightly smashed garlic
half a thumb size of lightly smashed young ginger
4 tablespoons of light soy sauce
3 tablespoons of Chinese white rice wine
3 tablespoons of cornflour
Fried rice
----
8 beaten eggs
6 cups of cooked rice (from 3 cups of uncooked rice)
2 teaspoons of chicken stock powder
2 teaspoons of salt
2 tablespoons light soy sauce
A few dashes of white pepper or black pepper
Tomato based sauce

1 big red onion - sliced
2 shallots - sliced
2 cloves of garlic - chopped
3 thinly sliced fresh button mushrooms
1 whole tomato - cut into wedges
2 tablespoons of tomato paste
1 cup of water
1/2 teaspoon of sugar
1/2 teaspoon of salt
Some cornstarch solution
Others
----
3/4 cup of mozzarella cheese
Bake the dish at 180C for 10 mins, followed by 200C for 5 mins - total 15 mins bake time.

Making a good Cantonese rice porridge (also called rice congee) required patience and the right technique.
This video outlines how to prepare the silkiest and most comforting Cantonese style porridge. This rice porridge is the breakfast and lunch staple in many Asian countries and serves in Dim Sum restaurants (they call it as jook in Cantonese) as one of the delicacies.
The time-honored Cantonese rice porridge is suitable for almost every palate. This unadorned dish is surprisingly appealing and easy to make.
We include this porridge in our breakfast menu and hence would like to share with you how do we prepare it at home.
(If you see words like congee or jook in other recipes, it means the same thing as chicken porridge, they all refer to the same Chinese delicacy.)
The best porridge recipe should fulfill the following criteria:
Silky smooth and creamy
The rice grains are adequately hydrated, burst open like popcorns.
The rice grains are suspended in the porridge, and will not sink and separated into two layers.
